3/4 cup graham cracker crumbs
2 tablespoons sugar
3 teaspoons ground cinnamon
2 tablespoons butter, melted
FILLING:
5 packages (8 ounces each) cream cheese, softened
1-2/3 cups sugar
1/8 teaspoon salt
1/4 cup lemon juice
1-1/2 teaspoons vanilla extract
5 large eggs, room temperature, lightly beaten
Thin lemon slices, optional

Steps:

  • Preheat oven to 325°. Place a greased 10-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan., In a small bowl, mix cracker crumbs, sugar and cinnamon; stir in butter. Press onto bottom of prepared pan; refrigerate while preparing filling., In a large bowl, beat cream cheese, sugar and salt until smooth. Beat in lemon juice and vanilla. Add eggs; beat on low speed just until blended. Pour over crust. Place springform pan in a larger baking pan; add 1 in. of hot water to larger pan., Bake 70-80 minutes or until center is just set and top appears dull. Remove springform pan from water bath. Cool cheesecake on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., Remove rim from pan. If desired, top cheesecake with lemon slices.

This is the recipe I've been using for years. If you like, use your favorite scratch recipe for the cake but I usually like to simplify all I can.

1 (18.25 ounce) package yellow cake mix
1 (3.5 ounce) package instant vanilla pudding mix
1 cup milk
⅓ cup vegetable oil
3 eggs
6 egg yolks
1 ½ cups white sugar
1 cup butter
¼ cup all-purpose flour
1 cup fresh lemon juice
4 tablespoons grated lemon zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9 inch round cake layer pans.
  • Combine the cake mix, instant vanilla pudding, milk, vegetable oil and the 3 whole eggs. Mix until blended. Pour batter into the prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes or until cakes test done. Set aside cakes to cool.
  • To Make Lemon Cheese Filling: In the top half of a double boiler combine the egg yolks, white sugar, butter or margarine, flour, grated lemon rind and lemon juice. Cook stirring constantly over medium heat until mixture is thick enough to spread. Let cool before spreading between cooled cake layers.

3 cups graham cracker crumbs
½ cup butter, melted
1 tablespoon confectioners' sugar
1 (3 ounce) package lemon flavored Jell-O® mix
1 cup boiling water
1 (8 ounce) package cream cheese, softened
1 cup white sugar
1 teaspoon vanilla extract
1 (5 ounce) can evaporated milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, butter and confectioners' sugar. Mix well and press into the bottom of a 10 inch springform pan. Bake in preheated oven for 10 minutes. Remove from oven and allow to cool. Turn off oven.
  • Dissolve lemon gelatin in boiling water. Let cool until thick, but not set. In a large bowl, beat cream cheese, white sugar and vanilla until smooth. Set aside.
  • In a separate bowl, whip evaporated milk until thick and stiff peaks form. Pour in lemon gelatin and keep mixing until well blended. Fold in cream cheese mixture.
  • Pour filling into crust. Chill in refrigerator for at least 3 hours before serving.

1 cup butter (2 sticks), at room temperature
2 cups/360 grams sugar
1 tablespoon baking powder
3 cups/270 grams sifted cake flour
3/4 cup milk
6 large egg whites, stiffly beaten
1/2 cup butter (1 stick)
1 cup/180 grams sugar
6 large egg yolks
Grated zest and juice of 2 lemons
2 egg whites, unbeaten
1 1/2 cups/270 grams sugar
1/4 teaspoon salt
1/3 cup water
1 tablespoon light corn syrup
1 teaspoon vanilla
1 cup/135 grams shredded coconut

Steps:

  • Preheat oven to 350 degrees and grease three 8-inch cake pans.
  • With a standing or hand mixer, cream butter and sugar until light and fluffy. Add dry ingredients alternately with milk. Fold in egg whites until thoroughly combined; do not overmix.
  • Divide batter into greased pans and transfer to the oven. Bake for 25 to 30 minutes, or until top springs back when lightly touched. Cool on racks before removing from pans; let cool completely.

  • Combine all ingredients in top of double boiler. Beat with a rotary beater or hand mixer for 1 minute, then set over boiling water and beat for about 7 minutes more or until frosting stands in glossy peaks. Remove from the heat and continue beating until frosting is cool and thick enough to hold firm swirls. Let cool completely before using.
  • Spread the lemon filling between the layers and on top. Spread the frosting on the sides of the cake and press with shredded coconut.

This was posted in the Montreal Gazette. Some one had requested a cheesecake made from the restaurant Franny's that has been closed for quite some time now. This is in time for Shavuot, which requires Jews to eat dairy during the holiday.

