EASY SOUTHERN BANANA PUDDING CAKE



Easy Southern Banana Pudding Cake image

This is a delicious twist on a classic Southern dessert.

Number Of Ingredients 24

1 box of vanilla cake mix (use the dry mix only and replace the back of the box of cake mix ingredients with:)
1 cup (128g) flour
½ cup (104g) sugar
½ teaspoon salt
4 eggs
1 cup (236ml) water
¾ cup (177ml) vegetable oil
1 cup (240g) sour cream
2 teaspoons vanilla extract
5.1 ounces (1 box) banana instant pudding
1 cup (120g) cool whip whipped topping
1 ¼ cup (350ml) milk
5.1 ounces (1 box) vanilla instant pudding
3 bananas (sliced)
2 tablespoons sweetened condensed milk
2 tablespoons milk
6 large egg whites
2 tablespoons heavy whipping cream
6 cups (750g) powdered sugar
2 cups (453.6g) butter (at room temperature)
1 teaspoon vanilla extract or vanilla beans ((I used the caviar from vanilla beans, as it adds pretty speckles in the frosting))
2 teaspoons lemon juice
Pinch of salt
vanilla wafers, crushed (for garnish)

Steps:

  • Preheat oven to 325 F / 162 C. Prepare three 8-inch round cake pans by cutting out parchment paper to line the inside of each pan and greasing the sides. Set aside.
  • Mix cake ingredients together until combined. Divide mix equally into the 3 pans and bake for 30-40 minutes or until golden brown.
  • While cake is baking, whisk the filling ingredients together and then refrigerate until needed.
  • Next, make the frosting by adding butter and sugar one cup at a time to a mixing bowl and cream together. Then add egg whites, whipping cream, vanilla beans (if using) or vanilla extract, salt, and lemon juice. Continue beating until fluffy and then set aside.
  • When the cakes are done, place them on a cooling rack for 10 minutes then turn over and let them continue to cool face down. When cool remove the parchment paper.
  • Place vanilla wafers in a zip lock bag and crush with a rolling pin, then set aside to use as garnish when frosting the cake.
  • Place one cake on a cake plate and begin to create the filling layers as follows:step 1: use a pastry brush to coat the top of the cake with a thin layer of milk brush mixture.step 2: add a layer of vanilla wafer cookies.step 3: spoon on and smooth out a layer of pudding filling.step 4: add one layer of banana slices. Place the second cake on top and then repeat the four layering steps. Then top with the third cake round, leaving it dry and ready to frost.
  • Frost the entire cake evenly and then pat with crushed vanilla wafers along the bottom 3" of cake and the top of the cake. Create dollops of frosting along the top edge using a piping bag.

2 box(es) jello brand instant banana pudding
2 box(es) jello brand instant vanilla pudding
1 quart(s) heavy whipping cream
1/2 teaspoon(s) mccormick's natural vanilla extract
2 can(s) bordens sweetened condensed milk
4 - banana
2 box(es) nabisco vanilla waffers
2 large cool whip

Steps:

  • Make pudding according to package replacing the milk with 1/2 sweetened condensed milk and 1/2 heavy whipping cream, mix until smooth
  • add 2 bananas and vanilla extract and mix until pudding has stiffened
  • take a large foil pan that is about 4 inches deep and line with waffers.
  • crush one box of waffers into small bits of cookies & save for layering
  • slice 2 banana into thin coin slices and set aside for layering
  • Lay down a layer of banana pudding
  • smooth a layer of cool whip
  • sprinkle with cookie crumbs
  • drop a layer of coin size banana
  • repeat steps 6-9 making sure to finish the final layer with with remaining uncrushed cookies and bananas
  • Sprinkle the remaining cookie crumbs on the finished pudding for garnish
  • Refrigerate for an hour and serve

1 package (5.1 ounces) instant vanilla pudding mix
1 medium firm banana, sliced
1 cup sliced fresh strawberries
1 can (8 ounces) crushed pineapple, drained
1 carton (8 ounces) frozen whipped topping, thawed
1/4 cup chocolate syrup
1/4 cup chopped pecans
Additional sliced strawberries and bananas, optional

Steps:

  • In a large bowl, whisk milk and pudding mix for 2 minutes. Let set for two minutes or until soft-set. Add the banana, strawberries and pineapple., Transfer to a large serving bowl. Dollop with whipped topping. Drizzle with chocolate syrup; sprinkle with pecans. Top with additional strawberries and bananas if desired.

