Lemon Garlic Marinade for Chicken image

I'm not sure where I got this recipe but it is very good. I usually throw some chicken breasts in a ziploc bag and add this marinade and then freeze. All I have to do for a quick meal is thaw and toss on the grill. This makes enough marinade for about 1-1.5 pounds of chicken breasts. Cooking time reflects marinating time.

2 cloves garlic, minced
4 tablespoons olive oil
2 tablespoons chopped fresh parsley
3 tablespoons lemon juice, fresh preferred
1/8 teaspoon pepper
1 1/2 lbs boneless skinless chicken breasts

Steps:

  • Place chicken breasts in a large ziploc bag.
  • Mix first five ingredients together and pour over chicken.
  • Marinate at least one hour, longer if possible.
  • Cook chicken as desired.
  • I prefer to grill mine.
  • This is wonderful served on a caesar salad.

ROSEMARY, GARLIC AND LEMON MARINADE

2 good handfuls fresh rosemary, pounded
6 cloves garlic, crushed
10 lugs (10 tablespoons) olive oil
3 lemons, halved, juiced and skin squashed

GRILLED LEG OF LAMB WITH GARLIC AND HERB LEMON MARINADE



Grilled Leg of Lamb With Garlic and Herb Lemon Marinade image

This is really the only recipe I use when I grill a leg of lamb. Plan ahead, the lamb needs to marinate 24 hours or overnight. This marinade can also be used for lamb chops. A butterflied leg of lamb is with the bones removed and cut to spread open, you can ask your butcher to remove the bones and butterfly it for you. If you prefer a more lemony taste then thinly slice half of another lemon, leave the peel on, and just throw the slices inside the bag or bowl with along with the other marinade. If desired you can also stuff the lamb with garlic cloves as well as adding the minced garlic in with the marinade. Grilling time depends on size of lamb. This recipe produces an excellent grilled lamb that melts in your mouth, try to not overcook the lamb, for best results leave slightly pink in the middle.

1 leg of lamb (bone in) or 1 butterflied leg of lamb
4 -5 fresh minced garlic cloves (or to taste)
3/4 cup olive oil
1 cup red wine
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried thyme
2 teaspoons dried parsley
5 -6 green onions, chopped (optional)
salt and pepper
1 large lemon, juice of

Steps:

  • Mix all marinade ingredients together in a glass bowl.
  • Place the lamb in a extra large heavy-duty plastic bag or glass bowl.
  • Pour the marinade over the lamb, and turn to coat well on all sides.
  • Cover tightly with plastic wrap (if using a glass bowl).
  • Place in the fridge for a minimum of 24 hours (turning occasionally to distribute marinade).
  • When ready to grill, remove from fridge and save marinade for basting if desired.
  • Turn the grill to high heat.
  • Sear both sides for about 5 minutes on each side.
  • Reduce grill temperature to medium heat and finish cooking the lamb.
  • You may baste the lamb with the leftover marinade if desired.

LEMON, HERB & GARLIC MARINADE

I've adapted this from a Jamie Oliver recipe. Jamie makes it with his 'flavour shaker' but as most people probably don't have one - you can use a mortar and pestle. Use this marinade for steak, chicken or fish. It imparts a wonderful flavour. We had it with steak and it made it beautifully moist and tender and lemony - quite a different taste for steak but absolutely delicious! Quantities given should make enough to marinade 2-3 steaks or 2 large chicken breasts or 4 fillets of fish.

1 teaspoon fresh rosemary (leaves only)
1/2 teaspoon fresh thyme leaves or 1 teaspoon dried thyme
1 pinch lavender flowers (optional) or 1 pinch lavender leaves (optional)
1/2 teaspoon freshly ground black peppercorns
1 pinch sea salt
2 garlic cloves, peeled and sliced
1/2 lemon, juice and zest of, finely grated
4 tablespoons extra virgin olive oil

Steps:

  • Roughly chop the rosemary leaves, thyme leaves, and lavender flower/s or leaves (if using).
  • Place herbs, salt and pepper into a mortar and pound with a pestle, until herbs are crushed and fragrant.
  • Add garlic and lemon zest and pound until garlic makes a paste - add a little of the olive oil if necessary.
  • Now stir in the lemon juice and the olive oil and mix together.
  • Pour mixture into a small screwtop jar. Fix lid securely and shake vigorously until mixture thickens and emulsifies.
  • Pour over meat, cover and marinade in the refrigerator for 1-2 hours before cooking.
  • Pour any marinade left in the bowl over the meat while it cooks.

