1 1/4 cups all-purpose flour (155 g)
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter (113 g) softened
1/2 cup sugar (100 g)
1/2 teaspoon vanilla extract
2 tablespoons lemon juice (from 1 small or 1/2 large lemon)
1 large egg, room temperature
1/4 cup milk (60 ml)
8 oz cream cheese (227 g) softened
2 pinches salt (about 1/16 teaspoon)
2 cups confectioner's sugar (240 g)
1 large egg, room temperature
zest of 1 lemon (about 1-2 teaspoons)
160 g fresh blueberries (about 1 cup)

Steps:

  • Preheat the oven to 350° F (180° C) and line an 8x8 (20cm) pan with parchment.
  • Make the cake layer: in a medium bowl, stir together the flour, baking soda, and salt. In a large bowl, with an electric mixer, cream together the butter and sugar at medium speed until fluffy. Add the vanilla, lemon juice, and egg, and mix until they are fully incorporated.
  • Add half the flour mixture and mix gently on low, then mix in all of the milk, and lastly add the second half of the flour. Mix on low until the flour is just incorporated, scraping the sides of the bowl and taking care not to overmix. Spread the batter in the bottom of the parchment-lined pan. The batter should be very thick.
  • Make the cream cheese layer: In a large bowl, with an electric mixer, whip the cream cheese on medium speed until fluffy. Add the salt and powdered sugar and continue mixing until they are fully incorporated, scraping the sides of the bowl. Finally, add the egg and the lemon zest and mix until it becomes smooth.
  • Pour the cream cheese mixture on top of the cake batter, spreading it with a spatula until it reaches the edges. Sprinkle the blueberries on top and press them lightly into the cream cheese. Transfer to the oven and bake for about 50-60 minutes, until the top is lightly browned all over.
  • Because they contain cream cheese, the chess squares will store best in the refrigerator for up to 4-5 days.

2 tablespoons sugar
1/8 teaspoon ground cinnamon
9 graham crackers
1/2 stick unsalted butter, melted
16 ounces cream cheese, room temperature
2 eggs
2 lemons, zested and juiced
About 1/2 cup sugar, eyeball it
1 1/2 cups fresh blueberries
Powdered sugar, for dusting

Steps:

  • Preheat oven to 325 degrees F.
  • Grease the bottom of a 9 by 9-inch baking pan with butter. Then place parchment paper over the top, pressing down at the corners. In a food processor, process the sugar, cinnamon and graham crackers until you have the texture of bread crumbs. Add the melted butter and pulse a couple of times to fully incorporate. Pour into the lined baking pan and gently pat down with the base of a glass. Bake in the oven for 12 minutes until golden. When done set aside to cool.
  • Add cream cheese, eggs, lemon zest, lemon juice and sugar to the food processor and mix until well combined. It should have a smooth consistency. Pour onto the cooled base and then cover with blueberries. They will sink slightly but should still be half exposed -- as the cake bakes they will sink a little more and break down.
  • Bake in the oven for 35 minutes or until the center only slightly jiggles. Remove from the oven and cool completely before refrigerating for at least 3 hours. Once set, remove from pan using the parchment lining and slice into 10 rectangular bars. Dust with powdered sugar.

2 eggs, divided
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
1 Tbsp. zest and 3 Tbsp. juice from 1 lemon
2-1/2 cups fresh blueberries

Steps:

  • Heat oven to 350ºF.
  • Line 13x9-inch pan with Reynolds Wrap® Aluminum Foil, with ends of foil extending over sides. Microwave butter in large microwaveable bowl on HIGH 1 to 1-1/2 min. or until melted. Add dry cake mix and 1 egg; beat with mixer until blended. Press 2/3 of the dough onto bottom of prepared pan.
  • Beat cream cheese and sugar with mixer until blended. Add remaining egg, zest and juice; mix well. Pour over crust; top with berries. Pinch small pieces of the remaining dough between your fingers; press lightly into cream cheese layer.
  • Bake 55 min. to 1 hour or until toothpick inserted in center comes out clean. Cool completely. Use foil handles to lift dessert from pan before cutting into bars.

