Kittencal's Salisbury Steak With Mushrooms and Onion Gravy image

This is total comfort food at it's very best! ---to save time this may also be made using store bought frozen hamburger patties ---the yield amount for this is six if you like lots of gravy then increase amounts to 3 cups beef broth and 6-7 tablespoons flour --- this is a must served with mashed potatoes :)

2 tablespoons oil (more as needed)
2 large onions, thinly sliced
8 ounces sliced fresh white button mushrooms or 1 (10 ounce) can canned mushroom slices, drained
4 tablespoons all-purpose flour (use 5 tablespoons for a thicker gravy)
1 pinch cayenne pepper (to taste, optional, optional) (optional) or 1 pinch crushed red pepper flakes (to taste ) (optional)
2 cups canned low sodium beef broth
2 teaspoons Worcestershire sauce
1/2 teaspoon fresh ground black pepper (or to taste)
1 -2 teaspoon beef bouillon powder (or to taste, add in for a stronger beef flavor) (optional)
1 lb ground beef
1 -2 tablespoon fresh minced garlic
1 large egg
0.5 (2 ounce) package dry onion soup mix (can use one package, do not add in any extra salt to the hamburger mixture)
1 tablespoon Worcestershire sauce
1/4 cup dry breadcrumbs
1/2-1 teaspoon fresh ground black pepper

Steps:

  • In a bowl combine all hamburger mixture until combined.
  • Shape into 6 patties.
  • Heat oil in a large skillet over medium-high heat.
  • Add in hamburger patties, cook until browned on each side (about 3-4 minutes per side, the burgers do not have to be cooked all the way through as they will finish cooking completely in the gravy) remove to a plate.
  • To the same skillet add in sliced onion and mushrooms; cook stirring scraping up any browned bits that have accumulated on the bottom of the skillet; cook for about 8-10 minutes or until the onions are softened (adding in more oil if needed).
  • Add in flour and cayenne pepper; stir for 2 minutes.
  • Add in beef broth, Worcestershire sauce and black pepper; bring to a simmer stirring continuously until bubbly and thickened (at this point you may add in the beef bouillon powder).
  • Add in the patties back to the skillet.
  • Reduce heat to low and simmer uncovered for about 25 minutes turning the patties over once halfway through cooking.

1 pound ground beef
1 large egg, lightly beaten
1/4 onion, finely chopped (about 1/3 cup)
7 saltine crackers, finely crushed (about 1/4 cup)
1 teaspoon minced fresh sage
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter
8 ounces sliced mixed mushrooms
2 teaspoons Worcestershire sauce
3 tablespoons all-purpose flour
2 1/2 cups hot water
1 to 2 tablespoons chopped fresh parsley
Buttered egg noodles, for serving (optional)

Steps:

  • Gently mix the beef, egg, onion, cracker crumbs, sage, 1/2 teaspoon salt and a few grinds of pepper in a large bowl using your hands. Divide into 4 equal portions and shape into oval patties, about 1/2 inch thick.
  • Heat 1 tablespoon butter in a large skillet over medium-high heat. Brown the patties, about 4 minutes per side. Transfer to a plate.
  • Add 1 tablespoon butter to the skillet and cook the mushrooms, stirring occasionally, until slightly browned, about 2 minutes. Stir in the Worcestershire sauce, and salt and pepper to taste, scraping up any browned bits from the bottom of the skillet with a wooden spoon. Sprinkle in the flour and stir, then stir in the hot water and simmer until the sauce begins to thicken, about 2 minutes. Add the remaining 1 tablespoon butter, swirling to combine.
  • Return the patties and any juices from the plate to the skillet. Simmer until the sauce thickens and the patties are cooked through, about 2 minutes. Sprinkle with parsley and season with salt and pepper. Serve with noodles, if desired.

This is total comfort food at it's best, I have been making this for over 20 years and it is still one of my family's favorite meals, a must served with mashed potatoes or fries, this also will work great using pork chops, not the fast fry chops --- this ground beef amount should give you 7-8 fair-sized burgers but will depend on how large you make them, and will also work great using thicker cut pork chops, if desired you may use your own favorite recipe to season the hamburger --- you will need a large skillet for this recipe or your electric fry pan will work great, do not add in any salt to the soup mixture or the burgers the dry onion soup mix is salty enough, I also recommend using low-sodium mushroom soup --- also see my recipe#318998

