½ the juice of a lemon
1 teaspoon Dijon mustard
1 teaspoon dried oregano
¼ cup olive oil
salt and pepper to taste
1 Tablespoon drained capers
8 ounces halloumi cheese cut into ¼-inch pieces and patted dry
2 Tablespoons olive oil
6 ounces mixed greens for a base

Steps:

  • In a small bowl, whisk the Dijon mustard, dried oregano, lemon juice, salt and pepper.
  • Slowly whisk in the olive oil until incorporated.
  • Add the capers and set aside.
  • Heat 2 Tablespoons olive oil on medium-high heat in a frying pan.
  • Add the halloumi cheese slices to the pan and cook for a couple of minutes per side until golden.
  • Plate the fried cheese right away atop the mixed greens.
  • Spoon the citrus and caper vinaigrette on top.

4 tablespoons capers
2 cloves garlic, crushed
2 tablespoons olive oil
½ large lemon, juiced
1 teaspoon coriander seeds, crushed
freshly ground black pepper to taste
1 (8.8 ounce) package halloumi cheese, sliced
1 tablespoon olive oil
½ cup chopped cilantro leaves
salt and freshly ground black pepper to taste

Steps:

  • Cover capers with fresh water in a bowl and soak for 5 minutes to remove excess salt; drain.
  • Chop capers coarsely. Stir together capers, garlic, 2 tablespoons olive oil, lemon juice, and crushed coriander seeds in a small bowl. Season with ground black pepper.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Brush the halloumi slices with the remaining 1 tablespoon olive oil.
  • Cook halloumi slices directly on the grill grate until golden, about 2 minutes. Turn and cook on the other side until soft in the center and golden on the outside, about 2 more minutes.
  • Place halloumi slices on a serving plate. Drizzle with caper sauce and sprinkle with fresh cilantro leaves. Season to taste with salt and pepper.

1/4 cup extra virgin olive oil
2 tablespoons lemon juice
2 tablespoons non-pareil capers (rinsed)
1 tablespoon chopped fresh oregano
1/2 teaspoon lemon zest
8 ounces halloumi cheese sliced into 10 slices
1/4 cup all purpose flour
oil for frying
10 baguette slices
garlic clove

Steps:

  • Whisk together olive oil, lemon juice, capers, oregano and lemon zest. Allow to set at room temperature for at least 20 minutes.
  • Dredge halloumi slices in flour.
  • Heat a thin coat of oil in a skillet over medium high heat. Pan fry halloumi slices, in batches, until golden brown, about 2 minutes per side.
  • Turn on oven broiler. Broil baguette slices 1 - 2 minutes or until golden brown. Rub with garlic clove.
  • Place one slice of halloumi on each baguette slice. Drizzle with lemon caper oil. Serve.

3/4 pound large shrimp, peeled and deveined
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1 pound spaghetti
1/2 teaspoon kosher salt, plus more for the pasta water
2/3 cup extra-virgin olive oil
2/3 cup grated parmesan cheese, plus more for topping (optional)
1 tablespoon grated lemon zest (about 1 large lemon)
1/2 cup fresh lemon juice (about 2 large lemons)
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh basil
2 tablespoons capers, fried

Steps:

  • Make the shrimp: In a medium saute pan, heat the olive oil over medium-high heat. Season the shrimp with the salt and pepper; add to the preheated pan in a single layer. Cook for 2 to 3 minutes per side, or until pink and cooked through. Set aside.
  • Make the pasta: Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally to prevent sticking, about 8 minutes. Drain, reserving 1 cup pasta water. Meanwhile, whisk the olive oil, parmesan and lemon zest and juice in a large bowl to blend.
  • Toss the pasta with the lemon sauce, shrimp and the reserved cooking liquid, adding it 1/4 cup at a time as needed to moisten. Season with the salt and pepper; stir in the basil. Garnish with the fried capers and more parmesan, if desired.

