1 (10 ounce) can refrigerated buttermilk biscuit dough (such as Pillsbury®)
1 cup blueberries
½ cup powdered sugar
1 tablespoon lemon juice
½ teaspoon lemon zest

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a cookie sheet with parchment paper.
  • Remove biscuits from the can and split in half crosswise, for a total of 10 biscuits. Place 5 biscuits on the prepared cookie sheet; divide blueberries over the tops. Cover blueberries with the remaining biscuits.
  • Bake in the preheated oven until golden brown, 18 to 22 minutes. Let cool for 5 minutes.
  • Combine powdered sugar, lemon juice, and zest in a small bowl. Brush biscuits tops with 1/2 of the glaze. Let sit until glaze has set, about 5 minutes. Repeat with remaining glaze.

Steps:

  • Line 12 muffin cups with paper liners. Preheat the oven to 350 degrees F.
  • Whisk the flour, baking powder, baking soda, and salt in a medium bowl to blend. Using an electric mixer, beat 1 cup sugar, butter, and lemon zest in a large bowl until light and fluffy. 2/3 cup powdered sugar
2 tablespoons water
Biscuits:
3/4 cup chilled buttermilk

2 1/4 cups all purpose flour
1/2 cup (packed) golden brown sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda

6 tablespoons (3/4 stick) chilled unsalted butter, cut into 1/3-inch cubes
1 tablespoon raw sugar*

Steps:

  • For berries:
  • Combine all ingredients in large saucepan. Stir over medium heat until berries are slightly softened and syrup coats spoon, about 10 minutes. Transfer to medium glass bowl. DO AHEAD: Can be made 3 days ahead. Cover and chill. Bring to room temperature before serving.
  • For biscuits:
  • Position rack in center of oven and preheat to 425°F. Line large rimmed baking sheet with silicone baking mat, smooth side up, or parchment paper. Mix buttermilk, lemon peel, and thyme in small bowl. Whisk next 5 ingredients in large bowl to blend, breaking up any large clumps of brown sugar with fingertips. Add butter and rub in with fingertips until mixture resembles coarse meal. Add buttermilk mixture and stir with fork just until blended (dough will be sticky). Transfer dough to lightly floured work surface. Knead gently just until dough comes together, 4 to 5 turns (do not overwork dough or shortcakes will be tough). Pat dough out to 3/4-inchthick round. Using 3-inch-diameter cookie cutter dipped in flour, cut out dough rounds. Gently gather dough scraps and pat out to 3/4-inch thickness. Cut out additional rounds, for 6 rounds total. Transfer dough rounds to prepared baking sheet, spacing apart. Sprinkle dough rounds with raw sugar.
  • Bake biscuits until golden and tester inserted into center comes out clean, about 15 minutes. Transfer to rack; cool slightly.

Steps:

