4 tablespoons water
2 tablespoons flaxseed meal
1 cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
4 tablespoons brewers' yeast
1 teaspoon baking soda
1 teaspoon salt
3 cups oats
1 cup chocolate chips
2 tablespoons honey

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Stir water and flaxseed meal together in a small bowl. Let stand until thickened, about 5 minutes.
  • Mix butter, brown sugar, and white sugar together in a large bowl until creamy. Add eggs and mix well. Add flax mixture and vanilla extract and mix well.
  • Stir flour, yeast, baking soda, and salt together in a bowl. Mix into the butter mixture and stir well. Stir in oats, chocolate chips, and honey. Spoon cookie dough onto a baking sheet.
  • Bake in the preheated oven until edges are golden, 12 to 15 minutes.

1 cup peanut butter
½ cup honey
2 cups rolled oats

Steps:

  • Line a baking sheet with waxed paper.
  • Mix peanut butter and honey together in a microwave-safe bowl. Heat in the microwave in 20-second increments until the mixture starts to dry out and become fragrant, about 2 minutes total time.
  • Stir oats into peanut butter mixture. Scoop onto the prepared baking sheet using a big scoop; flatten cookies with a fork or the back of a spoon. Place baking sheet in the freezer until cookies are completely firm and cool, 15 to 20 minutes.

I found myself eating Noel Trujillo's Chocolate Chip Lactation Cookies so much that I figured I'd better find a way to add a little protein to them. The recipe below was developed by combining aspects of many of my favorite cookies.

Number Of Ingredients 12

6 large eggs
2 cups brown sugar
2 cups white sugar
1 1/2 teaspoons vanilla
8 tablespoons flax seed meal, soaked in 8 tsp of water
4 teaspoons baking soda
7/8 cup butter, softened
8 tablespoons brewer's yeast
3 cups peanut butter
8 1/2 cups oatmeal
1 1/2 cups plain M&M's
1 1/2 cups chocolate chips

Steps:

  • Preheat oven to 350°F.
  • In very large bowl, use mixer to combine first nine ingredients--eggs through peanut butter.
  • Add oatmeal, candy, and chocolate chips and mix thoroughly.
  • If dough is too sticky add another 1/2 to 1 cup oatmeal.
  • Scoop large tablespoon-sized balls and place on cookie sheet.
  • Bake at 350°F for 12-15 minutes. If using two racks, switch top to bottom and bottom to top about halfway through.

3 cups old-fashioned oats
1 cup whole wheat flour
3/4 cup all-purpose flour
5 Tbsp. brewer's yeast powder
1/4 cup ground flaxseed
3 Tbsp. white chia seeds
1 tsp. ground cinnamon
1/2 tsp. aluminum-free baking powder
1/2 tsp. baking soda
1/4 tsp. fine sea salt
1 1/4 cups sugar
6 Tbsp. virgin coconut oil, melted, cooled slightly
6 Tbsp. unsalted butter, room temperature
2 large eggs
2 1/2 tsp. vanilla extract
6 Tbsp. unsweetened applesauce
1 1/2 cups semisweet chocolate chips
3/4 cup dried cranberries (optional)
3/4 cup unsweetened coconut flakes (optional)
Nonstick vegetable oil spray
Flaky sea salt

Steps:

  • Mix oats, whole wheat flour, all-purpose flour, yeast powder, flaxseed, chia seeds, cinnamon, baking powder, baking soda, and 1/4 tsp. fine sea salt in a large bowl.
  • Using an electric mixer on medium speed, beat sugar, coconut oil, and butter in another large bowl, scraping down sides as needed, until fluffy, about 5 minutes. Add eggs and vanilla and beat until incorporated, about 4 minutes. Add applesauce and beat for just a few seconds (it will break the mixture slightly and look lumpy; that's okay).
  • Reduce mixer speed to low. Gradually add dry ingredients and beat just to combine. Using a wooden spoon, stir in chocolate chips, cranberries, and coconut flakes (if using). Chill dough at least 1 hour and up to overnight.
  • Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper. Coat parchment with nonstick spray.
  • Using a 1/4-cup (2.5-oz.) scoop, portion dough on prepared baking sheet, spacing 1"-2" apart (you'll get 6 per sheet). Flatten top of each cookie with your hand, then season lightly with flaky sea salt. Bake cookies until golden brown, 12-14 minutes.
  • Let cookies cool on baking sheets about 5 minutes, then transfer to a wire rack and let cool completely (if moved immediately, they will crack and start to break apart). Repeat with remaining dough.
  • Do Ahead: Cookies can be made 5 days ahead. Store in an airtight container at room temperature, or place in a freezer-safe bag and freeze up to 1 month. Reheat by microwaving on low about 1 minute.

2 -4 tablespoons brewer's yeast

Steps:

  • Mix the flaxseed meal and water and let sit for 3-5 minutes.
  • Beat butter, sugar, and brown sugar well.

  • Add flaxseed mix and vanilla, beat well.

2 TBSP flaxseed meal
2 large eggs
1 tsp vanilla
2 cups flour ( i use ww or white with wheat bran usually)
1 tsp baking soda
1 tsp salt ( i usually half this, especially if i am not using unsalted butter)
3 cups oats
1 cup choc chips
2 TBSP brewers yeast ( i had to look in a natural food store for this...or bulk food store.)

Steps:

  • preheat oven to 350 degrees F. mix flax meal and water, set aside. cream butter and sugars. add eggs and vanilla and flax. mix well. sift dry ingredients, excluding chips and oats ( i never do ) and add to mix. add chips and oats last and stir til combined, not too much. 8-10 mins in oven to cook. yummy and boobylicious.
