Steps:
- Add spinach to a large salad bowl.
- Add raspberries, strawberries, avocado, jicama, feta cheese, and pears. Add 1/8th of a cup dressing and toss- add in remaning dressing tablespoon by tablespoon and toss until dressing is coated as desired (this helps make sure your salad is not overdressed).
- Serve immediately. *If making ahead of time, reserve salad dressing until ready to serve. We also recommend waiting to add toppings until close to serve time to preserve freshness.

POPPY SEED SALAD
Mandarin oranges add the color and the dressing adds the zing to this mixture of greens. You can use spinach or iceberg lettuce in place of romaine, or use a combination of any of them.

- Mix lettuce, oranges, green onions, and almonds in a large mixing bowl.
- Blend sugar, vinegar, salt, and mustard in a blender. Stream oil into the dressing while blending. Continue to blend until the dressing emulsifies. Add poppy seeds and blend briefly to mix. Drizzle dressing over the salad and toss to coat.

POPPY-SEED POTATO SALAD

- Cook 3 pounds sliced red potatoes in salted simmering water, about 8 minutes. Drain, then toss with 1/4 cup each chicken broth and white wine; let sit 5 minutes. Whisk 1/3 cup white wine vinegar, 3 tablespoons dijon mustard, 1 tablespoon poppy seeds and a pinch of sugar in a bowl; whisk in 1/2 cup olive oil, and salt and pepper. Toss with the potatoes, then chill 2 hours. Top with chives.

KOOL POPPY SEED SUMMER SALAD
We love, love, love this salad. The dressing is the real star here, with an awesomely delicious flavor. Linda calls for canned chicken in her recipe, but we like using leftover rotisserie chicken instead. Either way is terrific!

- 1. Layer lettuce, chicken, strawberries, oranges, cucumbers, nuts, then red onion unto 3-4 serving plates. Set aside. Mix and shake oil, lemon juice, mustard, sugar, salt and poppy seeds. Drizzle on each salad to taste. Top with shredded Swiss Cheese.
- 2. Serve with crusty Italian Bread; be sure you have enough to dip in the remaining dressing/just cannot resist!