1 cup graham cracker crumbs
2 tablespoons brown sugar
2 tablespoons melted unsalted butter
1 lb cream cheese, at room temperature
2/3 cup granulated sugar
1/2 cup sour cream
3 eggs, at room temperature, lightly beaten
2 tablespoons lemon juice
1 teaspoon grated lemon zest
1 teaspoon vanilla extract
3/4 cup sour cream
3 tablespoons granulated sugar
1/3 cup whipping cream

Steps:

  • For the crust:.
  • Preheat the oven to 400 degrees f. Lightly butter an 8 inch springform pan.
  • In a mixing bowl, combine crumbs with sugar, then with butter and press mixture int bottom of pan, packing it down with the base of a flat glass.
  • Bake until golden about seven to ten minutes.
  • For the Cheese filling:
  • Keep the oven at 400 degrees F.
  • In a medium bowl combine cream cheese and sugar blending until smooth. Blend in sour cream. Stir in beaten eggs, one third at a time. Stir in lemon juice, zest, and vanilla, blending well.
  • Pour into baked crust and place in oven. Immediately turn heat down to 300 degrees F and bake for one hour or until cake begins to rise on the sides.
  • Turn oven off. Open oven door and let cake sit in oven for another 30 minutes. Remove, set on rack.
  • For cheesecake topping:.
  • have the oven at 350 degrees F.
  • In a medium bowl, combine all three ingredients, blending with a spoon until smooth.
  • Spread over top of baked cheesecake. If cake has cracks, use topping to fill in the spaces.
  • Bake until set, about 15 minutes. Cool completely before removing side of springform pan. Chill until ready to serve.
  • Cheesecake can be wrapped closely in plastic and refrigerated for about four days or frozen two weeks. served chilled with fresh fruit or fruit coulis.

An old Finnish recipe that produces a delicate, slightly crumbly cake with a lovely, mild lemon flavour. This is the original recipe - I sometimes add 1/2 ts of lemon extract and 1 ts of vanilla for deeper flavour.

250 g butter, at room temperature
250 g sugar
4 eggs
1/2 lemon, juice of
130 g all-purpose flour
120 g potato starch
1 teaspoon baking powder
100 ml chopped fresh lemon balm

Steps:

  • Preheat oven to 165 C; grease and flour a 1 1/2 litre cake pan.
  • Cream butter and sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition.
  • Add lemon juice, stir to combine.
  • In another bowl, combine all-purpose flour, potato starch and baking powder; sift the flour mixture onto the butter mixture, stir to combine.
  • Add chopped lemon balm, stir to combine.
  • Pour the batter into the prepared pan and bake in the preheated oven for 50-60 minutes, or until the cake tests done.
  • Let the cake cool in the pan for a while; after inverting the cake, rinse the cake pan, dry it and place back on the cake. Allow the covered cake to cool completely.

1 cup graham cracker crumbs
2 tablespoons granulated sugar
1/4 cup melted butter or 1/4 cup margarine
1 (7 1/2 ounce) package sheriff lemon pie filling (reg. not lite)
2 egg yolks
water, amount on back of package
1 tablespoon knox gelatin powder
1/4 cup cold water
16 ounces cream cheese
1/2 cup granulated sugar
1 1/4 cups whipping cream
1 tablespoon , dr. oetker whip it (one small individual envelope)
1 tablespoon dr. oetker vanilla sugar (one small individual envelope)
2 egg whites (see bottom optional note.)

  • Method;.
  • Base:.
  • Crush the graham crackers or crumbs into a bowl, mix with melted butter and sugar.
  • Press into a 9 inch spring form pan.
  • Bake 325 degrees for 10 minutes.
  • This is to help set it. Let Cool.
  • Filling:.
  • Prepare boxed Lemon Pie filling with the two egg yolks and water as listed on the back of the package directions. Cook until thick. Remove from heat(. Note: the package says to add butter, do NOT for this recipe.).
  • Sprinkle the envelope of gelatin over the 1/4 cup cold water and let soften this is blooming.
  • When softened nicely a few minutes, add to the lemon pie filling which is still hot, and stir well to dissolve completely the gelatin.
  • Cover the top surface directly with plastic wrap, and set aside to cool.
  • Cream the cream cheese until smooth , adding in the 1/2 cup sugar.
  • Continue to whip until smooth and fluffy.
  • Remove 1 cup of the lemon cooled custard for the top of the dessert.
  • Add the remainder of the cooled lemon into the cheese/sugar mixture and blend into the mixture until evenly blended, and smooth.
  • Whip the one cup whipping cream with the envelope of Whip It and envelope of Vanilla Sugar, whipping until stiff.
  • Remove 3/4 cup of the whipped cream for the topping.
  • Beat the egg whites until stiff and fold into the remaining whipped cream.
  • Now add the remaining whiped cream into the lemon cheese mixture, blending evenly in gently folding thru manner.
  • Pour the lemon /cheese/whipping cream mixture over the cooled baked crust.
  • Chill at least fifteen minutes or more to firm up.
  • Spread the cooled cooked remaining lemon filling over chilled layer.
  • So now you have a three layer look, crust, light yellow lemon cheese, then the dark straight layer of lemon.
  • Chill until firm .
  • You can just before serving time add a fourth layer by spreading the remaining whipped cream over evenly, or serve with the remaining whipped cream dollaped on top of each slice with some nice raspberries, blueberries and strawberries.
  • I must admit that the egg whites sometimes I don't whip and use them at all, and it comes out really the same in the end. So that step and ingredient can be optional if worried about raw egg white. But remember the gelatin added to the base filling is there and the liquid of the egg whites is part of the recipes liquid -- Just a note to puzzle you more if you should or shouldn't use whites.
