These tempting tacos are low in fat but full of zippy flavor. I often modify the recipe to our tastes by adding more tomato and green onion an a bit of cheddar cheese. It's a keeper!-Lisa Giegel of Spokane, Washington

Number Of Ingredients 14

1 pound boneless skinless chicken breast, cut into 1/2-inch cubes
2 tablespoons plus 1 teaspoon lemon juice, divided
1 large onion, sliced
1 green onion, sliced
2 garlic cloves, minced
2 teaspoons olive oil
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
2 plum tomatoes, seeded and chopped
1/4 cup minced fresh cilantro
8 flour tortillas (8 inches), warmed
1 cup shredded lettuce
1/2 cup salsa

Steps:

  • Place chicken in a large resealable plastic bag; add 2 tablespoons lemon juice. Seal bag and turn to coat; refrigerate for 1-2 hours., In a large nonstick skillet, saute onions and garlic in oil until tender. Add the chicken, cumin, salt and pepper. Cook and stir for 4 minutes or until no longer pink., Remove from the heat; stir in the tomatoes, cilantro and remaining lemon juice. Spoon into tortillas; top with lettuce. Fold in half. Serve with salsa.

6 (8 inch) flour tortillas, warmed
1 cup lettuce, shredded
1/2 cup salsa
1/2 cup cheddar cheese, shredded (optional)
1/2 cup sour cream (optional)

Steps:

  • Place chicken in a large resealable plastic bag; add 2 tablespoons of lemon juice. Seal bag and turn to coat; refrigerate for 1-2 hours.
  • In a nonstick skillet, saute the onions and garlic on medium heat in oil until tender.
  • Add the chicken, cumin, salt and pepper.
  • Cook on medium - high heat and stir for 5 minutes or until juices run clear.
  • Remove from heat; stir in the tomatoes, cilantro and remaining lemon juice.
  • Serve with salsa.
  • Also good with shredded cheddar and sour cream (optional) on top.

I started making these years ago on Christmas Eve when we were expecting family and friends from out of town and I wanted to have dinner ready to go when they arrived at our house . Over the years I have been asked for this simple recipe many times! If I don't have rotisserie chicken, I cook a couple of breasts in chicken...

Number Of Ingredients 10

2 c shredded rotisserie chicken breast
juice from 1 lemon
salt & pepper to taste
8 corn tortillas
1 c shredded colby/jack cheese
1 avocado, sliced
2 roma tomatos, diced
shredded lettuce
canola oil to lightly fry tortillas
your favorite salsa or taco sauce

Steps:

  • 1. Heat lemon juice in skillet - Add chicken and heat through - Add salt and pepper to taste. Keep warm on "low" setting.
  • 2. Lightly fry and fold tortillas - Drain thoroughly on paper towels
  • 3. Add chicken to prepared tortillas.
  • 4. Top with cheese, avocado, tomato and lettuce and your favorite salsa or taco sauce. Serve with cheese topped refried beans
