3/4 cup mayonnaise, reduced fat
3/4 teaspoon salt
1/2 teaspoon pepper
1 (4 ounce) jar red pimientos, diced
potato chips, crushed for topping
1 teaspoon grounded paprika

Steps:

  • Mix all ingredients together and place them in a casserole dish.
  • Cover with crushed potato chips and sprinkle with paprika.
  • Bake uncovered at 350ºF. for about 30 minutes or until heated through and chips are lighty brown.
  • Serve with noodles and a salad.

2 onions, finely chopped
1 eating apple, cored and chopped
2 tbsp olive oil
1 tsp dried sage, or 5 sage leaves, chopped
2 tbsp plain flour
300ml vegetable or chicken stock
2 tbsp wholegrain mustard
2 tbsp runny honey
400g-500g leftover turkey, shredded
about 350g leftover roasted vegetables like roast potatoes, parsnips, celeriacs and carrots, chunkily diced

Steps:

  • Fry the onion and apple in the oil until softened in a casserole or deep pan. Stir in the sage for 1 min, then stir in the flour. Gradually stir in the stock followed by the mustard and honey.
  • Bring up to a simmer and stir in the turkey and roast veg. Cover and gently simmer for 15 mins until turkey is piping hot. Season and eat with mash or jacket potatoes.

1 tablespoon vegetable oil
1 onion, chopped
½ teaspoon ground cumin
salt and ground black pepper to taste
2 (15 ounce) cans black beans, drained and rinsed
3 cups shredded cooked turkey
2 cups salsa, divided
1 (15 ounce) can sweet corn, drained
1 cup water
1 (1.25 ounce) package taco seasoning mix
2 cups cooked rice
2 cups shredded Mexican cheese blend, divided
3 cups crushed tortilla chips

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onion, cumin, salt, and pepper. Saute until onion is tender, about 5 minutes. Add black beans, shredded turkey, 1 cup salsa, corn, water, and taco seasoning. Mix well. Cover and simmer until flavors meld, about 5 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix remaining 1 cup salsa with cooked rice and spread evenly into the bottom of an ungreased 10x15-inch baking pan. Pour turkey mixture over rice. Layer 1 cup Cheddar cheese over turkey mixture. Top with tortilla chips. Cover loosely with aluminum foil.

2 ¼ cups boiling water
2 cups cubed cooked turkey

1 (16 ounce) container sour cream

You can use boxed stuffing if you need to, you would need 2 6oz packages of seasoned stuffing mix. You can make this ahead very easily...just remember the cooking time will be extended

6 -8 cups prepared stuffing, 3/4 of it for the bottom the rest for dotting on top
2 cups cooked turkey
16 ounces frozen mixed vegetables, thawed and slightly cooked
3 -4 green onions, diced
1/2 cup reduced-fat mayonnaise (Hellmans is what I use)
1/2 cup plain low-fat yogurt
pepper
1 (10 3/4 ounce) cream of chicken soup

Steps:

  • Spray the bottom of a 9x13 baking dish, cover the bottom of dish with stuffing.

2 cups leftover Roasted Vegetables, recipe follows
2 cups 1/2-inch-diced leftover Roasted Turkey Breast, recipe follows, or your favorite recipe
1/2 cup cranberry sauce, optional
4 tablespoons unsalted butter
6 tablespoons all-purpose flour
4 cups turkey stock, warmed
1/4 cup white wine

  • Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with cooking spray.
  • Whisk together the eggs, milk, 1 teaspoon salt and 1 teaspoon pepper in a large bowl. Stir in the Turkey Gravy and hot sauce. Spread the Cornbread Stuffing in the prepared baking dish, then sprinkle over the Roasted Vegetables and Roasted Turkey Breast. Pour the egg mixture over the top. Bake until golden brown and set, 35 to 40 minutes. Let cool for 5 minutes before slicing. Garnish with the cranberry sauce, if using.
  • Melt the butter in a skillet over medium heat. Whisk in the flour and cook until golden, 1 to 2 minutes. Whisk in the warmed stock. Bring to a simmer and cook, stirring constantly, until thickened, 10 to 15 minutes. The mixture should coat the back of a spoon. Pour in the wine, stir and cook for an additional 2 to 3 minutes. Season to taste with salt and pepper.
  • Preheat the oven to 350 degrees F.
  • Melt the coconut oil over medium heat in a large skillet. Saute the onion, celery and carrots until tender, 8 to 10 minutes. Remove from the heat and put into a large bowl. Add the cornbread croutons, seasoned croutons, thyme, rosemary, sage and cayenne if using. Add the chicken stock and stir to combine. Taste and add salt and pepper, then stir in the eggs. Mix to combine and pour into a 9-by-13-inch casserole dish. Bake until golden brown and fluffy but still moist, 45 to 55 minutes.
  • Preheat the oven to 400 degrees F.
  • Put the squash, beets, onions and thyme in a large bowl. Drizzle with oil and toss to coat. Season generously with salt and pepper. Spread in a single layer on a rimmed baking sheet and roast, tossing once, until golden brown and tender, 45 to 50 minutes.
  • Preheat the oven to 375 degrees F.
  • Add 1 tablespoon of the coconut oil to a 6-inch cast-iron skillet. Put the skillet in the oven and allow to heat until very hot, 6 to 8 minutes.
  • Combine the cornmeal, flour, baking powder and 1 teaspoon salt in a large bowl with a whisk. In a different bowl, combine the almond milk, applesauce, sorghum, egg and 2 tablespoons coconut oil. Make a well in the center of the dry ingredients and pour in the wet. Fold to combine.
  • Carefully remove the skillet from the oven and pour in the batter. Return the skillet to the oven and bake until golden with a crisp crust, 25 minutes. Let cool before cutting the cornbread into 1-inch pieces (about 8 cups).
  • Reduce the oven to 350 degrees F.
  • Grease a baking sheet with some coconut oil and spread the cornbread in a single layer. Be careful, the cornbread is fragile and you dont want to be rough with it. Drizzle lightly with the remaining 2 tablespoons coconut oil and sprinkle with salt and pepper. Cook, stirring halfway through, until golden brown and crunchy, 30 to 40 minutes. Cool on the baking sheet before using.

2 cups brown rice
1 tablespoon margarine
1 ½ teaspoons canola oil
1 medium onion, diced
2 cloves garlic, minced, or more to taste

10 ½ fluid ounces whole milk
1 cup diced cooked turkey, or more to taste
½ cup shredded Cheddar cheese, or more to taste

Steps:

  • Bring broth, rice, and margarine to a boil in a medium saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
  • When the rice has about 20 minutes left, preheat the oven to 350 degrees F (175 degrees C).
  • Heat oil in a large skillet over medium heat; stir in onion and garlic. Saute until the onion has softened and turned translucent, about 5 minutes. Add soup, milk, and turkey and stir until well combined. Cook until heated through.
  • Mix the rice and soup mixture together. Pour into a 9x13-inch baking dish. Top with Cheddar cheese and cover with aluminum foil.

4 ounces medium egg noodles, cooked
1 1/2 cups turkey, sliced
3 tablespoons butter
1 tablespoon onion, minced
3 tablespoons flour

3 ounces sliced mushrooms (canned)
1 can pimiento

What to do with those leftovers? Here is what I did today being 2 days after Thanksgiving 2009. Results were fantastic and all eaten up! The key is to use your leftover ingredients and cans of food you did not use that were brought to prepare the feast. For me that was evaporated milk and chicken broth. Use what you have for vegetables. If I had yams, I would have definatly used that for a topping too.

4 cups of diced cooked turkey
14 ounces chicken broth
1 cup evaporated milk
1 cup corn
1/4 cup broccoli
1/4 cup diced onion
1/4 cup cauliflower
margarine or butter
1/4 cup flour
salt
pepper
mashed potatoes

Steps:

  • Put margarine or butter in non stick skillet and melt. Add flour and whisk till smooth. Add onion and saute. Add broth and milk and bring to a bubble. Add vegetables, turkey, salt and pepper to the skillet mixture.
  • Take mixture and transfer to a large pie or small casserole dish.
  • Add mashed potatoes to either a large gallon size baggie, cut edge of one end to create a tip or to a pastry bag and use a nice large sized tip.
  • Squeeze out the mashed potatoes onto the top of mixture creating small tear drops all across the entire top.
  • Put dish in oven on broil. Take out once the tips of the potatoes are browned.
  • Let cool for 15 minutes.
  • Enjoy!

