This easy sauteed cabbage and leeks recipe is a great side dish to any meal, especially for corned beef, pot roast, or ham.

Leeks With Caraway Seeds image

6 leeks
4 tablespoons ( 1/2 stick) unsalted butter
2 tablespoons caraway seeds, slightly crushed
1 teaspoon salt
1/2 teaspoon freshly ground white pepper
1/2 cup dry vermouth

Steps:

  • Trim the tops and greens off the leeks. Cut the white section in half lengthwise and wash thoroughly under cold running water. Slice diagonally into quarter-inch pieces.
  • Heat the butter in a medium-sized skillet over medium-high heat. Add the leeks, caraway seeds, salt and pepper and cook until the leeks are soft, about two to four minutes. Add the vermouth, reduce the heat to low and cover the pan. Cook for three to five minutes, until the leeks are tender. Serve immediately.

2 tablespoons butter or vegetable oil
1 cup coarsely sliced onion
1 teaspoon minced garlic
1 small head firm cabbage, coarsely shredded, about 5 cups
1 medium-size apple, peeled, cored and cut in thin slices
1 tablespoon white vinegar
1 teaspoon caraway seeds
1/2 cup fresh or canned chicken broth
Salt and freshly ground white pepper to taste

Steps:

  • Melt the butter in a skillet and add the onion and garlic. Cook, stirring, until wilted. Do not brown. Add the cabbage, apple, vinegar, caraway seeds, chicken broth, salt and pepper.
  • Bring to a boil, stir, cover and simmer for 15 minutes. Uncover and if there is too much liquid, reduce it accordingly.

Cabbage is rarely a side dish on its own, but it is in this recipe. It takes on some Indian flavor with caraway seeds and the garam masala, and it maintains its crunch with the quick heat of the stir fry. It is excellent with lamb.

1 large head green cabbage
6 tablespoons vegetable oil
1 tablespoon cumin or caraway seeds
2 teaspoons sesame seeds
2 onions, halved and thinly sliced crosswise
2 teaspoons salt
2 pinches cayenne
2 tablespoons lemon juice
1 teaspoon garam masala (optional)

Steps:

  • Trim outer leaves off cabbage. Cut cabbage in half lengthwise. Cut out and discard core, and cut crosswise into long, thin shreds. (A bread knife is good for this.)
  • Heat half the oil in a wide skillet over high heat. When hot, add half the cumin and half the sesame seeds. When sesame seeds begin to pop add half the onions, and cook, stirring often, until golden, about 5 minutes. Add half the cabbage, and cook, stirring often, until wilted and lightly browned but not cooked through, about 5 minutes more. Remove to a bowl, and repeat with remaining oil, cumin and sesame seeds, onion and cabbage. (Recipe can be made to this point up to 2 hours in advance and held at room temperature.)
  • Just before serving return all the cabbage-onion mixture to pan over medium heat. Add salt and cayenne, and cook, stirring, until cabbage is soft and sweet, about 7 minutes more. Stir in lemon juice and garam masala, and serve.

1 tbsp olive oil
1 onion , thinly sliced
2-3 tsp caraway seeds
