EMERIL'S LATE NIGHT PASTA

I got this recipe from Emeril's TV show. It's easy and delicious. You can always add/adjust to whatever you have on hand or like.

Number Of Ingredients 9

1 lb spaghetti
4 slice bacon (more is always nice!)
2 Tbsp olive oil
2 Tbsp thinly sliced garlic
2 tsp chopped shallots
1/2 tsp crushed red pepper flakes
1/2 tsp salt
1 large egg
1/2 c grated parmesian-reggiano, or as desired

Steps:

  • 1. Bring a large heavy pot of salted water to a boil. Add the spaghetti and cook, stirring to separate the strands until the pasta is al dente - 7 to 8 minutes for dry pasta. Drain in a colander - reserving 1/4 cup of the pasta cooking water. Return the pasta to the pot.
  • 2. Meanwhile, in a large skillet, heat the oil over medium heat. Add the bacon and cook until crisp. Add the garlic, shallots, pepper and salt and cook, stirring until fragrant and the garlic is soft but not brown - about 1 1/2 minutes.
  • 3. Remove the pan from the heat and add the egg and reserved pasta cooking water - stirring quickly until the mixture thickens, but the egg does not scramble. Pour over spaghetti in pot and toss until evenly coated.
  • 4. Divide the spaghetti among plates or large shallow bowls, sprinkle cheese to taste over the top of each serving and serve immediately. Makes 4 servings.

6 ounces thin spaghetti or tagliolini
3 pieces applewood smoked bacon, thinly sliced into 1/4-inch-thick pieces
1 1/2 teaspoon coarsely cracked black pepper, plus more for serving
1/2 cup onion, chopped
1/2 clove garlic, minced
1 cup freshly grated Parmesan cheese
4 tablespoons unsalted butter
2 large eggs
1 tablespoon chopped flat-leaf parsley
Coarse salt

Steps:

  • Bring a large pot of salted water to a boil; add pasta and cook for 8 minutes.
  • Meanwhile, place bacon in a large skillet over medium heat. Cook, stirring occasionally, until crisp, 3 to 4 minutes. Add onion and 1/2 teaspoon black pepper; cook, stirring until onion softens, 2 to 3 minutes.
  • While onion is cooking, heat 1 tablespoon butter in a small skillet. Carefully crack eggs into skillet and cook until whites are just set. Remove from heat and keep warm.
  • Add garlic to skillet with bacon and onion and stir to combine. Add 1/4 cup pasta cooking liquid to skillet; drain pasta and add to skillet. Add remaining 3 tablespoons butter and reduce heat to low. Add cheese and toss until melted and sauce is well combined.
  • Divide pasta evenly between two serving bowls; top with fried egg and season with pepper. Serve immediately.

This veggie pasta dinner with cherry tomatoes, peas, Parmesan cheese, and fresh parsley comes together in less than 30 minutes.

½ pound uncooked spaghettini
1 tablespoon olive oil
½ cup pancetta, cubed
½ cup diced onion
¼ cup thinly sliced garlic
1 cup cherry tomatoes, cut in half
½ cup grated Parmesan cheese
Ground black pepper to taste
Red pepper flakes to taste

Steps:

  • Cook pasta according to package directions. Reserve 1 cup of the pasta water. Drain pasta; keep warm.
  • Heat oil in skillet over medium heat. Cook pancetta until fat renders, about 3 minutes. Add onions and cook until they begin to release moisture, 4 to 5 minutes.
  • Add garlic and cook until fragrant, about 30 seconds.
  • Stir in tomatoes, peas, parsley, Parmesan cheese, and cooked spaghettini. Add the pasta water to create a sauce. Add pepper and red chili flakes to taste. Increase heat until mixture begins to simmer and thicken, stir, and remove from heat.

6 cloves garlic, pressed
2 T olive oil
2-4 fresh jalepenos, chopped
8 plum tomatoes, diced
1/2 tsp salt
1/3 -1/2 C fresh basil
8 oz spaghetti
Freshly grated Parmesan cheese

Steps:

  • Cook garlic in oil in large nonstick skillet over medium heat, stirring constantly, 1-2 minutes or until golden. Add peppers and cook, stirring constantly, 1 minute. Add tomatoes and salt; cook 3 minutes or until thoroughly heated. Stir in basil. Serve immediately over hot spaghetti and sprinkle with Parmesan cheese.
