Categories     Soup/Stew     Garlic     Lamb     Onion     Stew     Hot Pepper     Fall     Winter     Gourmet

Yield Makes 6 to 8 servings

Number Of Ingredients 22

For chili
10 dried mild New Mexico chiles (2 1/2 to 3 oz)
5 cups water
3 1/4 lb boneless lamb shoulder, trimmed and cut into 1 1/2-inch pieces
1/2 teaspoon black pepper
1 1/4 teaspoons salt
3 tablespoons lard or vegetable oil
1 large onion, chopped (2 cups)
4 garlic cloves, minced
2 Turkish bay leaves or 1 California
2 teaspoons ground cumin
1 1/2 teaspoons dried oregano, crumbled
3 tablespoons finely chopped canned chipotle chiles in adobo
For dumplings
3/4 cup masa harina (corn tortilla mix)
1/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup chilled lard or unsalted butter, cut into small pieces
3/4 cup well-shaken buttermilk
2 tablespoons chopped fresh cilantro

Steps:

  • Make chili:
  • Simmer dried chiles in 2 cups water, covered, in a 2-quart heavy saucepan until very soft, about 20 minutes. Reserve 3/4 cup cooking liquid, then drain in a colander. Stem chiles (do not remove seeds), then purée in a blender with reserved cooking liquid until smooth (use caution when blending hot liquids). Force purée through a fine-mesh sieve into a bowl. Reserve purée.
  • Pat lamb dry, then sprinkle with pepper and 1 teaspoon salt. Heat 2 tablespoons lard in a 6-quart wide heavy pot or a 3-inch-deep straight-sided skillet over moderately high heat until hot but not smoking, then brown lamb in 4 batches (without crowding), turning occasionally, about 5 minutes per batch. Transfer to a bowl.
  • Add remaining tablespoon lard to pot, then cook onion, garlic, bay leaves, and remaining 1/4 teaspoon salt over moderate heat, stirring occasionally, until softened, 4 to 5 minutes. Add cumin and oregano and cook, stirring frequently, 1 minute. Stir in reserved chile purée and chipotles and simmer, stirring frequently and scraping up brown bits from bottom of pot, 5 minutes. Add lamb along with any juices accumulated in bowl and remaining 3 cups water, then bring to a boil. Reduce heat and simmer, covered, until lamb is tender, about 2 1/2 hours.
  • Make dumplings:
  • Stir together masa harina, flour, baking powder, baking soda, and salt in a bowl. Blend in lard pieces with a pastry blender or your fingertips until mixture resembles coarse meal. Add buttermilk, stirring just until dough is moistened (do not overmix).
  • Skim fat off chili and discard bay leaves, then drop 8 or 9 heaping tablespoons of dough onto simmering chili, about 2 inches apart. Reduce heat to low and gently simmer, covered, until tops of dumplings are dry to the touch, 15 to 20 minutes. Sprinkle with cilantro.

LAMB AND GREEN SQUASH DUMPLINGS

Lamb and Green Squash Dumplings image

Learn to make crispy lamb and zucchini dumplings from Helen You of Dumpling Galaxy.

Provided by Helen You

Categories     Lamb     Zucchini     Lunar New Year

Yield Makes 24 dumplings

Number Of Ingredients 12

2 tablespoons Sichuan peppercorns, toasted
1 small zucchini, grated
1 pound ground lamb
3 scallions, finely chopped, white and green parts
2 tablespoons sherry cooking wine
1 tablespoon freshly grated ginger
1 tablespoon soy sauce
1 tablespoon kosher salt
24 Panfried Dumpling Wrappers
2 tablespoons all-purpose flour
2 tablespoons white vinegar
1 teaspoon vegetable oil

Steps:

  • In a small bowl, soak the peppercorns in ⅓ cup of lukewarm water for at least 1 hour, then strain out and discard the peppercorns. Wrap the zucchini in a clean cheesecloth or tea towel and squeeze to wring out excess moisture.
  • In a medium bowl, add the lamb and slowly pour in the peppercorn-infused water, a few drops at a time, and use your hands to mix it in well until the water is fully absorbed. Add the scallions, wine, ginger, soy sauce, and salt, and mix well until fully incorporated. Gently fold in the zucchini and mix until well combined.
  • Holding a wrapper in your palm, use a fork to add about 1 tablespoon of the filling to the center of the wrapper, then lightly pat down the filling with the fork to get rid of any air bubbles.
  • Fold the dumpling into a half-moon, pinching it shut with your thumbs and index fingers, then press the center of the dumpling while pulling on the corners to push out any air bubbles and shape it into a curved crescent. Inspect the dumpling for any holes and pinch them shut. Repeat with the rest of the wrappers to make 24 dumplings.
  • In a small bowl, whisk together the flour, vinegar, and 1 cup of water until combined to make a slurry. Brush the oil in a medium cast-iron or nonstick skillet and heat over medium-high heat until the oil starts to shimmer. Add 6 dumplings with the sealed edges lying flat in the pan, spacing them 1 inch apart, then slowly pour in just enough of the slurry to come one-third of the way up the dumplings. Partially cover the pan, leaving a small gap for steam to escape.
  • Increase the heat to high and cook for 2 minutes for cast iron (1 minute for nonstick). Lower the heat to medium for 2 minutes for cast iron (3 minutes for nonstick). Then lower the heat to low for 2 to 3 minutes for cast iron (3 minutes for nonstick).
  • Cook until the water has evaporated, leaving a paper-thin disk of golden-brown starch on the bottom of the pan. Remove from the heat and slide a thin, flexible spatula around the rim of the pan to loosen the edges of the starch disk, then carefully slide the spatula underneath and flip the disk onto a plate in one piece, crispy side up. Serve immediately, then clean the skillet and repeat with the remaining dumplings.

