KIWI LIME PIE

14 whole graham crackers (the 4-section large pieces)
1/2 cup macadamia nuts
1 stick (8 tablespoons) salted butter, melted
1/3 cup sugar
1 tablespoon lime zest plus 1/2 cup lime juice
2 large egg yolks
One 14-ounce can sweetened condensed milk
1 cup heavy cream, chilled
2 tablespoons sugar
5 kiwis, peeled

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust: Put the graham crackers and most of the macadamia nuts in the bowl of a food processor and process until smooth. Add the butter and sugar and process again to combine. Press into a pie pan and bake until golden and set, about 5 minutes. Set aside to cool slightly while you make the filling.
  • For the filling: In the bowl of a stand mixer, add the lime zest and juice and egg yolks and mix until combined. Add the condensed milk and mix on high until smooth and thick. Pour the mixture into the crust and bake until no longer jiggly, about 15 minutes. Allow to cool, then refrigerate for at least 1 hour, more if possible.
  • For the topping: Pour the cold heavy cream into a clean mixer bowl. Add the sugar and beat on high speed until the whipped cream is very stiff.
  • Slice the kiwis and cover the surface of the cooled pie with the slices. Spread the whipped cream on top. Slice the remaining kiwi slices in half and decorate the top of the pie with them. Chop the remaining macadamia nuts, sprinkle on top and serve.

1/4 cup olive oil
1 lemon, zest of
1 lime, zest of
1/4 cup citrus juice (1/2 lemon and 1/2 lime)
1/2 inch gingerroot, grated
salt
pepper
12 ounces carbonated lemon-lime beverage
1 1/2 cups ketchup
1/4 cup citrus juice (1/2 lemon and 1/2 lime)
1 tablespoon Worcestershire sauce
1 teaspoon chili powder
2 garlic cloves, minced
1 tablespoon olive oil

Steps:

  • Combine ingrediets for your marinade and pour over meat or veggies. Refrigerate for 1 hour or overnight.
  • Heat small saucepan over medium. Add olive oil, garlic, and chili powder. Saute for about one minute. Add remaining ingrediets and combine. Simmer until your desired consistancy is reached.
  • It is up to you how you bring the marinated ingredients and BBQ sauce together. You can use the grill, oven, or stove-top. I personally like to brown my country ribs on all sides then add the finished BBQ sauce to the ribs. I simmer with a lid on until the ribs are done.

This is a very tasty marinade that my aunt brought to the family from Hawaii. It has a teriyaki flavor. We marinate the meat and then grill it on a gas grill.

¾ cup water
¾ cup white sugar
¾ cup soy sauce
1 tablespoon sesame oil
1 clove garlic, minced
2 pinches ground ginger
2 pounds beef short ribs, or more to taste

Steps:

  • Whisk water, sugar, soy sauce, sesame oil, garlic, and ginger together in a large glass or ceramic bowl. Add beef short ribs and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator, 8 hours to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove short ribs from the marinade and discard marinade.
  • Cook short ribs on the grill until evenly browned, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
