This is a simplified version of a dish my Costa Rican host sister used to make when I was in the Peace Corps. It has become a favorite side dish at my house. -Katie Bartle, Parkville, Missouri

1 pound small red potatoes
2 tablespoons olive oil
2 garlic cloves, minced
1/4 cup shredded Parmesan cheese
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cut scrubbed potatoes into wedges; place in a large saucepan. Add water to cover; bring to a boil. Cook, covered, until tender, 10-15 minutes; drain. In the same pan, heat oil over medium-high heat. Add potatoes; cook until browned, 4-6 minutes. Add garlic; cook 1 minute longer. Remove from heat. Stir in remaining ingredients.

These garlic mashed potatoes are rich and very tasty! For a creamier texture, use heavy cream in place of the milk. These are also terrific topped with green onions.

8 potatoes, peeled and quartered
½ cup milk
¼ cup butter
2 cloves garlic, minced
salt to taste
1 pinch ground white pepper
2 tablespoons sesame seeds

Steps:

  • Bring a large pot of water to boil; add potatoes, and boil until soft, about 20 to 25 minutes. Drain, and place in a large bowl.
  • Combine potatoes with milk, butter, garlic, salt, and pepper. Mix with an electric mixer or potato masher to your desired consistency. Sprinkle with sesame seeds.

Greek Garlic-Lemon Potatoes image

My mother made a version of these when I was growing up. Just the smell alone of these garlicky lemon potatoes is comforting.

3 pounds potatoes, peeled and cubed
3 cups hot water
½ cup fresh lemon juice
⅓ cup vegetable oil
1 tablespoon olive oil
1 ½ teaspoons dried oregano
2 teaspoons salt
½ teaspoon ground black pepper
2 cloves garlic, minced
¼ cup chopped fresh parsley

Steps:

  • Preheat oven to 475 degrees F (245 degrees C).
  • Place the cubed potatoes, water, lemon juice, vegetable oil, and olive oil in a 12x18 inch baking dish or roasting pan. Season with oregano, salt, pepper, and garlic.
  • Roast, uncovered, in the preheated oven until the potatoes are tender and golden brown and the water has evaporated, about 1 1/2 hours. Stir the potatoes every 20 minutes as they bake, adding more water as necessary to prevent sticking. Allow the water to evaporate during the final 15 to 20 minutes of cooking, but be careful that the potatoes do not burn. Stir in the chopped fresh parsley, and serve.

6 medium Yukon gold potatoes
2 to 3 cups heavy whipping cream
2 to 3 cups whole milk
Kosher salt
2 lemons, zested
Freshly ground black pepper

Steps:

  • Put the potatoes in a large saucepan with the cream and milk. Bring to a boil over medium heat, then add 1 teaspoon of salt. Reduce the heat and simmer until the potatoes are very tender, about 20 to 25 minutes. Remove about 2 cups of the liquid and reserve. Add the lemon zest and season with salt and pepper, to taste. Use a potato masher to break up the potatoes while adding about 1 cup of the reserved liquid, to just 'wet' the potatoes. Add more, for desired creaminess. Spoon the potatoes into a serving bowl and serve immediately.

3 pounds boiling potatoes, such as Yukon Gold
Kosher salt
1 1/2 cups whole milk
6 tablespoons unsalted butter
1/2 cup sour cream
1/2 teaspoon freshly ground black pepper

Steps:

  • Peel the potatoes, cut them into 1-inch cubes and place them in a large pot of boiling salted water. Simmer uncovered for 10 to 12 minutes, until the potatoes are tender. Drain the potatoes in a colander and then return them to the pot.
  • Meanwhile, heat the milk and butter in a small saucepan until the butter is melted.
  • Using a hand held mixer, break the potatoes up and at low speed slowly add the hot milk/butter mixture to make the potatoes very creamy. Add the sour cream, 2 teaspoons of salt and the pepper and whisk to combine. Serve hot.

1 1/2 kg baby potatoes, quartered
1 1/2 tablespoons light olive oil
1 1/2 tablespoons lemon zest, finely grated
6 garlic cloves, crushed (to taste)

  • Preheat the oven to 220°C.
  • Cook the potatoes in a large pan of salted boiling water for 6-7 minutes or until just tender, and drain well.

4 garlic cloves, cut in half
2 tablespoons capers, drained and chopped
1/3 cup fresh parsley, chopped
2 teaspoons lemon peel, finely shredded
3 tablespoons olive oil
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 tablespoons fresh lemon juice (from half a lemon)

Steps:

  • Cook potatoes and garlic in lightly salted water until tender, about 20 to 25 minutes; drain, but reserve a cup of the cooking liquid.
  • Mash potatoes to desired consistency, add 2 tablespoons olive oil, butter, salt, pepper, and enough of the reserved liquid to reach the desired consistency.
  • Transfer mash to a serving bowl, top with capers, parsley, and lemon peel; drizzle with remaining olive oil and squeeze the lemon juice over top and serve.

4 large yukon gold potatoes, peeled
1/2 cup salted butter, cut into small pieces
salt, to taste
1 lemon, washed

Steps:

  • In a large pot of salted water, boil the potatoes until they are almost falling apart.
  • Drain potatoes thoroughly and return to pot.
  • Add the butter and mash the potatoes with a potato masher.
  • When butter is incorporated, season with salt to taste.
  • Just before serving, finely shred the zest of the lemon right into the potatoes and stir well.
  • Note: (that's right, there is NO milk in this recipe, but you can squeeze in the lemon juice if desired).