6-8 slice leftover cooked chicken or turkey meat
1 pkg chicken or turkey stuffing mix (or leftover dressing)
2 c chicken or turkey gravy, leftover or purchased
1 small can french fried onion rings

  • 1. Preheat oven to 375 degrees. Place sliced turkey or chicken meat in bottom of buttered 9 by 13 inch pan. Set aside. Mix up dressing or stuffing according to package instructions. Or use leftover dressing. Spoon dressing over meat in baking pan. Pour gravy over ingredients in pan. Crush French Fried Onion Rings a little. Sprinkle over gravy.

It's always been a mish mash of whatever we had but this year I decided to try to make a "recipe" out of it all .. and it turned out great ! Due to health concerns we are now limiting our salt intake as much as possible so my recipes will no longer contain added salt. We will get plenty of that through some of the ingredients but you are always welcome to add salt to taste as you are cooking or at serving time.

2 cup(s) leftover cooked vegies - whatever you have on hand and enjoy

Gradually stir in the milk then raise the heat and cook until thickened - stirring often - about 2 minutes or so.
  • Remove from heat. Stir in turkey, soup, yogurt or sour cream and Tamari sauce. Add the cooked pasta and stir to coat.
  • Pour into your prepared baking dish. Take the stuffing and crumble it and lay it over the top of the casserole.
  • Cover and bake for 20 minutes. Uncover and sprinkle the onion rings on top. Return to oven and cook uncovered for an additional 10 minutes. Allow to sit for about 5 minutes before serving.
  • Use salt and pepper as desired either while cooking or at serving time.

3 cups leftover prepared stuffing, divided
4 cups coarsely chopped leftover cooked turkey (about 1 lb.)
3/4 cup Hellmann's® or Best Foods® Real Mayonnaise, divided
1/4 cup whole berry cranberry sauce
2 cups leftover mashed potatoes
1 cup shredded part-skim mozzarella cheese

Steps:

  • PREHEAT oven to 375°. Spray 8-in. baking dish with no-stick cooking spray. Spoon in 1-1/2 cups stuffing, then top with turkey.
  • COMBINE 1/4 cup Hellmann's® or Best Foods® Real Mayonnaise with cranberry sauce; evenly spread over turkey.
  • COMBINE remaining 1/2 cup Mayonnaise, potatoes and cheese in large bowl. Evenly spread on turkey, then top with remaining 1-1/2 cups stuffing.
  • BAKE 40 minutes or until heated through. Let stand 10 minutes before serving. Garnish, if desired, with dried cranberries.

Whenever we had leftover fish no one wanted to eat it even though they liked it the first day. So I came up with this casserole which made them not only eat the leftover fish but like it! A lot! It could also be used with leftover chicken or turkey.

1 1/2 cup(s) leftover fish
1/4 cup(s) olive oil, extra virgin
1/3 cup(s) flour
1 - chicken bouillon cube
1 cup(s) water
4 cup(s) milk
1 package(s) mixed vegetables, frozen
1/3 cup(s) parmesan cheese
1/2 cup(s) cheddar cheese, shredded
- salt and pepper to taste

Steps:

  • Cut the fish into bite size pieces and set aside. In a pot over medium heat add the olive oil and flour and stir for a minute. Add the bouillon cube and gradually add the water while stirring till it is fully incorporated. Gradually add the milk and stir well. Bring to a slow boil then add the vegetables and fish and stir.
  • Add the cheeses, salt and pepper and stir well to make sure they are well distributed.
  • Pour into a casserole and bake at 375 till the top is golden brown, about 30 - 40 minutes.

I found this recipe in Turkey Saftyband Recipes For Leftovers from Cornell Cooperative Extension. When I made this recipe I used 2 cups Turkey Stock, ground sage, and I left out the boiled eggs as that just didn't sound good to me. I think this needs more seasonings especially salt and the velveeta should be shredded not cubed. I would recommend soaking the macaroni why preping the rest of the food as the macaroni on top stays hard.

2 cups cracker crumbs
3 cups broth
1/2 teaspoon sage (optional)
1 lb uncooked macaroni
1/8 teaspoon pepper
1/2 lb reduced fat cubed Velveeta cheese
3 small onions, finely chopped
20 ounces 98% fat-free cream of mushroom soup
5 hard-boiled eggs, chopped

Steps:

  • Combine all ingredients except hard cooked eggs.
  • Mix very well.
  • Carefully stir in eggs.
  • Pour mixture into greased 9x13-inch dish.
  • Bake at 350 for 1 hour.
