Pan-Seared Venison with Rosemary and Dried Cherries image

1 1/2 teaspoons chopped fresh rosemary
1 teaspoon coriander seeds
1 large garlic clove
1 1/2 teaspoons extra-virgin olive oil
1 (1-lb) venison tenderloin
1/4 cup dry red wine
1/4 cup dried tart cherries
3/4 cup fat-free beef broth
1/2 cup water
1 teaspoon cornstarch
2 tablespoons black-currant jelly

Steps:

  • Grind 1 teaspoon rosemary with coriander seeds and garlic with a mortar and pestle to make a paste, then stir in 1/2 teaspoon oil.
  • Pat venison dry and put in a bowl, then rub with paste. Season well with pepper, then cover and chill 20 minutes.
  • Preheat oven to 450°F.
  • Heat a well-seasoned cast-iron skillet over high heat until hot, then add remaining teaspoon oil, tilting skillet to coat evenly. Season venison well with salt, then brown, turning once, about 6 minutes total.
  • Transfer skillet to middle of oven and roast venison until an instant-read thermometer inserted diagonally into center registers 125°F, 7 to 10 minutes. Transfer meat to a plate and cover tightly with foil.
  • Add wine and cherries to skillet and deglaze by boiling over moderately high heat, stirring and scraping up brown bits. Stir together broth, water, cornstarch, and remaining 1/2 teaspoon rosemary in a bowl and add to skillet. Simmer, stirring, until mixture is thickened, about 5 minutes. Whisk in jelly and salt and pepper to taste.
  • Cut venison into 1/4-inch-thick slices and serve with sauce.

2 tablespoons fresh rosemary, finely chopped

4 garlic cloves, crushed
2 lbs venison tenderloins
2 tablespoons olive oil
sea salt
fresh ground black pepper
2 teaspoons cornstarch
2 cups low sodium beef broth or 2 cups chicken broth
1 cup dry red wine
1 1/2 cups dried tart cherries
1 tablespoon grated ginger
1 tablespoon grated orange zest
1 tablespoon honey

Steps:

  • Using spice grinder, combine rosemary, coriander, and garlic to make a paste.
  • Rub each tenderloin with 1 Tbs of olive oil, then rub each tenderloin with the paste. Cover and refrigerate for 30 minutes.
  • Preheat oven to 450°F.
  • Heat remaining 1 Tbs of olive oil in ovenproof nonstick saute pan over high heat. Add tenderloin and cook until browned, turning once, about 5 minutes Season with salt and pepper.
  • Place in oven. Roast until meat thermometer registers 125F, 8-10 minutes.
  • Transfer meat to plate and cover with foil.
  • Stir cornstarch into a bit of broth until smooth. Add mixture, wine, cherries, ginger, orange zest, and remaining broth to saute pan over medium-high heat, stirring with a wooden spoon to loosen any browned bits on the bottom of the pan. Simmer until thickened, about 5 minutes Whisk in honey, and season to taste with salt and pepper.
  • Slice venison on the diagonal, serve with sauce.

¼ cup shallots (sliced)
1¼ cup frozen pitted cherries
1 tbsp balsamic vinegar
⅓ cup sweet red wine
⅛ tsp salt
⅛ tsp black pepper
¼ tsp chipotle pepper ((optional))
1 tbsp butter

Steps:

  • Heat oil in a small pot, and sauté the shallots until caramelized.
  • Add cherries, vinegar, and wine. Simmer the savory cherry sauce for twenty minutes so that it can reduce and thicken.
  • Season the sauce with salt, black pepper, and chipotle pepper (if using). Finally, swirl in the butter.
