8 medium kiwifruit, peeled, divided
3/4 cup sugar
3/4 cup lemon juice
1 liter carbonated water, chilled

Steps:

  • Slice two kiwi into small pieces. Place in ice cube trays and fill with water. Freeze., Cut remaining kiwi into large pieces; place in a food processor. Cover and process until smooth. Strain; discard pulp. In a 2-qt. pitcher, stir sugar and lemon juice until sugar is dissolved. Stir in kiwi puree. Refrigerate until chilled. Just before serving, stir in carbonated water. Serve over kiwi ice cubes.

A refreshing lightened-up cocktail recipe made with fresh kiwi fruit, agave nectar, rum, and club soda

4 mint leaves (muddled )
1 lime (quartered)
2 tbsp raw sugar (for the rim)
2 kiwis (peeled and sliced)
1 tbsp agave nectar
2 oz white rum
ice
4 oz club soda
*optional garnishes (extra sliced kiwi, lime, and extra sprigs of fresh mint)

Steps:

  • Rinse and pat mint leaves dry. Muddle the mint leaves to release the oils using a mortar and pestle, or you can do it directly in the cocktail shaker with the back of a wooden spoon. Just gently press down on the leaves (you don't want mint mush).
  • In a mini food processor, puree the two peeled and chopped kiwis and agave nectar.
  • Next, use one of the lime slices to run along the rim of two glasses. Pour the raw sugar in a shallow bowl and dip the rim of the glasses to coat with the sugar and fill with ice.
  • Pour the kiwi mixture, 2 oz light rum, 1 oz fresh lime juice (2-3 of the quarters squeezed, depending on the size of the lime), and muddled mint in a cocktail shaker. Shake vigorously and pour into the two prepared low ball glasses.
  • Top each glass with 2 oz of club soda and stir to mix. Garnish with extra kiwi, lime, and mint leaves.
