LAYERED BANANA DESSERT
Trish Schoofs' no-cook banana dessert is old-fashioned comfort food that tastes like you fussed. "This recipe is a real winner at our house," she writes from her West Bend, Wisconsin kitchen. "Not only is it lighter in fat and calories, but it's light on your time, too. Plus, it's a great way to use up bananas."

CREAMY LAYERED BANANA-BLUEBERRY DESSERT
This is the most *heavenly* banana dessert! Because of the bananas this is best served the same day it is made. The cream filling can be cooked on top of the stove but to avoid scortching the saucepan I like to cook it in the microwave. Plan ahead the filling needs to chill for 4 hours, prep time includes chilling time. For a less sweeter whipped cream you can reduce or omit the powdered sugar.

Steps:
- It's Dangerous to let myself near the kitchen on Gloomy, Rainy Days.. I am compelled to "Make" Something.. or many "Somethings".. Here's a New dessert I concocted.. Hope you enjoy it as much as I enjoyed creating it!!! It's SCRUMPTIOUS! this is a layered dessert, keep in the fridge.. Banana Cream "Simply Divine" Crust: 2 c. Crushed Vanilla Wafers (reserve about 16 cookies) 1/2 c. (stick) of Real butter melted put butter into 13x9" pan mix well & press into the pan.. chill First layer: 2 eggs 2 sticks of Real Butter 2 1/2 c. powdered sugar blend eggs & butter until smooth, add sugar a little at a time while mixing.. when smooth, whip on high 'til fluffy set aside Second layer: 2 boxes instant banana pudding mix 2 1/2 c. Whipping cream 1 1/2 c. half & half put cream into clean bowl add pudding mix slowly while mixing on low speed when all is incorporated scrape down sides of bowl & whip on High 'til stiff peaks form. Here's what else you'll need: 4 bananas sliced into 1/4" rounds 2 cups of Fresh whipped Cream or large tub of frozen whipped topping.. Here's What to Do: 1.take the chilled crust & start dolloping the first layer onto the crust.. carefully spread over entire crust..I used a pastry tube & eclair tube to spread it..making large shells.. looks pretty 2. take the sliced bananas & lay them onto the layer 'til completely covered 'til all covered 3. Top with the Fresh Whipped Cream or "Cool Whip".. take 8 of the cookies, place them down the center of the dessert crush the remaining 8 cookies to sprinkle on the dessert... Drizzle w/ White Chocolate Sauce.. chill for a few hours.. but overnight is best.. Enjoy: Rita Patton Hunter

Number Of Ingredients 19
Steps:
- Preheat oven to 350 degrees F. In a bowl, mix together the flour, pecans, sugar and butter until mixture resembles cookie dough. Spread into the bottom of a 9 x 13 inch glass Pyrex baking dish. Bake at 350 degrees F for about 20 minutes or until lightly browned. Cool completely, about 1 hour. Drain the pineapple, reserving the juice for another use; set aside.
- Mix together the cream cheese and powdered sugar until well blended. Add 1 cup of the Cool Whip and vanilla; mix together. Spread this layer over the cooled crust.
- Slice the bananas over the top of the cream cheese layer, following by the crushed pineapple, and then dab the pie filling around on the top. Spread out as much as possible.
- Spread enough whipped topping on top to cover; cover dish and refrigerate for 24 hours. Before serving, garnish by placing 12 dollops of whipped cream spaced evenly across the top. Drizzle chocolate syrup all over. Sprinkle with additional chopped nuts and top each whipped cream dollop with a cherry. Cut into squares.
- Variations: Can substitute 2 cups of crushed Nilla wafers, cookies, or graham crackers, in place of the flour; no baking is necessary. Can also use a variety of canned or sliced fresh fruit with compatible pie fillings. Okay to substitute margarine, sugar free and lower fat products, if desired.
