Moroccan Spiced Lamb Meatballs in Cumin Coriander Spiced Tomato Sauce image

2 1/2 pounds ground lamb
Spice Mix, recipe follows
1 egg
1/2 cup ketchup
2 tablespoons olive oil
1/2 cup minced onion
1 tablespoon minced garlic
1 tablespoon minced shallots
2 cinnamon sticks
1 tablespoon ground cumin, toasted*
1 tablespoon ground coriander, toasted
4 cups tomato puree
1 cup vegetable or chicken stock
Salt and freshly ground black pepper
1 tablespoon thinly sliced mint leaves
1 tablespoon minced Italian parsley leaves
Slivered almonds, toasted, for garnish
Chopped fresh mint leaves, for garnish
Warmed pita wedges, for serving
1 tablespoon ground coriander, toasted
1 tablespoon ground cumin, toasted
1 teaspoon curry powder
1 tablespoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried thyme
3/4 teaspoon ground mustard
3/4 teaspoon paprika
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon chili powder
Salt and freshly ground black pepper

Steps:

  • Meatballs:
  • Preheat oven to 350 degrees F.
  • In a large bowl, mix lamb, Spice Mix, egg, and ketchup, being careful not to overwork the meat. Form into 1 1/4-ounce balls, about the size of a ping-pong ball. Place meatballs on a large baking sheet and bake for approximately 20 minutes.
  • Sauce:
  • In a large saucepan over medium heat, add the oil and heat, then add the onions and lightly saute until soft. Add garlic, shallots, cinnamon sticks, cumin, and coriander and saute over low heat, about 3 to 4 minutes. Add tomato puree and bring to a boil. Add stock and season sauce with salt, ground black pepper, mint, and parsley. Simmer for about 10 minutes and remove the cinnamon sticks.
  • To serve: Add the meatballs to the sauce and heat until warmed through. Pour a small amount of sauce on the plate and add 5 meatballs per serving. Garnish with toasted slivered almonds, mint, and warm pita wedges.
  • In a medium bowl, mix all the spices together. Season with salt and pepper, to taste.

CORIANDER LAMB CHOPS

1 tablespoon coriander seeds
2 garlic cloves
1/2 teaspoon salt
2 teaspoons olive oil
6 rib lamb chops (about 1 1/3 pounds total)

Steps:

  • Preheat broiler.
  • With a mortar and pestle or in an electric coffee/spice grinder grind coriander seeds. Mince garlic and mash to paste with salt. In a bowl stir together coriander, garlic paste, and oil and rub onto chops.
  • Arrange chops on rack of a broiler pan and broil 3 inches from heat 3 minutes on each side for medium-rare.

2 tablespoons oil
500 g lamb, -diced
2 onions, chopped
1 coriander, bunch chopped
1 green chili pepper, deseeded and chopped
2 garlic cloves, grated
5 cm ginger, grated
2 tablespoons coriander, ground
1 teaspoon turmeric
1/2 teaspoon gunnel seeds
2 cardamom pods, seeds only
pince og clove
1 pinch cinnamon
1/2-1 teaspoon chili powder, according to taste
4 curry leaves
1 tomatoes, chopped
salt
200 ml water, approximate

Steps:

  • heat oil and in a large pan over medium heat add the lamb and cook stirring all the time until the meat is sealed.
  • Add the onions and continue to fry for at least 5 minutes - adding a little extra oil or water if it looks like sticking.
  • Add Chopped coriander, chilli, garlic and ginger and cook for just a few minutes more.
  • Add the remaining spices, curry leaves, chopped tomato and salt, cook for another few minutes adding the water. bring to the boil, turn down heat and simmer for about 3/4 of an hour.

2 pounds boneless leg of lamb, cut into 2-inch cubes
1/4 cup olive oil
2 garlic cloves, minced
1/4 cup plain yogurt
1 teaspoon soy sauce
1 teaspoon Dijon mustard
1 teaspoon thyme leaves
Freshly ground pepper to taste
1 red onion, cut into wedges
2 red peppers, cut into wedges
1 cup plain yogurt
1 clove garlic, minced
2 tablespoons lemon juice (or more to taste)
1/2 cup fresh coriander leaves, chopped
Coarse salt and freshly ground pepper to taste
Sprigs of fresh coriander for garnishing

Steps:

  • Marinate lamb cubes in mixture of olive oil, garlic, yogurt, soy sauce, mustard and thyme with pepper to taste for at least two hours, but preferably overnight.
  • Thread lamb on skewers, alternating with pieces of onion and peppers.
  • Combine yogurt, garlic, lemon juice and coriander leaves and season to taste with salt and pepper.
  • Preheat grill or broiler. Grill lamb for five to seven minutes, turning once for medium rare; cook longer if you want it more well done. Garnish plates with coriander sprigs. Serve sauce separately in a small bowl.