  • For the chicken: Combine the buttermilk, garlic powder, onion powder, paprika and pepper in a large bowl. Add the chicken thighs and marinate in the refrigerator for 24 hours.
  • For the cheddar biscuits: Preheat oven to 350 degrees F. Combine the flour, baking powder, sugar, salt and pepper in the bowl of a stand mixer fitted with the paddle attachment, and mix.
  • Add the shortening and butter and mix on low speed until the mixture resembles cornmeal. Add the cheese and mix. Slowly stir in the buttermilk while mixing, just until combined; do not over mix.
  • Turn the dough out onto a lightly floured surface and roll out to about an inch in thickness; be careful not to overwork the dough. Cut, using a 3-inch biscuit cutter, and place the biscuits on a sheet pan lined with parchment paper. Brush with melted butter. Bake until the tops are just golden brown, 12 to 15 minutes.
  • For the lemon jam: Put the lemon slices in a small saucepot and cover with 1 1/2 cups water and the sugar. Cook on low heat for about 2 hours, stirring occasionally, until the mixture has cooked down to a syrup consistency.
  • For the red-eye gravy: Make a roux by combining the butter and flour in a saucepan. Cook over medium heat, stirring frequently, about 20 minutes. Add the brewed and ground espresso, milk, cream and sausage, and stir well to incorporate the roux. Add the hot sauce, paprika, garlic powder, and salt and pepper to taste. Cook on low heat until the mixture has a thick, gravy consistency, about 45 minutes.
  • For the romaine slaw: Combine the romaine, sour cream, olive oil, red onions, chives, pickled jalapenos and salt and pepper to taste in a large salad bowl and toss well.
  • To finish the fried chicken: Heat a few inches of canola oil in a fryer or deep skillet to 320 degrees F. Combine the flour, salt, pepper and smoked paprika in a shallow bowl. Drain the thighs in a colander, and then dredge in the flour mixture. Fry a few pieces at a time in the hot oil until the chicken reaches an internal temperature of 165 degrees F and has a golden brown crust.
  • For each serving, place a dollop of red-eye gravy in the center of the plate. Cut a biscuit in half and place the bottom half atop the gravy. Top with a fried chicken thigh, another dollop of gravy, a fried egg, 1/2 cup romaine slaw and a dollop of lemon jam. Place the top half of the biscuit on top and drizzle with 1/2 cup more gravy. Repeat with the remaining ingredients.

200g soft butter
140g caster sugar
1 egg yolk
1 tsp vanilla extract
zest 2 lemons , juice 1
280g plain flour , plus a little extra for rolling
½ jar good lemon curd (we used Tiptree)
140g icing sugar , sifted

Steps:

  • Stir together the butter, sugar, egg yolk, vanilla and zest from 1 lemon using a wooden spoon. Stir in the flour - you might need to get your hands in at the end. Tip onto a floured surface, bring together into a smooth dough, then roll out, half at a time, and stamp out 5-6cm rounds. Keep re-rolling trimmings, you should get about 40 biscuits. Arrange on trays lined with baking parchment, cover with cling film and chill for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Bake the biscuits for 8-12 mins until pale golden, then cool. Once cool, spread half the biscuits with a little lemon curd and top with a second biscuit. Arrange the biscuits on wire racks over trays. Mix enough lemon juice into the icing sugar to give a runny consistency, then drizzle over the biscuits. Scatter over a bit more lemon zest and leave to set.

250 g white sugar or 250 g raw sugar
250 g butter
500 g sifted self raising flour
4 eggs (or 1/3 emu egg)
25 g ground lemon myrtle, leaves

Steps:

  • Cream together sugar and butter.
  • Add the eggs one at a time.
  • Mix together the sifted flour and Lemon Myrtle.
  • Once the eggs are combined stir in the flour and Lemon Myrtle mix until combined. Do not over mix the dough.
  • Roll dough mixute into small balls about the size of a walnut. Place on to greased biscuit baking trays.
  • With a floured fork, press each ball slightly.
  • Bake in a moderate oven for 12 to 15 minutes or until golden brown.
  • Cool on a tray.

These are great to have with a cup of tea - maybe it's because I'm British? Anyway, they're very buttery & lemony. They're refreshing in the Spring/Summer & are great to use as a base of individual cheese cakes. I make a batch in no time & by the time they've cooled they've vanished! The mixture is also great to keep in the fridge for a couple of days & it also freezes well. You could also sprinkle the top of the biscuits with sugar as soon as you take out from the oven.

6 ounces sugar
8 ounces flour
1 egg
2 ounces currants
1 teaspoon baking powder
1 large lemon, rind of, grated
1/2 teaspoon cinnamon

Steps:

  • Cream butter and sugar.
  • Add egg and mix well.
  • Add grated lemon rind and dry ingredients.
  • Add currants.
  • Roll teaspoonfuls of mixture into balls and place on lightly greased baking tray.
  • Press balls lightly with fork.
  • (dip fork in flour and shake off excess).
  • Bake 180'-190'C (Gas mark 4) for about 15-20 minutes- or until they are just slightly golden in colour- not browned.

