Lemon Pineapple Jell-O with Pineapple Whipped Cream Topping is a light and refreshing slice of vintage wonderfulness! The deliciously sweet and citrusy stuff can be served as a salad or a dessert and served with or without the chopped walnuts on top.

1 large box lemon jello
4 cups water
1 cup Marshmallows
1 20 ounce can crushed pineapple (drained with juice reserved)
Reserved juice from the can of crushed pineapple
1 egg (beaten)
1 Tablespoon all-purpose flour
1/4 cup + 2-3 tablespoons granulated sugar (divided)
1 1/4 cups heavy whipping cream
1/2 teaspoon vanilla
1/2-3/4 cup walnuts (chopped (optional))

Steps:

  • Heat 2 cups of water to boiling by microwaving in a large glass bowl for 4-5 minutes. Stir in contents of the Jell-O package until it dissolves. Separate the pineapple juice from the crushed pineapple by draining the juice into a small saucepan and setting aside for later.
  • Add marshmallows to the hot lemon Jell-O and stir until dissolved, then stir in the crushed pineapple. Stir in 2 additional cups of cold water, and pour into a large rectangular glass dish. Transfer the Jell-O to the fridge and allow to set completely, about 3-4 hours.
  • While the Jell-O is setting up in the fridge, prepare the pineapple whipped cream topping by whisking the beaten egg, flour, and 1/4 cup sugar with the reserved pineapple juice in a small saucepan and heating over medium-low heat, whisking constantly, until the sauce begins to thicken, about 4 to 6 minutes. Remove from heat and cool completely.
  • In another bowl, beat the heavy cream with an electric mixer on high speed, gradually adding the additional 2-3 tablespoons of sugar and vanilla, until whipped cream forms and holds its shape when beaters are removed.
  • Fold the cooled pineapple juice mixture into the whipped cream until combined, then spread over the completely set Jell-O. Sprinkle with the chopped walnuts and refrigerate until ready to serve.

2 box lemon gelatin
2 c hot water
1 large bottle 7 up
1 large can of crushed pineapple (save juice)
2 large bananas
2 c mini marshmallows
1 c sugar
1 large egg
1 large container of cool whip

Steps:

  • 1. Dissolve jello in hot water. Drain juice from pineapple and save. Add pineapple to jello, 7 up,bananas and mini marshmallows to jello. Pour in 9x13 pan. cool until firm
  • 2. Topping--Mix 1 cup sugar, pineapple juice with water to make one cup, and egg. cook on low until thick. Let cool. Then fold in cool whip and spread on jello. Top with nuts and cheese if desired.

This is a pretty pastel salad and a perfect accompaniment to an Easter dinner. It is typically made with lemon jello; however I had lime jello so I used it instead of lemon. Very good. The topping gives it a very creamy flavor.

1 large package lemon jello

1 cup(s) boiling water
3 - bananas, sliced
1 1/2 cup(s) miniature marshmallows
1 large can crushed pineapple; drained and juice saved
1 cup(s) pineapple juice you saved; add water to make 1 cup
1 - egg, well beaten
1/2 cup(s) sugar
1 tablespoon(s) cornstarch
1/2 pint(s) whipping cream, whipped

Steps:

  • Dissolve the lemon jello in one cup boiling water. Add 3 cups of 7-Up. Put in refrigerator and let set until slightly thickened. (Approx. 30 - 45 minutes). Fold in the sliced bananas, 1 1/2 c. marshmallows, and the large can of crushed pineapple (drained).
  • Let the jello set completely. To make the topping: Mix and bring to a boil, stirring constantly, the pineapple juice, well beaten egg, 1/2 c. sugar and 1 T. cornstarch. Cook until thick. Let cool down and then add the 1/2 pint of whipped cream. Mix this well and spread on top of the jello. Refrigerate. DELISH!

1 c mayonnaise
1 can(s) 20 oz crushed pineapple, drained reserve juice

1/2 c chopped pecans

2 cups of 7-Up
1 cup small marshmallows
3 bananas
1 small can crushed pineapple
1 egg
1/2 cup sugar
2 tablespoons flour
1 tablespoon butter

  • Combine jello with boiling water and dissolve. Stir in 2 tablespoons of sugar and 7-Up. Refrigerate until the mixture is set but still liquid enough to add marshmallows, pineapple (drain juice and save for topping) and bananas. Stir these ingredients together and return to the refrigerator for a firm set. For the topping, combine ½ cup of saved pineapple juice, 1 beaten egg, ½ cup sugar, flour and butter in a sauce pan. Bring to a low boil and thicken. Cool till slightly warm and add and fold into whipped cream. Mix well then spread generously over firmly set jello.

1 package Dream Whip ((prepared according to package directions))

Steps:

  • Heat the water to boiling in the microwave or on the stovetop.
  • Dissolve the jello in the boiling water. Stir well.
  • Add the softened cream cheese to the hot Jello. Use a hand mixer to mix until the cream cheese has melted in.
  • Add the 7up and stir.
  • Chill for 60-90 minutes or until partially set.
  • Prepare Dream Whip according to the package directions.
  • Mix the Dream Whip into the Jello.

1 can (20 ounces) unsweetened pineapple chunks
1/4 cup reduced-fat margarine
2 tablespoons lemon juice
1 tablespoon cornstarch
2 tablespoons water
Artificial sweetener equivalent to 2 tablespoons sugar
3 cups chopped apples
2 cups green grapes
2 teaspoon poppy seeds
3/4 cup chopped pecans, toasted

Steps:

  • Drain pineapple juice into a saucepan. Add margarine and lemon juice; cook over medium heat until margarine is melted. In a small bowl, combine cornstarch and water until smooth; stir into juice mixture. Bring to a boil; boil and stir for 2 minutes. Reduce heat; add sweetener.
