1 (3 ounce) package lime flavored Jell-O® mix
1 teaspoon white sugar
1 cup boiling water
1 (8 ounce) package cream cheese
1 (8 ounce) can crushed pineapple, with juice
1 teaspoon vanilla extract
1 cup lemon-lime flavored carbonated beverage
½ cup chopped pecans

Steps:

  • In a large bowl, dissolve the gelatin and sugar in the boiling water. Add the cream cheese and whisk until the melted into small chunks. Add pineapple with juice, soda and nuts and stir until evenly combined. Chill until set.

1 package (6 ounces) lemon gelatin
2 cups boiling water
1 can (12 ounces) lemon-lime soda
1 can (20 ounces) crushed pineapple
1 can (15 ounces) mandarin oranges, drained
2 cups halved green grapes
1 egg
1/2 cup sugar
2 tablespoons all-purpose flour
1 tablespoon butter
1 cup heavy whipping cream, whipped
Lettuce leaves, optional

Steps:

  • Dissolve gelatin in boiling water. Stir in soda. Chill until partially set. , Drain pineapple, reserving juice; set pineapple aside. Add water to pineapple juice, if necessary, to measure 1 cup; set aside. Stir the pineapple, oranges and grapes into gelatin. Pour into a greased 13-in. x 9-in. dish. Chill until firm. , Meanwhile, in a large saucepan over medium heat, combine the egg, sugar, flour, butter and reserved pineapple juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool completely. Fold in whipped cream. Spread over gelatin. Chill until firm. Cut into squares; serve on lettuce if desired.

2 packages (3 ounces each) lemon gelatin
2 cups boiling water
2 cups ginger ale, chilled
2 large firm bananas, sliced
1/2 cup sugar
2 tablespoons all-purpose flour
1 large egg, lightly beaten
2 tablespoons butter
1 cup heavy whipping cream

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a large bowl, dissolve gelatin in boiling water. Stir in the ginger ale, bananas and crushed pineapple. Transfer to a 13x9-in. dish. Refrigerate until firm., For topping, combine sugar and flour in a small saucepan. Gradually whisk in reserved pineapple juice. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. , Remove from the heat. Stir a small amount into egg; return all to the pan, stirring constantly. Cook and stir until a thermometer reads 160° and mixture is thickened. Remove from the heat; stir in butter. Cool to room temperature., In a small bowl, beat cream on high speed until stiff peaks form. Gently fold into custard. Spread over gelatin. Refrigerate for 1 hour or until chilled.

The lemon gelatin might sound like nothing more than lemon-flavor Jell-O (and you can certainly use lemon Jell-O if you want to save a little money and a tiny bit of effort over juicing lemons or buying lemon juice), but in this case "authentic" is also "easy," and the real flavor of lemon is much nicer than the artificial flavor used in Jell-O and other brands.

3 3/4 cups cold water, divided
3 (1/4 ounce) envelopes unflavored gelatin
1 1/2 cups sugar, plus
3 tablespoons sugar, divided
1 1/2 cups fresh lemon juice (from about 9 lemons)
1 teaspoon grated lemon zest
yellow food coloring (optional)
3/4 cup heavy cream
1 sprig of fresh mint (to garnish) (optional)
lemon zest, curls (to garnish) (optional)
lemon slice (to garnish) (optional)

Steps:

  • Put 1/2 cup of the water in a small bowl, sprinkle the gelatin over it and stir. Let soften for 2 minutes. Meanwhile, in a medium saucepan combine the remaining 3 1/4 cups of water, 1 1/2 cups of the sugar, the lemon juice and the lemon zest and bring to a boil. Remove from heat and add the softened gelatin, stirring for 1 minute or more to dissolve all lumps. Stir in a few drops of food coloring, if desired.
  • Pour into a heat-safe medium-size bowl, let cool, cover with plastic wrap and refrigerate until firm (at least 6 hours).
  • Just before serving, whip the cream with the remaining 3 tablespoons of sugar, until it holds stiff peaks.
  • Fill goblets or sundae glasses halfway with gelatin, top with half of the whipped cream, then fill with more gelatin and top with remaining whipped cream. Garnish with mint sprigs, lemon zest curls or slices and serve.

1 (5 ounce) can evaporated milk
1/2 cup mayonnaise
1/2 cup chopped pecans (I use a cup because my family loves nuts)

Steps:

  • Use 3/4 cup boiling water to dissolve Jello - chill before adding milk
  • Add the milk and fruit.

We both knew how much my daddy loved Lemon Pie and I wanted to make him something different using lemon....and this is the cake I made. It was yummy! But what made it all worth it....was to see my daddy smile and lick his lips. Well since then Grandma Effie died in 1982 and daddy died in 2001....but every time I make it I SMILE and LICK my lips....memories are a wonderful thing! *Google pic*

1 box(es) gelatin, lime
1 large cool whip

Steps:

  • Follow directions on cake box. Bake. While cake is baking.... Dissolve gelatin in 3/4 cup boiling water; add 1/2 cup cold water and set aside at room temperature. When cake is done remove from oven and poke holes in cake with end of wooden spoon, about 1 1/2 inches a part; with cup, slowly pour gelatin mixture into holes.   • Preheat oven to 350. Combine ingredients. Beat 2 minutes, and pour batter into greased 9"x13" glass baking dish. Bake 45 minutes. Prepare glaze by combining powdered sugar and lemon juice. Poke holes in cake with fork while still hot. Spread glaze over top of cake while hot.

1 cup sugar
2 1/2 cups cold water
2 strips lemon zest (2-inch each)
2/3 cup fresh lemon juice
lemon slices and mint sprigs, for garnish

Steps:

  • 1 In a medium saucepan, stir together the gelatin and sugar. Add the water and lemon zest. Cook over medium heat, stirring constantly, until the gelatin is completely dissolved, about 3 minutes. (Do not allow the mixture to boil.) 2 Remove from the heat and stir in the lemon juice. Pour the mixture through a fine-mesh strainer into 5-cup mold or bowl. Cover and chill until set, 4 hours up to overnight. 3 When ready to serve, fill a bowl with warm water and dip the mold into the water for 30 seconds. Run a small knife around the sides.