Number Of Ingredients 25

1/4 cup tomato paste
1 tablespoon white balsamic vinegar
1 tablespoon extra-virgin olive oil
1 1/2 teaspoons ground cumin
1/4 teaspoon ground turmeric
1/4 teaspoon paprika
Pinch of cayenne pepper
Pinch of sugar
Kosher salt and freshly ground black pepper
3 cups unbleached all-purpose flour
1/3 cup extra-virgin olive oil, plus more for coating
1 1/2 teaspoons kosher salt
1 large egg
2 tablespoons ghee
1 medium onion, finely diced
Kosher salt and freshly ground pepper
3 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground sumac
1 pound ground lamb
1/4 cup golden raisins
1/4 cup toasted pine nuts, roughly chopped
1/4 cup finely chopped fresh mint
1 quart safflower oil, for frying

Steps:

  • Make the chile sauce: In a small saucepan over medium heat, whisk to combine tomato paste, vinegar, oil, cumin, turmeric, paprika, cayenne, sugar, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 cup water. Bring mixture to a boil, reduce to a simmer, and cook until thickened and reduced by one-third. Season with salt and black pepper. Sauce may be served warm, room temperature, or chilled.
  • Make the dough: In a large bowl, stir to combine flour, oil, salt, egg, and 3/4 cup water. Turn dough out onto a lightly floured surface and knead until soft and slightly sticky, about 10 minutes.
  • Divide dough into 32 equal pieces. Lightly coat a rimmed baking sheet and your hands with oil. Working with one piece of dough at a time, use your hands to roll into a ball. Transfer to baking sheet, then repeat process with remaining dough. Drizzle balls with additional oil, cover with plastic wrap or a kitchen towel, and let rest at room temperature for 3 hours.
  • Make the filling: Melt ghee in a medium skillet over medium. Add onion and cook, stirring often, until just softened, 8 to 10 minutes.
  • Add garlic, cumin, coriander, and sumac and cook until fragrant. Add lamb and cook, stirring often, until meat is browned and cooked through, about 8 minutes. Season with salt and pepper and stir in raisins and pine nuts. Remove from heat and let cool slightly; stir in mint. Let cool to room temperature.
  • Working with one ball of dough at a time, place ball on surface and use your fingertips to flatten into a 4-inch round. Place 1 heaping tablespoon lamb filling into the center of the round. Fold dough over filling to enclose, forming a half moon. Pinch edges together, crimping to tightly seal. Repeat process with remaining dough and filling.
  • Heat oil in a medium heavy-bottomed pot until a deep-fry thermometer reaches 350 degrees. Working in batches, fry dumplings until crisp and golden all over, 4 to 5 minutes. Transfer to a paper towel-lined baking sheet; let drain. Serve dumplings warm with chile sauce.

2 Tbsp four
Salt & pepper
Dash of Cayenne
2 Tbsp Olive oil
2 cooking onions, chopped
3 shallots, chopped
2 Tbsp tomato paste

Dumplings:
1 1/2 C Flour
2 tsp baking powder

1/2 tsp dried rosemary, well minced

3/4 C water (approx)

Steps:

  • Trim fat and grisle off lamb cubes. Mix flour with salt, pepper & cayenne, toss with lamb, and pat off excess. In a large pot, heat olive oil over high heat and brown meat on all sides. Work in batches, so as not to crowd the pot. Once all meat is browned, return to pot, and reduce heat to medium. Add onions and shallots, and let sweat for several minutes. Add tomato paste and sugar, and stir in the water, scraping up brown bits. Cook for 5 mins, then add the wine, stir, and bring to a boil. Taste for seasoning and adjust salt, pepper or sugar as needed. Reduce heat to low, cover and simmer for 2 hours, stirring about every 20 mins. After 2 hours, add carrots and frozen peas and cook for 10 minutes. If stew gets dry, add more water. Meanwhile, in a bowl, mix together flour, baking powder, salt, pepper and rosemary. Add the shortening, mixing with a fork or pastry blender until grainy. Add water slowly, mixing until dough is light but solid and can be dropped from a soup spoon. Remove pot lid and stir. Using a wet soup spoon, drop scoops of dumpling dough into stew, working from the perimiter inwards. Do not stir again! Cover pot and allow dumplings to cook for 20 minutes. Serve immediately.

  • Add the onion and leeks. Once softened add the vegetables, pearl barley, garlic, herbs and the stock

  • To Make the DUMPLINGS
  • Mix the flour and suet and season to taste

  • Divide into 8 - 12 dumplings (depending on how big you like them!) and roll into balls with floured hands