1 package yellow cake mix
3 large eggs, room temperature
1/2 cup vegetable oil
1/4 cup 2% milk
1 teaspoon vanilla extract
2 cups mashed ripe bananas
1 package (12 ounces) vanilla wafers
FILLING:
1 cup cold 2% milk
1 package (3.4 ounces) instant banana cream pudding mix
WHIPPED CREAM FROSTING:
1-1/2 cups heavy whipping cream
1/4 cup confectioners' sugar
Sliced ripe bananas, optional

Steps:

  • Preheat oven to 350°. Line bottoms of 2 greased 9-in. round baking pans with parchment; grease paper. Combine the first 5 ingredients; beat on low speed until moistened, about 30 seconds. Beat on medium for 2 minutes; stir in mashed banana. Spread 1/2 cup batter into each prepared pan. Arrange 2 cups vanilla wafers on batter (1 cup per pan), flat side up. Gently spread remaining batter over wafers. Bake until a toothpick inserted in the center comes out clean, 15-20 minutes. Cool in pans 10 minutes before removing from pans to wire racks to cool completely., Whisk milk and pudding mix 2 minutes. Let stand until soft-set, 2 minutes. 2 cups graham cracker crumbs
1/2 cup butter, melted
5.1 oz box of vanilla instant pudding
2 cups of milk
8 oz. cream cheese, softened
14 oz. can of sweetened condensed milk
8 oz. whipped topping
4 bananas, sliced
1/2 a pint of fresh strawberries, thinly sliced
8 oz. of chopped fresh pineapple (about 1 1/2 cups)
8 oz. whipped topping
1/2 cup chopped peanuts or mixed nuts
maraschino cherries
chocolate fudge topping

Steps:

  • Mix graham cracker crumbs and melted butter in a bowl. Press the mixture into a deep 9x13 casserole dish. Set aside.
  • In a medium-sized bowl, whisk together the milk with pudding and set aside.
  • In a large bowl, add the cream cheese and condensed milk, and use a hand mixer for a minute until smooth. Add in the pudding and mix for 30 seconds until smooth. Fold in 8 oz. of whipped topping.
  • Slice bananas, strawberries, and pineapple into bite-sized pieces.
  • To the graham cracker crust, add half of the fruit and lay it out evenly.
  • Add the pudding mixture, and smooth it out. Then add the remaining sliced fruit in a layer.
  • Spread 8 oz. of whipped topping over the top using a knife, and sprinkle nuts over the top. Drain the juice from maraschino cherries, and add to the top of the dessert. Also, top with chocolate fudge if desired.
  • Refrigerate for a few hours to firm up, then serve. Store leftovers in the refrigerator.

  • Make a box of instant vanilla pudding. Cut a loaf of pound cake into 1/4-inch-thick slices. Arrange half of the slices in a 7-by-11-inch baking dish, then press 20 vanilla wafers into the cake. Make fake tomato sauce: Mix 3/4 cup strawberry jam with 5 crushed Oreo cookies and dollop half of the mixture over the wafers. Sweeten 3/4 cup ricotta cheese with 2 teaspoons sugar; dollop half over the jam. Top with 1 sliced banana and half of the pudding. Repeat with the remaining cake, 20 more wafers, the remaining jam and ricotta mixtures, another sliced banana and the remaining pudding. 2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
2 cups cold milk
2 cups thawed COOL WHIP Whipped Topping, divided
1 cup chopped pecans

Steps:

  • Combine graham crumbs, 1/4 cup sugar and butter; press onto bottom of 13x9-inch pan. Freeze 10 min.
  • Beat cream cheese and remaining sugar with mixer until blended. Spread carefully over crust; top with pineapple. Slice 4 bananas; arrange over pineapple.
  • Beat pudding mixes and milk with whisk 2 min. Stir in 1 cup COOL WHIP; spread over banana layer in pan. Top with remaining COOL WHIP. Refrigerate 5 hours.
  • Slice remaining bananas just before serving; arrange over dessert. Top with nuts.
