This is an Afrikaner recipe for Koeksisters (cake sister) or South African donuts. These are loosely based on a similar Dutch pastry.

3 cups white sugar
2 cups water
3 1/4-inch-thick slices peeled fresh ginger
½ lemon, zested in large strips
1 teaspoon lemon juice
2 cups cake flour
1 tablespoon baking powder
¼ teaspoon salt
2 tablespoons cold unsalted butter, cut into chunks
½ cup milk
2 cups oil, or as needed

Steps:

  • Combine sugar, water, ginger, lemon zest, and lemon juice together in a saucepan; bring to a boil, reduce heat to medium, and cook for 10 minutes. Cool syrup to room temperature, transfer to a container, and refrigerate until flavors blend, 8 hours to overnight.
  • Sift flour, baking powder, and salt together in a bowl. Rub the butter into the flour mixture with your fingertips until mixture has a cornmeal texture. Add the milk; mix until a smooth dough forms. Wrap the dough in plastic wrap and let it rest for 2 hours.
  • Turn the dough out onto a lightly floured work surface and roll into a 5x14-inch rectangle about 1/4-inch thick. Cut the dough into twenty eight 1/2-inch wide strips. Twist pairs of strips together and pinch the ends together. Repeat for all of the strips. Cover strips with a clean cloth and let rest for 15 minutes.
  • Heat about 2-inches of oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Place a wire rack over a baking sheet.
  • Pour some of the cold syrup into a bowl and return remaining syrup to the refrigerator.
  • Working in batches, fry koeksister twists in hot oil until twists swell and are golden brown, 2 to 5 minutes. Remove koeksisters from hot oil with a slotted spoon and immediately immerse in cold syrup for 10 seconds. Transfer soaked koeksisters to prepared wire rack to cool. Replenish cold syrup as necessary.

A very sticky South African sweet. They remind me of a donut, but maybe messier. ;) I got this recipe from my South African friend, Sheralee. She says to try to eat a few before the family gets home because once they get stuck into them, you "ain't gonna get none!"

250 ml water (1 cup)
625 ml white sugar (2 1/2 cups)
12 1/2 ml lemon juice (2 1/2 tsp.)
5 ml vanilla essence (1 tsp.)
375 ml cake flour (1 1/2 cups)
22 ml baking powder (4 1/2 tsp.)
1 ml salt (1/4 tsp.)
20 g butter or 20 g margarine
150 ml milk (the vanilla soy milk gives added flavor, 5/8 cup) or 150 ml vanilla-flavored soymilk (the vanilla soy milk gives added flavor, 5/8 cup)
750 ml canola oil (3 cups)

Steps:

  • Put the water and sugar in a ot and bring to boil on low heat. Stir frequently until the sugar is completely dissolved. Boil for 7 minutes.
  • Remove the pot from the stove and stir in the lemon juice and vanilla essence. Put the pot into the fridge.
  • Mix the flour, salt, and baking powder thoroughly in a mixing bowl. Break the butter or margarine into small pieces and add to the four mixture. Add the milk. Mix well until a dough is formed.
  • Roll the dough out to a thickness of 5 mm (+ or - 1/4 in.). Cut the dough into thin (+ or - 10 mm or 1/2 in.) strips. Take 3 strips and join their ends on one side. Braid the strips to desired koeksister length and join other ends.
  • Heat the oil in a pot until fairly hot. Put about 3 koeksisters (or what can fit)at a time in the oil and fry them on both sides until they get a golden-brown color. As you remove the koeksisters for the oil, place them directly ito the syrup from the fridge. It is important to keep the syrup cool, so between soakings, return the syrup to the fridge to maintain its coolness.
  • Remove the koeksisters from the syrup and allow the excess syrup to drip off. Place them in the refrigerator to cool and then eat!

This is a traditional South African dessert. These very addictive treats are not for people who are conscious of weight or sugar intake! These freeze fantastically well and are thus a great lifesaver for when unexpected company arrive. Time to make does not include overnight chilling time.