2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 teaspoon sugar, as needed for sprinkling (or more)
1/2 cup unsalted butter, softened
1 tablespoon grated lemon zest (from 2 lemons)
1 cup whole milk ricotta cheese
1 large egg
1 tablespoon fresh lemon juice
1/2 teaspoon almond extract
1/3 cup thinly sliced almonds

Steps:

  • Line 12 muffin cups with paper liners and preheat oven to 350°.
  • Whisk the flour, baking powder, baking soda, and salt in a medium bowl to blend.
  • Using an electric mixer, beat together 1 cup sugar, butter, and lemon zest in a large bowl until light and fluffy.
  • Beat in the ricotta, then the egg, lemon juice, and almond extract.
  • Add the dry ingredients and stir just until blended (the batter will be thick and fluffy).
  • Divide the batter among the prepared muffin cups.
  • Sprinkle the almonds and then the remaining 1 teaspoon of sugar over the muffins.
  • Bake until the muffins just become pale golden on top, about 20 minutes.

This recipe originally appeared in "Mma Ramotswe's Cookbook." When I made these I used too little flour, so mine were more like cookies (as pictured in my photo). Yours will be thicker and more biscuit-like.

1/2 cup caster sugar
2 teaspoons baking powder
1/2 teaspoon grated lemon rind
7 fluid ounces condensed milk
1 pinch salt
8 ounces unsalted butter
1/2 teaspoon lemon juice
powdered sugar, for dusting

Steps:

  • Cream together the butter and sugar, then add the condensed milk and keep blending until well mixed.
  • Add the lemon juice and grated zest, then sift together the dry ingredients and add that too. Keep blending until the ingredients are well-incorporated.
  • Take teaspoons of dough and roll them into balls, then place them on a greased baking sheet and flatten gently with a fork.
  • Bake at about 335 degrees for 12 to 15 minutes, or until starting to brown underneath. Let cool, then dust with powdered sugar.

6 c all purpose flour
6 eegs
1/2 c bottled lemon juice
1 c oil
1/2 c milk
1 1/2 c sugar
3 Tbsp baking powder
1-2 Tbsp grated lemon rind
LEMON GLAZE:
2 c confectioners' sugar
1 oz lemon flavoring
4 Tbsp milk

Steps:

  • 1. Measure flour into a large bowl, making a well in the center; Add all ingredients into the well. Mix until smooth. (batter will be sticky; add a little milk until you have the correct consistency and all incorporated).
  • 2. Flour hands and roll into small balls.
  • 3. Place on lightly greased cookie sheet approximately 1/2-inch apart.
  • 4. Bake at 325 degrees for 12-15 minutes.
  • 5. Cool thouroughly on wire racks and frost. You may sprinkle sugared candy on top, if you wish.

SPICED LEMON & GINGER BISCUITS

175g butter , softened
85g dark muscovado sugar
1½ tsp ground ginger
½ tsp ground cinnamon
½ tsp coarsely ground black pepper
1 lemon , zested and 3-4 tsp juice
225g plain flour
50g candied lemon peel (or a mix of lemon and orange)
50g stem ginger , chopped into small chunks
100g icing sugar

Steps:

  • Mix the butter and sugar with a wooden spoon. Stir in the spices, lemon zest and flour, then tip in the candied lemon peel and stem ginger - you might need to get your hands in to bring the mix together as a dough. Divide the dough in two and shape each half into a log about 5cm across. Wrap in cling film, then chill for 1 hr. You can freeze the unbaked dough for up to three months.
  • Heat oven to 180C/160C fan/gas 4. Slice the logs into 1cm-thick rounds, place on two baking trays lined with baking parchment and bake for 12-15 mins. Leave to cool completely on the tray.
  • Mix the lemon juice with the icing sugar to make a thin glaze. Brush over the biscuits and leave to set. Will keep for three days in an airtight container.