PERFECT LEMON-GARLIC CHICKEN MARINADE



Perfect Lemon-Garlic Chicken Marinade image

I put this together when I was making some other Lebanese dishes, and I wanted chicken, but wasn't sure how I was going to make it. So this is what I came up with. One of the ingredients is Sumac- can find in middle eastern markets for sure. Its a dark red spice, that adds a lemony flavor. Its so very good. I like to make this chicken and serve it with Tabouli and Hummus. But I think it would be great with just about anything you choose to serve it with.

2 chicken breasts
4 -5 garlic cloves, crushed
2 -3 tablespoons lemon juice
1/4 cup extra virgin olive oil
1 teaspoon sumac
1/2 teaspoon salt
1 storage size ziploc bag

Steps:

  • If chicken breasts are boneless and thick, I think they turn out better butterflied.
  • Peel garlic and crush using a mortar/pestol with a little salt (makes crushing garlic easier) or buy garlic already crushed and place in a small bowl.
  • Add lemon juice, olive oil, and sumac, and salt if you bought crushed garlic.
  • Mix together.
  • Place chicken in ziploc bag, add mixture from bowl. Make sure chicken is coated, seal bag and then place in refrigerator.
  • I think it tastes best when marinated for at least 4 hours. But I 'm sure less is fine too.
  • Grill chicken until done.

BUTTERFLIED LEG OF LAMB WITH LEMON AND GARLIC MARINADE

You may want to secure the lamb with metal or wooden skewers that are at least twelve inches long. If you use wooden ones, be sure to soak them in water to prevent them from burning on the grill.

1 six-pound leg of lamb, trimmed and butterflied
2 lemons, plus more cut into wedges for garnish
1/2 cup extra-virgin olive oil
1/4 cup roughly chopped fresh oregano, plus more for garnish
2 garlic cloves, finely chopped
Coarse salt and freshly ground pepper
Grilled red onion slices, for garnish

Steps:

  • Place lamb on a clean work surface, and cover with plastic wrap. Using a mallet, pound lamb to 1 inch thick. Transfer to a large shallow bowl, and set aside.
  • Zest and juice both lemons, and combine in a small bowl. Add olive oil, oregano, and garlic; whisk to combine. Pour lemon mixture over lamb, and rub with your hands to coat evenly and thoroughly. Cover bowl with plastic wrap, and place in refrigerator; let marinate for at least 6 hours or overnight, turning the lamb occasionally. Remove from refrigerator 1 hour before serving, and let lamb come to room temperature.
  • Heat grill or grill pan to medium high. Remove lamb from marinade, and place on a large baking sheet; season all over with salt and pepper. Using four long skewers, secure lamb on each side, with two skewers at the short ends and the other two running lengthwise, each 2 to 3 inches from the edge of the lamb. Transfer to grill, and cook until lamb is browned on the outside and still slightly pink on the inside, 7 to 9 minutes on each side for medium rare. Transfer to a platter, and let rest for 10 minutes.
  • When ready to serve, remove skewers, and thinly slice lamb against the grain. Garnish with lemon wedges, oregano, and slices of grilled red onion.

GRILLED SWORDFISH WITH LEMON-GARLIC MARINADE RECIPE

2 lb. swordfish
1/2 c. dry white wine
4 tbsp. olive oil
4 tbsp. lemon juice
2 cloves garlic, minced
2 tsp. dried basil
1/4 tsp. freshly ground pepper

Steps:

  • Rinse fish in cold water; pat dry. Combine ingredients, mix well. Place swordfish in marinade. Refrigerate 2-3 hours, turning several times. Preheat grill; brush the salad oil. Place fish on grill, cook approximately 10 minutes per inch, turning halfway through cooking time. Remove from grill, brush with melted butter, garnish with lemon wedges. Works with salmon, too.

This marinade works very well with Portobello mushrooms (there's enough for 4). Trim the stems and wipe the caps clean, then add them to the marinade in a resealable plastic bag. Refrigerate them for twenty minutes, or up to one hour, before grilling.

1 teaspoon Tabasco, or to taste (optional)

  • Makes plenty of marinade to inject an 8-15 pound turkey. 1. Mix all ingredients together in a small saucepan over medium heat until all ingredients are dissolved and well blended. Let cool to room temperature before injecting in the turkey. 2. Before putting the marinade in the injector, whisk the mixture well to emulsify all the ingredients together.
