6 cups Rice Krispies
10 ounces miniature marshmallows
2 lemons (or 3 limes)
3 tablespoons margarine
yellow food coloring (optional)

Steps:

  • Put a peice of parchment or wax paper into the bottom of a 13x9 inch pan.
  • Add margarine to a medium saucepan on low, but make sure that the margarine isn't melting too fast.
  • Use a microplane or zester to zest both lemons (or all 3 limes). Make sure to get all the zest off of the lemons.
  • Catching the seeds in your hands, squeeze the juice of one lemon (or 1 1/2 limes) into the butter and zest.
  • Add the 10 oz. bag of marshmallows and stir continuously. It will take a while for the marshmallows to melt but don't turn the heat up too high or the marshmallows will burn.
  • Add in a few drops of yellow food coloring. Green food coloring is best for lime flavor.
  • Once the marshmallows have completely melted, gently stir them into the cereal and make sure to get them evenly coated.
  • Spread them out into the pan and when they have cooled, it's time to eat!

I got this recipe off the internet a while back, but I can't remember which website. It is my favorite way to serve rice. It's simple to prepare, very tasty and turns common rice into a tasty side dish to complement just about any main entree. I've been making it for a long time now, and I find that it goes really well with just about any main dish. But my all-time favorite is to serve it with baked chicken breasts served with a tangy lime sauce. UPDATE....based on feedback, I have worked on improving this recipe. Specifically, I increased the amount of water (from 3 1/2 cups to 4 cups, which I think produces a much fluffier rice. But if you have better luck using more or less liquid when cooking rice, please feel free to adjust the amount of water.

2 cups white rice
4 cups boiling water
1 tablespoon butter
1 tablespoon chopped fresh herb (such as basil, rosemary, oregano, parsley, cilantro, chives, thyme)
1 1/2 teaspoons grated lemon peel
1 1/2 teaspoons lime zest
1/2 teaspoon salt
1/2 teaspoon lime juice

Steps:

  • Cook rice for 5 minutes in a saucepan with briskly boiling water and butter, stirring once. Cover the pan, turn the heat off, but leave the pan on the burner undisturbed for 15-20 minutes.
  • After the rice has absorbed the liquid and is light and fluffy, add the selected herb (or herbs), lemon peel, lime peel, salt, and lime juice. Stir well.
  • Serve warm.

1 teaspoon fenugreek seeds
4 dried red chilies, broken into pieces
4 tablespoons oil
1 teaspoon black mustard seeds
1 teaspoon split white Urad Dal
1 teaspoon channa dal
2 -3 minced serrano chilies
1/4 teaspoon hing
12 -16 curry leaves
1/2 teaspoon turmeric
7 -8 cups cooked rice
salt, as needed
1 lemon, juice of
2 to 3 limes, juice of
1/3-1/2 cup roasted peanuts
1/4 cup chopped fresh cilantro

Steps:

  • In a frying pan put the fenugreek (methi) seeds and the dried red chilies and stir-fry for 2 minutes over medium heat to toast the seeds and chilies.
  • Powder in a coffee grinder and set aside.
  • In a dutch oven, put the oil, mustard seeds, urad dal, and chana dal.
  • Heat over high heat until the mustard seeds start to pop.
  • Add the minced serrano chilies and stir until the chilies have softened and the dals are light brown.
  • Reduce heat to very low.
  • Quickly stir in the hing, curry leaves, turmeric, and the powdered fenugreek seeds.
  • In batches add the rice and salt as needed, blending well with each addition.
  • When everything is thoroughly combined, add the lemon or lime juice and stir until well mixed.
  • Garnish with the peanuts and the cilantro.

This is my all-time favorite rice dish. It's really easy to prepare and it goes quite well with a variety of different main dishes. But my preference is to serve it with baked chicken breasts with a tangy lime sauce, such as Lime Sauced Chicken.

Zest of 1/2 lemon
Zest of 1/2 lime
2 tablespoons butter
1/4 tsp parsley
Salt and pepper to taste
Optional ingredients: red pepper flakes, ground red pepper, orange juice

Steps:

  • Cook rice per pkg. directions.
  • Add zests of lemon and lime. Add butter. Add parsley, and salt and pepper to taste. If you like more spice, try a few shakes of red pepper flakes, or ground red pepper.
  • Mix all ingredients together.