5 cups flour
5 teaspoons baking powder
2 cups milk
3 eggs
1/2 teaspoon salt
5 teaspoons butter
12 cups sugar
6 cups water
1 1/2 teaspoons citric acid (original recipe says tartaric acid)
oil (for frying)

Steps:

  • Dough:.
  • Rub butter into flour, baking powder, salt.
  • Beat eggs and milk and then mix into above.
  • Place dough in ziplock bag and refrigerate overnight.
  • Syrup:.
  • Bring all ingredients to boil stirring all the time and boil for 5 minutes.
  • Cool down.
  • Store in fridge overnight - must be well chilled.
  • Making and assembling:.
  • Roll dough out 1/4 inch thick and cut strips 1 inch wide and 2 1/2 inches long.
  • Take ends of dough and twist and seal off ends by pressing together.
  • Fry in hot deep oil.
  • Dunk instantly into ice cold syrup.

This recipe was given to me by my South African cousin a long, long time ago. They are delicious little fritters (atleast the way she makes them) that are soaked in a spicy syrup. We have them with tea.

500 g cake flour
2 ml salt
20 ml baking powder
125 g butter
2 eggs, beaten
milk
oil (for deep frying)
750 g sugar
375 ml water
2 cinnamon sticks
4 whole cloves
2 inches ginger, peeled

Steps:

  • Prepare syrup the day before making the koeksisters and chill thoroughly.
  • Dissolve sugar in water over medium heat.
  • Add spices and knob of ginger.
  • Boil together for 10 minutes.
  • Sift flour, salt and baking powder into a bowl.
  • Rub in butter finely, add beaten eggs with enough milk to blend into a stiff dough.
  • Chill dough in refrigerator for 30 minutes.
  • Roll out to 5 mm (1/4 inch?) thick and cut into strips approximately 70 x 30 mm (3 x 1 inches).
  • With a sharp knife, cut each strip into 3 smaller ones, leaving them attached at one end.
  • Plait (braid) loosely and pinch ends to secure.
  • Drop a few at a time into hot oil.
  • Cook until lightly-browned and puffed.
  • Lift out and drain for just 1 minute of crumpled paper towels, then drop at once into chilled syrup.
  • Soak in syrup, lift out and drain in a sieve until dry.
  • Note: I'm sure my cousin got a larger yield than this, she made hers very small and dainty.
  • You can make them the size that suits your needs and aesthetics.
  • I like them small and dainty, but that's the only way I've ever had them.

375 ml water
800 g sugar
2 ml cream of tartar
2 ml ground ginger
3 cinnamon sticks
500 g cake flour
30 ml baking powder
2 ml salt
50 ml butter
2 eggs
250 ml milk
oil (for deep frying)

Steps:

  • First make syrup. Heat water in saucepan, add sugar and stir until dissolved.
  • Add cream of tartar, ginger and cinamon.
  • Boil uncovered for 5 minutes. Do not stir.
  • Remove from stove and chill.
  • While syrup is chilling, make the koeksisters.
  • Sift flour, baking powder and salt together.
  • Add butter and rub it in with fingertips until mixture resembles fine crumbs.
  • Beat eggs and milk together and add to dry ingredients.
  • Mix dough well then knead lightly for 2 minutes to make it pliable.
  • Cover basin with wax paper and leave for 1 hour.
  • Roll out dough to 1cm thick.
  • Cut strips (rectangles) 8cm x 4 cm, then make 2 vertical cuts in each strip, starting 5mm from the top and cutting down right to the bottom.
  • Plait strips loosely and secure at loose end.
  • Heat oil to 190C and deep-fry koeksisters for 1 minute. Not too many at once.
  • Remove from oil and drain on paper towel for 1 minute and then dip in syrup for until soaked (1 minute).
  • Remove from syrup and place on dish to dry.