3 tablespoons Dijon mustard
1 teaspoon kosher salt
Freshly ground pepper to taste
1 3-pound boneless loin of lamb, at room temperature
3 tablespoons cracked coriander seeds
1 tablespoon olive oil
6 tablespoons demi-glace
2 tablespoons Chartreuse
1/4 cup fresh orange juice
1/2 teaspoon ground coriander
1/2 teaspoon grated orange zest
Kosher salt to taste

Steps:

  • Preheat the oven to 325 degrees. Stir together the mustard, salt and pepper and rub the mixture all over the lamb. Spread the coriander seeds on a sheet of waxed paper and turn the lamb to coat it with seeds on all sides.
  • Heat the oil in a large heavy ovenproof skillet over medium heat. Add the lamb and brown on all sides. Place the skillet in the oven and roast the lamb until medium rare, about 40 minutes.
  • Remove the lamb from skillet and cover with foil to keep warm. Discard the fat. Add the demi-glace and Chartreuse to the skillet and simmer, stirring, over medium heat, for about 2 minutes. Stir in the orange juice, coriander, orange zest and pepper. Season with salt, if needed. Carve the lamb and serve immediately with a little sauce drizzled over the top.

1 1/2 tablespoons olive oil
2 teaspoons red wine vinegar
1 large garlic clove, minced
3/4 teaspoon ground cumin
3/4 teaspoon ground coriander
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1 1/3 to 1 1/2 pounds lamb shoulder arm (round-bone) chops, trimmed boned, cut into 1-inch pieces
4 bamboo skewers, soaked in water 10 minutes

Steps:

  • Prepare barbecue (medium-high heat) or preheat broiler. Whisk first 7 ingredients in medium bowl to blend. Add lamb; toss to coat evenly. Let stand 5 minutes. Thread lamb on skewers, leaving 1/2-inch space between each piece.
  • Grill or broil lamb until crusty brown outside but still pink inside, turning occasionally, about 8 minutes. Arrange skewers on plates and serve.

4 lamb rib chops, cut 1-inch thick
1 large garlic clove, minced
1/4 teaspoon fresh ginger, minced
3/4 teaspoon cumin seed, crushed
3/4 teaspoon coriander seed, crushed
1/2 teaspoon ground cumin
1/4 teaspoon salt
1 tablespoon olive oil, plus
more olive oil, for greasing the grill

Steps:

  • Trim fat from chops and place them on a flat plate.
  • Combine all the other ingredients in a small bowl, then rub the mixture over the chops. Cover with plastic wrap and marinate in the refrigerator about 30 minutes.
  • Heat a lightly oiled grill pan over high heat until almost smoking, then add the chops and sear for about 2 minutes, flip the chops over and cook for another 3 minutes for the medium rare or 3 1/2 minutes for medium.

2 lbs lean boneless lamb, cubed to skewer size
2/3 cup plain yogurt
1 tablespoon chopped of fresh mint
1 tablespoon chopped fresh coriander (cilantro)
2 teaspoons grated onions
1 large onion, grated
3 bay leaves
5 rosemary sprigs
1 lemon, juice and zest of
1/2 teaspoon sugar
1/3 cup olive oil
salt & fresh ground pepper

Steps:

  • Make sauce:.
  • Mix, then chill and set aside to serve with meat.
  • Stir marinade ingredients together, set aside.
  • Cube lamb and lay out in shallow dish/pan. Pour marinade over the lamb, and toss to coat.(Or do this in a ziplock baggie.).
  • Place in fridge, and let marinate for several hours or overnight.
  • Drain the meat, skewer, and grill for about 10 minutes, until browned, turning occasionally.
  • Grill lemon wedges at the same time.
  • Serve kebabs on a platter, garnished with the grilled lemons and extra rosemary sprigs and the bowl of coriander yogurt sauce for dipping.

Serve up this tasty Moroccan roast lamb dish for a low-calorie main that delivers stacks of flavour and three of your 5-a-day

½ leg of lamb , around 800g
2 red onions , cut into wedges
1 butternut squash , skin left on, cut into wedges
1 celeriac , peeled and cut into wedges
2½ tbsp cold pressed rapeseed oil
2 tbsp ras el hanout
8 garlic cloves , skin on
1 small bunch coriander
½ tsp cumin seeds
1 lemon , zested and juiced
½ green chilli , deseeded

Steps:

  • Take the lamb out of the fridge while you chop the onions, squash and celeriac. Heat oven to 200C/180C fan/gas 6. Trim any excess fat off the leg of lamb, then cut a few slashes into the meat. Rub ½ tbsp oil and 1 tbsp ras el hanout over the lamb and season with salt and pepper. Put the onion, celeriac, butternut squash into a large roasting tin with the garlic. Toss with the remaining ras el hanout, remaining oil and some salt and pepper. Nestle the lamb into the tin and put in the oven to roast for 40 mins.
  • Take the lamb out of the oven and leave to rest. Put the veg back in the oven for 20 mins. Meanwhile, blitz the coriander, cumin seeds, lemon zest, lemon juice and green chilli together in a mini food processor until finely chopped and vivid green.
  • Carve the lamb, put on a platter, then pile on the veg. Sprinkle over some of the coriander mixture before taking the platter to the table for everyone to help themselves.
