Leftover turkey fried rice with turkey, fluffy rice, scrambled eggs, vegetables, and classic Asian seasonings is a one skillet meal made in just 10 minutes.

1/2 tablespoon vegetable oil
1/2 cup onions, finely chopped (approximately half an onion)
1 teaspoon garlic, minced
1 small jalapeño pepper, sliced (optional for a spicy kick)
1 + 1/2 cups leftover cooked turkey, shredded or cubed into 1/2-inch thick pieces
2 eggs
3 cups white rice, cooked
1 tablespoon soy sauce
1/2 tablespoon sesame oil
1 teaspoon vegetable stock powder
1 teaspoon white pepper
1 teaspoon salt
1 teaspoon ground black pepper
1 cup carrots and peas vegetable mix, frozen
1/2 tablespoon green onions, finely chopped
1 teaspoon white sesame seeds (for garnish)

Steps:

  • Heat oil in a large wok or skillet over medium high heat for 2 minutes until sizzling and hot. Add onions and garlic and sauté for 2 minutes until fragrant. Stir in jalapeño (if using).
  • Add shredded or cubed turkey and stir to combine, about 1 minute. Move the turkey mixture to one side of the skillet and add eggs to the empty space in the skillet. Stir the eggs until scrambled and cooked through, yet still tender, about 1 minute. (The eggs should be springy and bright in colour, and not too dry at this stage). Stir to combine all ingredients together.
  • Add cooked rice and all seasoning including soy sauce, sesame oil, vegetable stock powder, white pepper, salt and black pepper. Stir well to combine, about 2 minutes. If the rice is not soft enough, add up to 1/4 cup of water to soften it.
  • Add carrots and peas, and stir fry for 2 minutes while evenly mixing and distributing the ingredients. Then, stir in green onions.
  • Serve hot on a plate, and sprinkle sesame seeds on top.

Turkey fried rice is super delicious, so quick and easy. This dish is the perfect way to pull together any leftovers turkey, tossed with some brown rice and veggies.

1½ lb turkey ((700g) small pieces/shredded)
4 cups cold brown rice ((760g))
½ cup garden peas ((73g))
1 cup mixed bell peppers ((150g))
1 tbsp all purpose seasoning (see notes for link)
½ tbsp fresh ginger (minced)
1 large onion (sliced)
3 garlic cloves (minced)
3 tbsp coconut aminos or organic soy(a) ((40g))
3 tbsp olive oil ((40g))
2 tsp thyme (dried or fresh (stems removed))
½ tbsp parsley
⅓ cup dried cranberries ((40g) optional)
black pepper and pink salt to taste

Steps:

  • On medium heat, add some olive oil to your skillet/wok.
  • Add your onion, garlic and ginger then proceed to saute until translucent/soft.
  • Add your turkey then sprinkle in your seasoning (all purpose, parley and thyme) and stir
  • Next add your vegetables - garden peas, mixed peppers etc... continuing to stir and combine with the other ingredients.
  • Fold in the rice and cranberries if including then add your soy(a) sauce
  • Add salt and black pepper to taste/ adjust seasoning further if required.

nonstick cooking spray
1 medium onion, diced
½ cup frozen peas and carrots
2 tablespoons salted butter
3 cups cold cooked rice
2 cups diced cooked turkey
2 tablespoons soy sauce, or more to taste
1 tablespoon sesame oil, or as needed
2 large eggs

Steps:

  • Coat a large pan with cooking spray. Add onion and saute over medium heat until translucent, about 5 minutes. Add frozen vegetables and butter; cook and stir, allowing butter to melt and veggies to thaw, 3 to 5 minutes.
  • Increase heat to medium-high and stir in rice and turkey. Add soy sauce, 2 tablespoons at a time, and stir until rice takes on color. Push everything to the sides of the pan. Add sesame oil to the center of the pan and stir rice mixture until coated. Push everything to the sides of the pan again. Break eggs in the center of the pan. Scramble in the center until set, 2 to 3 minutes; then stir into rice mixture until well combined.
