BAKED LAMB
Steps:
- Heat olive oil in a large saute pan over medium heat. Add the onion and garlic and cook until golden brown, 4 to 5 minutes. Add the lamb shanks and sear until browned, 5 to 7 minutes. Add the red wine, salt and pepper, sugar, cloves, bay leaves and cinnamon sticks. Stir all the ingredients together. Add the fresh tomatoes, tomato puree, tomato paste and 2 cups water. Stir well. Cover and let simmer on medium-low heat until the lamb is tender, 2 to 2 1/2 hours.
LAMB BAKED IN PARCHMENT
Steps:
- In a large bowl combine lamb cubes, olive oil, lemon juice, garlic, oregano, thyme and salt and pepper. Toss well. Cover and marinate at room temp for1 hour or refrigerate for up to 3 hours. If chilled, bring back to room temp before baking. Preheat oven to 350. Divide meat among four 18 by 18 inch pieces of parchment paper. Divide cheese among parcels and top each with 2 tomato and lemon slices. Bring up sides on parchment paper and fold to form a closed package. Place parcels in a shallow baking pan and sprinkle with a little water. Bake for 2 hours, remove from oven and serve. Take care when opening packages, they will be very hot.

- Preheat oven to 350 degrees.
- Cut lamb in 4 to 5 inch servings. Place each piece on a square of heavy-duty foil. arrange on each piece of lamb on each of 2 onions,cheese, carrots, celery and potatoes.
- Sprinkle small amount of lemon juice on each serving. Sprinkle with salt and pepper.
- Foil like a package to seal in all of the flavor.
- Arrange packages close together in baking pan. Bake for 2 hours and 30 minutes.
- Serve a foil package to each person.

- Preheat oven to 375°. In a Dutch oven, heat oil over medium heat. Add lamb and onion; cook and stir until meat is no longer pink. Stir in flour until blended. Gradually add broth. Bring to a boil; cook until thickened, 1-2 minutes, stirring to loosen browned bits from pan. Add carrots, leeks, 1 Tbls. parsley, rosemary, salt, pepper and thyme. , Spoon into a greased 13x9-in. or 3-qt. baking dish. Cover with potato slices; brush with 2 tablespoons melted butter.
