½ cup unsalted butter, softened
½ cup sugar
½ cup firmly packed light brown sugar
1 egg
½ teaspoon vanilla extract
1 cup flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup rolled oats
1 cup cornflakes
½ cup sweetened flaked coconut
½ cup coarsely chopped pecans

Steps:

  • Preheat oven to 350° F. Line baking sheets with parchment; set aside.
  • In a large mixing bowl with an electric mixer or in the bowl of a stand mixer fitted with the paddle attachment, cream butter; add the sugars, beating well. Add egg and vanilla; beat well.
  • In a medium bowl, combine the flour, baking powder, baking soda, and salt. Add to the butter mixture, beating well. Stir in the oats, cornflakes, coconut, and pecans.
  • Use a cookie scoop to drop the dough onto the prepared baking sheets 2 inches apart. Bake for 10-12 minutes. Remove to wire racks to cool completely.

This wonderful recipe was in circulation when I was a kid in the 70s. Years later, a woman brought a tray of these to the office, which I instantly recognized as THOSE COOKIES FROM MY CHILDHOOD, and she refused to give me the recipe (said it was her babysitter's secret recipe)! I searched online (tried several recipes) and asked my friends and family off and on if they'd heard of it, for 10 years. I finally JUST found this online! They are SO GOOD! Bake them for your friends and family and share the recipe with the WORLD! Note, the number of cookies you get will vary - depending on how big you roll the balls.

Number Of Ingredients 12

1 cup butter
1 cup vegetable oil
1 cup white sugar
1 cup brown sugar
1 egg
1 cup crushed corn flakes
1 cup chopped nuts (I use walnuts or pecans)
1 cup quick-cooking oatmeal
4 cups flour, decrease to 3 1/2 cups for a chewier cookie
1 tablespoon baking soda
1/2 teaspoon salt
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 325.
  • Cream butter, sugars, vanilla and egg.
  • Add oil.
  • Mix in dry ingredients.
  • Form dough into walnut sized balls.
  • Place on cookie sheet and flatten with a fork dipped in water.
  • Bake for 10- 12 minutes.
  • Cool on pan for a minute or two, then transfer to a rack to cook.

Golden Syrup Cornflake Cakes are a delightful treat! These kid friendly treats use simple ingredients and also work as honey crackles!

Number Of Ingredients 6

4 cups cornflakes
3 tbsp golden syrup
1/3 cup brown sugar
120 grams butter (Note 1 )
1/2 cup peanuts (optional)
1/4 cup sprinkles (optional)

Steps:

  • Preheat your oven to 180°C / 350-375°F / Gas Mark 4-5.
  • Line a 12 hole muffin tin with patty papers. Note 2
  • Add cornflakes to large mixing bowl.
  • Add brown sugar, golden syrup and butter to heatproof jug. Microwave for 2 minutes and use a mini whisk to combine.
  • Pour melted butter, sugar mixture over cornflakes and use wooden spoon to stir and combine.
  • Add peanuts and sprinkles and stir again to combine.
  • Use 2 dessert spoons portion the mixture evenly across the 12 lined muffin holes.
  • Place the cornflake cakes into the oven on the middle rack and bake for 10 mins.
  • Use oven mits to remove when cooked, place on wire rack and allow to cool for 2- 3 mins. Note 3
