STRAWBERRY-CHERRY LEMON LIMEADE



Strawberry-Cherry Lemon Limeade image

4 pints strawberries, hulled and halved
4 cups sugar, plus more if desired
3 cups lemon juice
1 cup lime juice
2 jars maraschino cherries with their juice

Steps:

  • Blend the strawberries with 2 cups of the sugar and 2 cups water in a blender.
  • To a large vessel, add the remaining 2 cups sugar and 5 1/2 quarts (22 cups) water and mix to dissolve the sugar. Add the lemon juice, lime juice, strawberry puree and cherries with their juice and mix; add more sugar if desired. Chill thoroughly.
  • To serve: Fill glasses with ice and top up with the strawberry-cherry lemon limeade.

1 ½ cups white sugar
8 lemons, halved
8 limes, halved
4 cups water, divided, or to taste
1 lemon, sliced
1 lime, sliced
ice cubes

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Pour sugar into a saucepan; press halved lemons and limes cut-side down into the sugar.
  • Set the saucepan with remaining sugar on grill; stir in 2 cups of water and whisk over the heat until dissolved into a syrup. Let cool.
  • Place lemon and lime halves sugared-side down on grill and cook until browned, about 5 minutes.
  • Place lemon and lime slices on the grill; cook until browned, 30 to 60 seconds on each side.
  • Juice halved lemons and limes into a large pitcher. Add syrup and 2 cups water to the juice, 1/2 cup at a time, until the limeade achieves desired sweetness. Pour limeade into glasses filled with ice; garnish each glass with a grilled citrus slice.

1 1/2 cups freshly squeezed lemon juice (from about 10 lemons)
1 1/2 cups freshly squeezed lime juice (from about 15 limes)
1 cup superfine sugar
1/2 cup honey
3 tablespoons finely chopped crystallized ginger
4 cups cold water
Crushed ice
1 lemon, thinly sliced for garnish
1 lime, thinly sliced for garnish

Steps:

  • In a large pitcher combine all the ingredients and mix until the sugar has dissolved. Pour into tall glasses and garnish with a slice of lemon and a slice of lime.

CHERRY LEMON LIMEADE CAKE

I came up with this recipe on a very snowy winter day. I had all the ingredients in the house and needed a reminder of summer days to come. It is bright and cheery (pun intended) and oh so moist and delicious! Definitely hard to stop after one piece!

CAKE
2 c self rising flour (or use all purpose and add 2 teaspoons of baking powder)
2 c sugar
1 tsp baking soda
1 tsp salt
1/2 c butter, melted (1 stick)
1/2 c real mayonnaise
1/3 c lemon and lime juice (juice from one lemon and one lime)
2/3 c sweetened cherry juice or cherry vodka
zest from one lemon and one lime
4 eggs
1/2 c vanilla almond milk or regular milk (i use unsweetened)
2 tsp pure vanilla extract
FROSTING
1/2 c butter, room temperature ( 1stick)
1 pkg cream cheese 8 oz., softened
1 Tbsp cherry juice or cherry vodka
juice & zest from 1 lemon and 1 lime
3 c powdered sugar
1 tsp vanilla extract
1 can(s) cherry pie filling

Steps:

  • 1. Mix flour, baking soda and salt to combine. Add remaining ingredients and mix on medium speed till smooth.
  • 2. Preheat oven to 350 degrees. Spray 3 8 inch round cake pans with butter flavor no stick spray and line the bottom with parchment paper. Pour batter evenly into the 3 pans and tap to remove air bubbles.
  • 3. Bake for 30 - 35 minutes on center oven rack. Turn or rotate pans to make sure they cook evenly.
  • 4. Let cakes cool about 15 minutes in the pans. Loosen the sides by running a butter knife around the pan. Invert one cake onto cake plate and invert the other two on a wire rack, remove parchment paper and cool completely.
  • 5. To make the frosting: Whip all ingredients except cherry pie filling and one tsp. of the zest together until light and fluffy. Adjust powdered sugar amount if needed.
  • 6. Frost bottom layer then place layer on top of bottom and repeat till all three layers are frosted. Spoon cherry pie filling on top of cake and sprinkle with reserved zest. Serve with whipped cream if desired.

A Rachael Ray recipe from the September 2008 edition of her magazine. Supposedly this was a drink served at the South by Southwest music festival in Austin, TX. NOTE: If you don't want yours quite as sweet, simply add the juice of a couple lime wedges and skip the sweetened lime juice. This is a really refreshing, light drink!

3/4 cup orange liqueur, such as Grand Marnier
3/4 cup tequila
3/4 cup store-bought limeade
2/3 cup simple syrup
1/3 cup fresh lemon juice
1 lime wedge
Course salt for rims of glasses
Lemon and lime slices for garnish

Steps:

  • Combine the ice, orange liqueur, tequila, limeade, simple syrup and lemon juice in a blender. Blend until frosty and slushie-like. Rub the rims of the glasses with the lime wedge and dip the rims in the coarse salt to coat. Pour the frosty margarita into the glasses and garnish with lemon and lime slices.

2/3 cup light agave syrup
