BACON WRAPPED CHEESY STUFFED JALAPEñOS
Halved jalapeños stuffed with cream cheese, shredded cheese, paprika, and garlic and wrapped up with crispy bacon. If you like spicy, you will love these!

- Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper (best for clean-up) or a silicone baking mat. Place a baking rack on top of the baking sheet. Set aside.
- Cut the jalapeño peppers in half lengthwise; remove seeds and center membrane. Set aside.
- Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese, cheddar cheese, garlic, and paprika together until combined. You could also do this by hand using a rubber spatula. Salt to taste - I add just a pinch. Spoon filling equally among all 24 jalapeño halves.
- Wrap each stuffed jalapeño with a half slice of bacon and stick a toothpick through the center to assure the bacon stays in place. Place each on the baking rack and bake for 25-28 minutes or until the bacon is crisp to your liking. I like to turn the oven to broil for the last minute or two to get things extra crispy. Serve immediately. Cover leftovers and keep in the refrigerator for up to 4 days.

- In 8-inch skillet, cook bacon over medium-high heat until crisp. Remove from skillet to paper towel. Add chile to bacon drippings in skillet; cook and stir 1 to 2 minutes. Place chile on paper towel.
- Spread butter on both sides of each slice of bread. Top each of 4 bread slices with layer of cheese, chopped chile, 2 slices of bacon and another layer of cheese. Cover each with second slice of bread.
- Heat 12-inch nonstick skillet over medium-high heat. Cook sandwiches until bread is browned and cheese begins to melt. Turn sandwiches; cook until cheese is completely melted.

- 1. To a medium bowl add 1 - 8oz. package of room temp. cream cheese and cream with a potato masher or mixer. Add 1 cup of grated extra sharp cheddar cheese, 1/2 tsp. dried cilantro, 1/4 tsp. salt, and 1/8 tsp. black pepper. Mix with spoon or spatula. Set aside.
- 2. Wear gloves and eye protection ! Wash and dry jalapenos. Slit pepper lengthwise then make small cut crossways at top, making a "T".
- 3. Using a spoon start at the top and push spoon in firmly. In a downward motion rake to remove seeds and veins.
- 4. Make sure it's clean of all seeds and veins.
- 5. Stuff with cheese mixture then squeeze together. Wipe off excess with spoon .
- 6. Starting at the small end ,
- 7. overlap bacon towards the top .
- 8. Secure with a toothpick at the top .
- 9. Heat grill to 275 degrees (don't forget to spray grates !) Grill peppers for 12 minutes, raising lid to turn every 2-3 minutes. Makes approx. 1 dozen

LA VICTORIA GRILLED BACON & CHEESE STUFFED JALAPEñO BITES
Steps:
- Cut each jalapeño in half lengthwise and scrape out seeds and veins. Place each pepper cut side up on work surface. If necessary, trim bottom of pepper using sharp paring knife to ensure that pepper sits flat.
- In mixing bowl, stir to combine LA VICTORIA® SUPREMA® Salsa, cream cheese and shredded cheese. In another bowl, stir to combine breadcrumbs and bacon. Stuff each jalapeño half with 1 tablespoon of cheese mixture. Sprinkle tops of stuffed peppers with breadcrumb mixture.
- Grill stuffed jalapeños, cut side up, over medium-high heat 5 minutes or until jalapeños are tender and cheese is melted. Serve hot.
