Got this recipe from my sis who is diabetic. Now I make it for my Mother & DH, but you certainly don't have to be diabetic to enjoy it. It is so easy & delicious.

1 (1 ounce) box sugar-free vanilla pudding
1 (1 ounce) packet crystal lite lemonade mix (one that makes 2 qts)
1 1/2 cups milk
12 ounces Cool Whip
9 inches graham cracker crust

Steps:

  • Mix pudding, Crystal Lite and milk with mixer til starts to get thick.
  • Fold in Cool Whip.
  • Pour in graham cracker crust.
  • Refrigerate til set.
  • Many other flavors to choose . Strawberry is also great.

I had the Lemon Ice Box Pie at Cracker Barrel, and was determined to find a copycat. I've adapted this recipe, and I think it fits the bill!

1 graham cracker crust
1 (14 ounce) can sweetened condensed milk
1/2 cup lemon juice
yellow food coloring
8 ounces whipped topping
vanilla wafer cookie

Steps:

  • Mix sweetened condensed milk and lemon juice and beat on medium high speed until well blended.
  • Fold in 1/3 of the whipped topping and 2 drops yellow food coloring.
  • Pour filling into crust; carefully smooth remainder of whipped topping on top of lemon filling.
  • Place vanilla wafer cookies around the edge of the pie (can do this right before serving if you prefer a crisper cookie).
  • Cover pie and place in freezer.
  • Pie may be kept in freezer for several days until ready to serve.
  • Take from freezer 10- 15 minutes before serving.

1 1/4 cups graham cracker crumbs
1/4 cup Splenda brown sugar blend
6 tablespoons butter, melted
1/2 cup fresh lemon juice
1 (1/4 ounce) envelope unflavored gelatin
1 (4 ounce) box sugar-free lemon pudding mix (not instant)
1 (3 ounce) box sugar-free lemon gelatin
1/3 cup Splenda sugar substitute
2 eggs, beaten
2 1/2 cups water
2 cups thawed sugar-free Cool Whip

Steps:

  • Combine the graham cracker crumbs. Splenda brown sugar blend and melted butter and mix well. Press mixture into the bottom of 9-inch pie plate. Bake at 375 degrees for 8 minutes. Allow to cool completely before filling.
  • In a bowl, combine the lemon juice and unflavored gelatin; set aside to bloom.
  • In a saucepan, whisk together the pudding and pie filling mix, lemon gelatin and sugar substitute. Gradually add beaten eggs and then the water.
  • Mix until completely smooth and then, stirring constantly, bring to a rolling boil over medium heat. Remove from heat and cool slightly. Add the lemon juice and gelatin mixture.
  • Stir until completely combined and refrigerate about 1 1/2 hours or until thickened and beginning to gel. With a whisk, fold in the Cool Whip.
  • Pour into the graham cracker crust and return to refrigerator until completely set.

This pie is made with bottled lemon juice. I've never tried it with fresh. Bottled juices usually have added lemon oil and lemon essence. I use the Pompeii Lemon Juice that comes in the little yellow round ball. It's really a good ice box pie.

14 oz can sweetened condensed milk
3 egg yolks
1/2 c bottled lemon juice
1 graham cracker or baked pie crust (9-inch)
1 container cool whip or redi-whip

Steps:

  • 1. Preheat oven to 325°. In mixing bowl, beat egg yolks until smooth. Gradually blend in the condensed milk and lemon juice. Beat slowly until smooth. Pour into prepared pie crust.
  • 2. Bake for 30 minutes. Remove from oven and let cool at room temperature for 1 hour. Chill in refrigerator at least 2 hours or until serving time. Top with cool whip or whipped cream. Refrigerate leftovers.

8 oz cool whip
1 9 inch prepared graham cracker crust

1 cup granulated sugar
1/4 teaspoon cream of tartar
4 egg whites at room temperature
3 tablespoons shredded coconut

FILLING:
4 egg yolk
1/2 cup sugar
3 tablespoons lemon juice
1 tablespoon grated lemon peel
1/8 teaspoon salt
1 pint heavy cream (use for top and filling)

Steps:

  • Shell: Sift 1 cup sugar and cream of tartar together; separate eggs. Beat whites in stiff peaks but not dry. Slowly add sugar, beating constantly. Spread meringue over bottom and sides of well-greased pie pan; make bottom about 1/4-inch thick, sides thicker. Sprinkle 2 tablespoons coconut on top. Bake in 275° oven for 1 hour. Cool. Filling: Beat 4 egg yolks slightly in double boiler, stir in 1/2 cup sugar, lemon juice, rind and salt. Cook, stirring over boiling water until thick (about 8 minutes). Cool, add 1 cup whipped cream to custard. Pour into cooked shell. Spread on rest of whipped cream (unsweetened); sprinkle on 1 tablespoon toasted coconut. Chill at least 12 hours.

This Serendipity favorite is a simple, no-bake pie. Its citrus flavor is perfect and refreshing for those really hot days. The book doesn't call for it, but I like to add the zest of one or two lemons, just for a little more lemon flavor. Remember to zest lemons before juicing. Time does not include refrigeration.

2 tablespoons ground cinnamon
1/2 cup unsalted butter, melted and cooled

1 lemon, zest of (optional)
whipped cream

Steps:

  • In a medium bowl, combine graham cracker crumbs, cinnamon, and butter until fully incorporated. Scrape mixture into a 9" pie pan. 14 graham crackers, broken
1/4 cup sugar
1/4 teaspoon salt
6 tablespoons unsalted butter, melted
2 (14 ounce) cans sweetened condensed milk
1 1/4 cups fresh lemon juice
2 tablespoons lemon zest, finely grated (remember to zest before you juice!)
8 large egg yolks

Steps:

  • Preheat the oven to 325°. In a food processor, pulse the graham crackers with the sugar and salt until finely ground but not powdery. Add the butter and pulse until the crumbs are evenly moistened; transfer to a 9-inch springform pan and press into the bottom and two-thirds up the side. Set the pan on a rimmed baking sheet.
  • In a medium bowl, whisk the condensed milk with the lemon juice. In another bowl, using a handheld mixer, beat the lemon zest with the egg yolks until pale. Beat in the condensed milk mixture until smooth. Pour the filling into the crust.

1 teaspoon grated fresh lemon rind
1 package graham cracker, crushed
