GARLIC PITA CHIPS

These are superb with soups and salads or as a simple appetizer. Try experimenting with other toppings such as grated parmesan cheese or grated lemon rind. Taken from the Family Circle Cookbook. The easiest way to apply the egg mixture is if you spoon some in the middle and then use a pastry brush to spread it to the edges of the chip...enjoy!

1 (8 ounce) package whole wheat pita bread
1/2 cup fresh parsley, chopped
2 egg whites, lightly beaten
1/4 cup olive oil
3 garlic cloves, finely chopped
1/2 teaspoon kosher salt

Steps:

  • Preheat oven to 300 degrees.
  • Lightly coat 2 or 3 baking sheets with nonstick cooking spray.
  • Cut each pita into 4 wedges, then gently cut or pull each wedge apart, to form a total of 64 triangles.
  • Combine parsley, egg white, olive oil, garlic and salt in small bowl.
  • Spoon some of the parsley mixture over rough side of each triangle.
  • Place triangles, parsley side up, in single layer on baking sheets.
  • Bake in preheated oven for 15 to 18 minutes or until edges of triangles are toasted and parsley topping is set.
  • Cool chips on baking sheets on wire racks.

They take barely any time to prepare and go great with spinach artichoke dip! Add Italian seasoning, herbs, or Parmesan cheese for a twist!

1 package pita pockets
2 tablespoons olive oil
1 tablespoon garlic powder
1 teaspoon kosher salt
1 teaspoon garlic salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Brush one side of each piece pita pocket with olive oil. Sprinkle the garlic powder, salt, and garlic salt over the pita pockets. Slice each pocket into 4 even triangles.
  • Bake in preheated oven until the triangles turn a light brown color, 15 to 20 minutes.

5 (6 inch) pita bread rounds
1 -2 tablespoon minced fresh garlic (or use about 1 teaspoon garlic powder)
1/4 cup olive oil (can use vegetable oil)
salt
black pepper (optional)

Steps:

  • Split the pita rounds to make 10 rounds.
  • Set oven to 400 degrees F (set oven rack to lowest position).
  • In a small bowl stir the oil with the fresh garlic (or garlic powder) brush lightly over both sides of the rounds.
  • Sprinkle lightly with salt and pepper if desired.
  • Slice each round into 6 wedges (I use a pizza cutter for this) then place on a baking sheet in a single layer.
  • Bake for about 6-8 minutes or until lightly browned and crisp (watch closely these brown fast).

1 medium whole wheat pita bread (about 7" in diameter)
cooking spray
garlic salt (or other seasoning to taste)

Steps:

  • Open pita and fully separate halves.
  • Cut halves in quarters and stack.
  • Cut stack into 5 triangles (this will give you 20 pieces).
  • Place the pita triangles on a cooking sheet and spray triangles lightly with the cooking spray.
  • Sprinkle lightly with seasoning to taste.
  • Bake in 350 degrees oven for about 5- 7 minutes.
  • Chips are done when they start to turn brown on the edges.