180 g tsps halloumi cheese, sliced
2 small red birdseye chilies, thinly sliced
2 teaspoons drained baby capers
1 teaspoon finely grated lemon rind
2 tablespoons lemon juice
80 g mixed lettuce leaves

Steps:

  • Heat 2 teaspoons oil in a large frying pan over medium-high heat.
  • Cook haloumi, in batches, for 2 minutes each side or until golden. Transfer the haloumi to a plate.
  • Heat remaining oil in pan. Add chilli and capers. Cook, stirring, for 3 to 5 minutes or until capers are heated through and chilli is golden. Add rind. Cook, stirring, for 1 minute. Stir in juice. Bring to a simmer.

Salt-packed capers have become a growing presence in grocery stores. They tend to be larger than capers cured in vinegar and brine, more like the flower buds that they are, and pleasingly vegetal in flavor. When you fry them in olive oil, the oil intensifies their saltiness and turns their outer leaves into a crisp shell, creating delicious crunchy bits that can be used as both seasoning and texture. Here, they stud fillets of pan-roasted striped bass, but you could use any meaty white fish like cod or halibut. It's a bright and flavorful alternative to the usual weeknight fish dish, and it can be on the table in about a half hour.

2 tablespoons salt-packed or brined capers
2 tablespoons olive oil, plus more for frying
1 clove garlic, crushed
4 fillets striped bass, or other meaty white fish like cod or halibut (about 2 pounds)
Sea salt and freshly ground pepper
1 lemon, cut into wedges

Steps:

  • Preheat the oven to 400 degrees. Soak the salt-packed capers in water for 10 minutes, drain, rinse, then thoroughly pat dry. (If using brined capers, drain them and pat dry.) Pour 1/2 inch olive oil into a small saucepan and place over medium-high heat. When the oil is hot enough to toast a bread crumb in 30 seconds, add the capers. Be careful, the oil may sputter. Fry until the capers fluff up and begin to brown on the edges, 30 to 60 seconds. Drain the capers on a paper towel.
  • Pour the remaining 2 tablespoons oil in a large nonstick sauté pan. Place over medium-high heat and add the garlic clove. Season the fish with salt and pepper. When the garlic bubbles on the edges, lay the fish in the pan, skin side down. Sauté until browned on the bottom, 4 to 5 minutes, then put the pan in the oven and roast until the fish is just cooked through, 5 to 8 minutes.
  • Set a fillet on each of 4 plates. Sprinkle the fried capers over the fillets and serve with wedges of lemon.

200 g halloumi cheese
seasoned flour
2 -3 tablespoons extra virgin olive oil
2 -3 limes, juice and zest of (or lime juice from a plastic lime!)
2 tablespoons white wine vinegar
2 tablespoons capers, drained
2 garlic cloves (I use the stuff in a jar and guess)
2 teaspoons coarse grain mustard
1 bunch fresh coriander leaves, chopped coarsely (can use less if desired)
4 tablespoons extra virgin olive oil
salt
fresh ground black pepper

Steps:

  • Pat cheese dry with kitchen paper.
  • Slice into fingers.
  • Prepare dressing by mixing all ingredients together in bowl. Check taste.
  • You can make it ahead of time and put in fridge overnight, but take out to warm up a little before serving.
  • Coat cheese slices in seasoned flour.
  • Heat oil in frying pan.
  • Fry cheese slices in hot oil, about 1 minute each side, till golden.
  • Serve immediately with dressing poured over.
  • Serve with Greek pitta bread/French bread.

10-12 baby courgettes, halved lengthways
1 tbsp olive oil
225g block halloumi, thinly sliced (about 16 slices)
1 long shallot, finely chopped
1 red chilli, finely chopped
1 garlic clove, crushed
1 lemon, zested and juiced
2 tbsp capers
3 tbsp olive oil

Steps:

  • Put all the dressing ingredients in a bowl with 1 tbsp cold water and season with a pinch of salt. Mix together and set aside.
  • Put the courgettes in a large bowl and drizzle with the oil. Add a pinch of salt, then toss.
  • Heat a griddle pan to high and add the courgettes, cut-side down (it's best to do this in batches). Cook for 4-5 mins until char marks appear and the flesh softens, then flip over and cook for another 3 mins. Remove to a shallow bowl and cover with foil to keep warm.
  • Meanwhile, heat a separate large non-stick frying pan and add the halloumi. Cook for a few minutes until golden on both sides.
  • Arrange the courgettes and halloumi on a large plate or platter, then spoon over the dressing.