1 1/2 lbs ground beef
1 -2 tablespoon minced fresh garlic (or use 1 teaspoon garlic powder)
1 large egg, beaten
1/2 of a package dry onion soup mix (can use the whole 2-ounce package)
2 tablespoons Worcestershire sauce
1/4 cup milk
1/2 cup dry breadcrumbs (more if needed to hold the mixture together)
1/2 teaspoon fresh ground black pepper (optional)
1 medium onion, chopped
1 -2 tablespoon fresh minced garlic (optional, I like to add it in)
1 (10 ounce) can sliced mushrooms, drained
2 (10 1/2 ounce) cans low-sodium condensed cream of mushroom soup, undiluted (for more gravy use 3 cans)
1/2 of a package dry onion soup mix (I use Lipton's 2-ounce package)
1/4 cup grated parmesan cheese
2 -4 teaspoons Worcestershire sauce (optional)
1 teaspoon ground black pepper (or to taste)
1/4 cup 18% table cream (to thin if necessary)

Steps:

  • In a bowl mix together all ingredients for the burgers.
  • Shape into desired size patties.
  • Heat 1-2 tablespoons butter in a large heavy skillet over medium-high heat.
  • Brown the burgers for about 4-5 minutes on each side (the burger will be browned on the outside they do not have to be fully cooked as they will cook more in the gravy; remove to a plate.
  • Add in onion and saute for about 3 minutes scraping up the browned bits with a wooden spoon while stirring.
  • Add in fresh garlic and canned mushrooms; cook stirring for 1-2 minutes.
  • In a medium bowl, mix together cream of mushroom soup, 1/2 package dry onion soup mix, grated Parmesan cheese, Worcestershire sauce and black pepper; mix well to combine then add to the skillet and bring to a simmer over medium heat stirring.
  • Reduce heat to low and stir in the cream to thin out the gravy (if you prefer a very thick gravy omit the cream).
  • Place the burgers back then turn to coat with a spoon to coat the burgers with the soup mixture.
  • Simmer uncovered on low heat for 1 hour or even longer (I have simmered this for 2 hours on low heat, stirring occasionally, turning the burgers over a few time during cooking).
  • Serve with or over fries or mashed potatoes.

For perfect results plan ahead the steaks must be brought down to almost room temperature which might take several hours, this recipe works perfectly for beef tenderloin steaks of coarse you may use it for any cut of beef, cooking times stated is for an 8-ounce steak at 1-1/2 inch thick --- I use Montreal Steak Spice for this but freshly ground coarse black pepper will work fine, and you may adjust the black pepper to taste, since salt will draw out the juices from the beef do not salt until after cooking --- since not all cuts of meat are the same, for this method a more tender cut of steak is suggested to use such a strip loin etc.

2 (8 ounce) boneless beef steaks (1-1/2-inch thick)
3 tablespoons vegetable oil
2 teaspoons montreal steak spice (or use freshly ground coarse black pepper)
2 tablespoons butter
salt (to taste, to be added after cooking only) (optional)

Steps:

  • In a bowl combine 3 tablespoons oil with 2 teaspoons steak seasoning or ground black pepper.
  • Rub both steaks with the oil/pepper mixture.
  • Allow the steaks to sit out to almost room temperature (about 1-1/2 to 2 hours).
  • Heat a large heavy skillet over medium-high heat.
  • Quickly sear the meat about 5 seconds on each side; remove from the skillet to a plate.
  • Add 2 tablespoons butter to the hot skillet allow to sizzle and brown, then return the meat to the skillet and fry 4-5 minutes per side (the outside of the steak should be browned and crisp).
  • Remove steaks from the skillet and allow to stand for 5 minutes to allow the juice to settle.

Steps:

  • Mix the beef, bread crumbs, onions, egg, Worcestershire sauce, salt, and pepper with your hands in a medium bowl. Shape into 4 patties, each about 3/4 to 1 inch thick.
  • Melt the butter with the oil in a large skillet over medium-high heat. Add the patties and fry for 4 to 5 minutes on each side. Use a spatula to transfer the patties from the skillet to an oven-proof plate; keep warm.
  • Add the sliced onion and mushrooms to the skillet and saute until the mushrooms give up their juice, about 8 minutes. Stir in the broth, using a wooden spoon to scrape up any browned bits from the bottom of the skillet. Heat to boiling, then reduce the heat, cover, and simmer for 10 minutes.

8 ounces fresh sliced mushrooms (1 package, divided)
½ pound ground beef
½ pound ground turkey
¾ cup onion (diced and divided)
3 Tablespoons tomato paste (divided)
1 egg
½ cup oatmeal (ground in blender)
salt and pepper to taste
14 ounces low sodium beef broth (1 can, divided)
2 Tablespoons flour
2 teaspoons Worcestershire sauce
3 Tablespoons olive oil
20 ounces frozen mashed cauliflower (1 package)
2 Tablespoons fresh parsley (chopped, optional garnish)

Steps:

  • Place 1/2 cup diced mushrooms in a large mixing bowl.
  • Add the ground beef, ground turkey, 1/2 cup diced onion, 2 Tablespoons tomato paste, egg, ground oatmeal, salt, pepper and 1/4 cup beef broth.
  • Mix together well and form into 1 1/2 inch meatballs; set aside.
