I have used this dip on numerous occasions and everyone seems to love it. My niece is graduating this Friday and I am serving it for her cook-out.

1 (16 ounce) can refried beans
1 (1 1/4 ounce) package taco seasoning mix
1 (6 ounce) carton avocado dip
1 (8 ounce) carton sour cream
1 (4 1/2 ounce) can sliced ripe olives
2 large tomatoes, chopped
1 small onion, diced
1 (4 ounce) can diced green chilies
1 1/2 cups monterey jack cheese, shredded

Steps:

  • Combine beans with taco seasoning.
  • Spread bean mixture evenly in 9 x 12 pan.
  • Layer remaining ingredients in order listed.
  • Serve with nacho chips.

2 cups refried beans (1 can) (optional)
2 cups sour cream
1 cup cream cheese
2 cups salsa (mild, medium, or hot)
2 cups grated cheddar cheese (Kraft Shredded Cheese for Nachos is great!)
1 yellow pepper, chopped
3 plum tomatoes, chopped
6 green onions, chopped
1/2 cup pickled jalapeno pepper, chopped (or more)
1/2 cup black olives, chopped (optional)

Steps:

  • Spread beans in a rectangular casserole dish (9x13-inch). You could use chili instead, as well.
  • Mix sour cream and cream cheese together (use a hand mixer or immersion blender). Spread over beans or chili.
  • Spread salsa over sour cream/cream cheese layer.
  • Sprinkle cheese over salsa.
  • Add peppers, tomatoes, and green onions in layers. Top with jalapeño peppers or olives, if using. You can also put these on the side, so your guests can choose to add them or not.
  • Chill until serving time. Serve with Nacho Chips.

This dip is going to be a HUGE hit at your next football party or tailgate. It can be prepared in a snap. I really like the addition of chicken and not beef in these nachos - it makes these really good.

1 can(s) refried beans, 16 oz.
1 can(s) Rotel diced tomato & green chilies -mild, med or hot
8 slice Velveeta cheese
1 rotisserie chicken, deboned
8 oz sour cream
1 can(s) black olives sliced
1 c green onions chopped
tortilla chips

Steps:

  • 1. Spread refried beans in the bottom of a microwave safe dish.
  • 2. Sprinkle 1/2 can of Rotel on top of the beans.
  • 3. Use the slices of Velveeta cheese to cover the beans and Rotel. Put in the microwave for 2-3 minutes until the cheese melts and the beans are warm.
  • 4. Layer the pulled chicken, sour cream, green onions, black olives and remaining Rotel.
  • 5. Serve with tortilla chips. I like the scoops best. Would probably be good with Fritos as well.
