An easy and stunning flavoured vodka to make at home. I always try to make a least one bottle when I harvest my fresh lavender, as it works so much better with fresh lavender rather than dried lavender. I sometimes add a couple of strips of orange peel for a more subtle and complex flavour. This lavender scented vodka is excellent in Martinis! Make sure your lavender is free of insects and pesticides, just give the stems a gentle shake outside before using. I have also used this lavender vodka in poached fruit, as well as a splashing some of over poached salmon - absolutley divine!

750 ml vodka
1 bunch fresh lavender, about 20 stems
1/2 orange, zest of (optional)

Steps:

  • Pour one bottle of vodka over a bunch of fresh lavender - I keep old and decorative bottles for this purpose! (Kilner jars are also good for this).
  • Add the orange peel if using.
  • Store in a dark and cool place - or in the fridge - for about 2 weeks before using.
  • Ready to use when the vodka smells and tastes of lavender.
  • Strain into a fresh bottle or jar and use for Martinis and simple vodka based cocktails.

A wonderful addition to any cook's pantry, this lavender infused vinegar is easy to make and adds a certain j' nés quoi to any savoury dish. Use it in my Lavender Mayonnaise or to flavour a salad dressing - all the lavender taste but not the chewy lavender buds! This vinegar retains not only the flavour of the lavender, but also the fragrance too. If you have the lavender bushes, it is worth making a few bottles of this, it will enliven any drear winter's day and makes a great gift for a foodie friend. This is a Francis Bissell recipe, from a great little cookbook that my daughter bought for me this Mother's Day!

4 (350 ml) bottles white wine vinegar
20 sprigs of freshly picked lavender

Steps:

  • Place five sprigs of lavender in each bottle. Close the bottles again and leave them in a sunny place for four weeks. If you still have fresh lavender halfway through the maturation process, replace the lavender in the bottles with fresh sprigs.
  • For long term storage, store in a cool, dry and dark place. Last for up to 2 or 3 years.
  • Use in salad dressings, mayonnaise, marinades, dips and spreads.

2 tablespoon(s) lavender flowers (dried)

Steps:

  • Place lavender in a clean 1-quart jar. Using a wooden spoon, lightly crush lavender flowers against the side of the jar after adding vodka.
  • Cover jar tightly with a non metallic lid (or cover jar with plastic wrap and tightly seal with a metal lid). Let stand in the freezer for 4 days.
  • Pour vodka through a fine mesh sieve to remove all solids. Return infused vodka to original bottle. Or to give as a gift, pour infused vodka into a decorative jar. Label and seal. Place jar in the freezer up to 3 months to store.