1 package (18.25 ounces) plain yellow cake mix
8 tablespoons (1 stick) butter, melted
1 large egg
2 large lemons
1 package (8 ounces) cream cheese, at room temperature
2 large eggs
8 tablespoons (1 stick) butter, melted
2 tablespoons white or yellow cornmeal
3 3/4 cups confectioners' sugar, sifted

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Set aside an ungreased 9- by 13-inch pan.
  • For the crust, place the cake mix, melted butter, and egg in a large mixing bowl. Blend with an electric mixer on low speed for two minutes. Stop the machine and scrape down the sides of the bowl with a rubber spatula. The batter should come together in a ball. With your fingertips, pat the batter evenly over the bottom of the pan, smoothing it out with your fingers until the top is smooth. Set the pan aside.
  • For the filling, rinse and dry the lemons well. Grate the zest from the lemons and set aside; you should have about 2 teaspoons. Cut the lemons in half, and squeeze into a small bowl; you should have about 6 tablespoons. Set the juice aside.
  • Place the cream cheese in the same mixing bowl that was used to make the crust, and with the same beaters (no need to clean either) blend with an electric mixer on low speed until fluffy, 30 seconds. Stop the machine and add the lemon juice, lemon zest, eggs, melted butter, and cornmeal and beat on medium speed for 1 minute. Stop the machine and add the confectioners' sugar. Beat on medium speed until the sugar is well incorporated, 1 minute more. Stop the machine and scrape down the sides of the bowl with the rubber spatula so that the filling covers the entire surface and reaches the sides of the pan. Place the pan in the oven.
  • Bake the cake until it is well browned but the center still jiggles when you shake the pan, 45 to 47 minutes. Remove the pan from the oven and place it on a wire rack to cool, 30 minutes. Cut into squares and serve.
  • Store this cake, covered in aluminum foil, at room temperature for up to 4 days, or in the refrigerator for up to 1 week. Or freeze it, wrapped in foil, for up to 6months. Thaw the cake overnight in the refrigerator before serving.

Tangy lemon-tinged cheesecake liberally dotted with fresh-picked blueberries, atop a buttery graham cracker crust... it's like summer in a square.

2 tablespoons sugar
9 graham crackers (about one sleeve)
1/4 cup 1/2 stick unsalted butter, melted
16 ounces cream cheese (room temp)
2 eggs
1 large lemon (zested and juiced (you want approximately 3 tablespoons of lemon juice))
1/2 cup granulated sugar
1 1/2 cups blueberries (I recommend fresh, but frozen will work too)

Steps:

  • Preheat oven to 325 degrees Fahrenheit.
  • Butter an 8-inch x 8-inch baking pan, then press a square of parchment paper into the pan. This will help you lift out the finished product.
  • Make the crust: Place the graham crackers in a large Ziploc bag, and crush with a rolling pin. In a medium bowl, stir together the graham cracker crumbs and the sugar. Pour in the 1/4 cup melted butter, and mix until well incorporated. Press into the baking pan. (You can also process the graham crackers, sugar, and melted butter in a food processor, if you prefer.)
  • Bake the crust for about 12 minutes, or until it begins to turn golden brown. Let cool completely.
  • Mix the filling: Use a stand or hand mixer with a whisk attachment (if you have one), and beat together the cream cheese, eggs, lemon zest, lemon juice, and sugar until smooth. You can also do this in a blender or food processor to help ensure a smooth consistency. I simply used my Kitchenaid stand mixer and the whisk attachment.
  • Pour and sprinkle: Pour the filling over the cooled graham cracker crust. Spread evenly with a knife or spatula. And now sprinkle the blueberries evenly over the top. Pretty!
  • Bake, cool, cut, and serve: Bake at 325 degrees for about 40 minutes, or until the middle just barely jiggles. I recommend you start checking the bars at about 35 minutes, though - ovens vary! Allow to cool completely at room temperature, then refrigerate for at least 3 hours.
  • Remove from fridge, and using the parchment paper as little "handles," remove the bars from the pan. Cut into squares with a sharp knife. Serve.
