1 tablespoon virgin coconut oil
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 jalapeño, diced
1 medium sweet potato, diced into 1 inch cubes
½ head of cauliflower, cut into small florets (about 2-3 cups)
1 bell yellow or orange pepper, diced
2 carrots, thinly diced or chopped
2 tablespoons curry powder
½ teaspoon turmeric
½ teaspoon cumin
⅛ teaspoon ground cinnamon
½ teaspoon salt
1 (15 oz) can lite coconut milk
1/2 cup tomato sauce
½ cup vegetarian broth
¼ cup roasted cashews, ground
1 package firm or extra firm Nasoya tofu, cubed
To garnish: Cilantro and extra cashews

Steps:

  • Add coconut oil to a large pot and place over medium high heat. Add in garlic, ginger, jalapeno, sweet potato, cauliflower, bell pepper, and carrots. Saute for 10 minutes, stirring frequently, until carrots start to soften.
  • Next stir in curry powder, turmeric, cumin, cinnamon and salt.
  • Add in coconut milk, tomato sauce, vegetarian broth and ground cashews. Stir until smooth.
  • Gently add in tofu and stir. Simmer on low heat for 20 minutes or until sweet potatoes and carrots are fork tender. Serve immediately with cilantro.

Wonderfully spiced with a mild curry flavour, this tofu coconut curry is a quick, easy, and delicious vegan meal made in one pan.

1 tbsp vegetable oil
1 yellow (or white) onion, chopped
1 bell pepper, chopped
3 garlic cloves, minced
1-inch fresh ginger, minced
1 tbsp curry powder
½ tsp turmeric powder
½ tsp cumin powder
400 ml (14 fl. oz.) canned coconut milk
½ cup crushed tomatoes
2 tbsp tomato paste
454 g extra firm plain tofu, chopped into 1-inch cubes
2 cups baby spinach
1 lime, zest and juice
½ cup fresh cilantro, chopped
Salt and pepper, to taste
Serve with cooked rice.

Steps:

  • In a large sauté pan or skillet (I use a 12-inch skillet) at medium-high heat, add the vegetable oil, onion, bell pepper, salt, and pepper. Sauté until the onions begin to brown, about 4-5 minutes.
  • Add in the garlic, ginger, curry powder, turmeric, and cumin and stir for another minute or two, until fragrant.
  • Reduce the heat to low and stir in the coconut milk, crushed tomatoes, and tomato paste until well-incorporated. Add the tofu and gently stir to coat with the sauce.
  • Bring the curry to a boil before reducing the heat to a simmer. Cook uncovered for 5 minutes.
  • Stir in the spinach, lime zest, and lime juice, until the spinach wilts. Taste for additional salt and pepper. Top with fresh cilantro and serve over rice. Enjoy!

4 slices fresh ginger root

¼ cup cashews
2 stalks lemon grass, chopped
2 onions, sliced
3 tablespoons olive oil
1 dash crushed red pepper flakes

2 ½ cups cubed firm tofu
1 (14 ounce) can coconut milk
14 fluid ounces water
2 medium potatoes, peeled and cubed
2 teaspoons salt

Steps:

  • In a blender or food processor, grind the ginger root, garlic, cashews, lemon grass, and onions into a paste.
  • Heat olive oil in a medium wok over low heat. Stir in the blended mixture and red pepper flakes. Gradually mix in the curry powder.

1 tablespoon curry powder
1 teaspoon ground cumin

1 teaspoon crushed garlic
1/4 cup cashews
2 teaspoons lemongrass, finely chopped
2 onions, cut into quarters

1 small red chili pepper, thinly chopped

2 1/2 cups cubed firm tofu
2 cups coconut milk
4 cups water
2 cups potatoes, cubed
2 teaspoons salt

Steps:

  • Mix the garlic with ginger, onions, vinegar, curry, chilli and lemon grass and grind into a rough paste.
  • Heat the oil in a wok and add the olive oil until hot then mix in the ground paste.
  • Drop the heat to a simmer and add the coconut milk and water.
  • Add the potatoes and cook for about 15 minutes before adding the tofu.
  • Cook for another 15 minutes or until the potato is tender and season with sugar and salt.

1 butter pound cake (a 9 inch loaf)
2 (13 1/2 ounce) cans coconut milk
4 tablespoons butter
3/4 cup sugar
3 large eggs
2 teaspoons vanilla
1/4 cup cornstarch (plus)
1 tablespoon cornstarch
1/3 cup water
1 1/2 cups coconut, freshly grated
cinnamon (for dusting)

Steps:

  • Slice pound cake into ½ inch thickness. (You can bake the pound cake from a mix or may also use Sara Lee's frozen pound cake in the freezer section.).
  • Line the entire bottom of your 9 x 13 dish with cake. You will have to cut the pound cake slices into smaller pieces to fit around the corners or between the larger slices.
  • Pour the coconut milk into the pot over medium high heat. Add the butter and sugar. Stir occasionally and bring to a gentle boil. Lower heat slightly if necessary.
  • While waiting for the milk to heat up, beat the eggs and vanilla in the medium bowl. Set aside. Mix the cornstarch and water in the small bowl. Set aside.
  • When the milk comes to a boil, pour the egg mixture a little bit at a time into the milk, whisking quickly. Ignore the shreds of eggs as it will not be apparent in the final dessert. You may also temper the eggs, but it does change the texture of the custard.
  • Stir constantly. Let the egg and milk mixture come to a gentle boil. Stir the cornstarch and water then pour into the gently boiling custard.
  • Add the coconut and BE CAREFUL as the custard will splatter. Stir vigorously and cook for two minutes.
  • Pour custard over cake and sprinkle with cinnamon. Cool uncovered at room temperature for 30 minutes, then continue cooling it uncovered in the fridge.
  • This coconut latiya is exceptional after two days!

1 package firm tofu, drained and cut into 3/4 inch cubes
1 can coconut milk
3 large bananas or 4 medium bananas, split and cut into chunks
1/4 cup dried shredded coconut
1/2 cup sultanas or 1/2 cup raisins
2 tablespoons curry powder
1 teaspoon cumin
1 teaspoon nutmeg
1 cup milk (or rice milk or soy milk for vegans)
1 medium onion, chopped
white wine

Steps:

  • Use bananas that are ripe but not mushy.
  • Saute the onion in a bit of white wine.
  • Heat the coconut milk over a medium-high flame.
  • Add the spices, coconut, and raisins and stir thoroughly.
  • Reduce heat to medium, add the bananas, and continue to cook until the bananas are hot (stir lightly so they don't disintegrate.) Add the tofu, and milk as needed to thin out the sauce.
  • As soon as the tofu is hot this is ready to serve.
  • Heating and stirring beyond that point can turn this into a tasty mush.
  • Serve with basmati rice, with a side of nuts, raisins, and chutney.

5 leaves fresh basil, cut into strips

1 small red bell pepper, cut into strips

This simple weeknight red curry relies on jarred or canned red curry paste for flavor, which you can find at larger supermarkets and specialty markets. Transfer leftover canned curry paste to a jar, top it with a little oil and store in the refrigerator for up to a month. Or freeze for longer storage. 1-inch ginger root, peeled and minced

8 ounces cremini mushrooms, quartered
1/2 teaspoon sea salt, more to taste

2 teaspoons Asian fish sauce

1 cup snow peas
Basil and/or cilantro leaves, for garnish

Steps:

  • Cut tofu into 1-inch slabs and place on paper towel-lined baking sheet. Cover with another layer of paper towels and place another baking sheet on top. Let sit for 20 minutes. Cut into 1-inch cubes.
  • Heat oil in a large skillet over medium high heat. Add ginger, shallots, garlic, chile and cilantro stems, and sauté until tender, about 5 minutes. Add mushrooms and sauté until golden brown and tender, about 5 minutes. Season with salt. Stir in curry paste and cook 2 minutes. Pour in coconut milk, scraping up any curry paste with a wooden spoon. Add fish sauce, lime zest and juice. Add tofu cubes and snow peas. Simmer until the sauce thickens slightly and the snow peas are tender, 7 to 10 minutes, stirring frequently. Taste and add more salt and/or fish sauce if needed.
  • Serve warm with brown rice and a scattering of torn basil and/or cilantro leaves on top.
