2 tablespoons olive oil
1/2 cup leftover sauteed sliced onions
4 ounces leftover cooked steak, cut into bite-size pieces
1/4 cup roasted red pepper strips
3 to 4 stalks leftover cooked asparagus, cut into 1-inch pieces
2 tablespoons milk
5 large eggs
Kosher salt and freshly ground black pepper
1/2 cup shredded cheese, such as sharp Cheddar, fontina, Gruyere or Monterey Jack

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the olive oil in an 8-inch cast-iron or ovensafe nonstick skillet over medium heat. Add the onions and heat until warm. Add the steak, roasted red peppers and asparagus and heat until warmed through, 1 to 2 minutes, mixing the ingredients in the skillet until evenly distributed.
  • Whisk together the milk and eggs in a medium bowl to combine and add some salt and pepper.
  • Pour the egg mixture into the skillet and top with the cheese. Transfer the skillet to the oven and bake until the frittata is puffed and the eggs are cooked through, about 15 minutes.

8 slices bacon, chopped
8 ounces bulk Italian sausage, casings removed, chopped or crumbled
12 large eggs
3 tablespoons half-and-half
1 cup grated asiago
1 cup grated provolone
Salt and freshly cracked black pepper
Salt and freshly cracked black pepper
3 ounces cream cheese, at room temperature
1/4 cup sour cream
1 1/2 teaspoons Sriracha (or to taste)
1 scallion, minced
4 everything bagels, split and toasted
Atomic Hash Browns, for serving, recipe follows
2 pounds russet potatoes, peeled, coarsely grated on a box grater and squeezed dry in a kitchen towel
1 teaspoon granulated garlic
1 teaspoon paprika
1/4 teaspoon cayenne
Salt and freshly cracked black pepper
2 tablespoons butter
2 tablespoons olive oil

Steps:

  • Adjust an oven rack to the middle position and set the oven to broil.
  • In an ovenproof 12-inch nonstick skillet set over medium heat, add the bacon and cook until just crisp, 4 to 5 minutes. Then set aside. Add the sausage, cooking until well browned and making sure to break it up as it cooks, about 6 minutes. Set the sausage aside with the bacon and discard all but 1 to 2 tablespoons of the pork fat.
  • Whisk the eggs and half-and-half together. Add the egg mixture to the skillet with the pork fat, set it over medium heat and stir the eggs using a rubber spatula, scraping and tilting the pan to slide the egg mixture around the pan. Cook until the bottom is set and the top is still wet and glistening, 2 to 3 minutes. Then add in the cooked meats and cheeses, and season with salt and pepper. Use a spatula and press the ingredients into the eggs.
  • Place in the oven and cook until lightly golden on top and puffed up, 2 to 4 minutes. Then let the frittata rest for 5 minutes before slicing.
  • Combine the cream cheese, sour cream, Sriracha and scallions in a mixing bowl and season with salt and pepper.
  • Slide the frittata onto a cutting board and cut into rounds using a 3 1/2-inch-to-4-inch cookie cutter, depending on the size of your bagel. Place a frittata round on each bagel and top with a generous smear of sauce. Serve with a side of Atomic Hash Browns and some extra sauce for dippin'.
  • Heat a 12-inch nonstick skillet over medium heat.
  • Toss the potatoes with the granulated garlic, paprika, cayenne and some salt and pepper in a medium bowl.
  • Add half of the butter and half of the oil to the skillet. Let melt, and then add the potatoes, pressing them down with a spatula. Cook until crisp and golden brown on one side, 5 to 7 minutes.
  • Set a baking sheet or a large plate over the skillet and carefully invert the potatoes onto the baking sheet. Add the remaining butter and oil to the skillet and slide the potatoes back in, un-cooked side down, and cook until golden and crispy on the second side as well, 4 to 5 minutes.
  • Slide onto a cutting board and cut into wedges to serve.

GUS'S KITCHEN SINK FRITTATA CROISSANT SANDWICH AKA CROISSATA

8 slices bacon, chopped
8 ounces bulk Italian sausage, chopped or crumbled
12 large eggs
3 tablespoons half-and-half
1 cup cubed Asiago cheese (1/2-inch)
1 cup cubed provolone (1/2-inch)
Kosher salt and freshly cracked black pepper
4 fresh croissants, halved and lightly toasted
Giardiniera Chive Cream Cheese, recipe follows
1 Roma tomato, thinly sliced
1/4 cup regular or hot giardiniera
1 cup cream cheese, at room temperature
1 tablespoon minced fresh chives
1 teaspoon honey
Kosher salt and freshly ground black pepper

Steps:

  • Adjust an oven rack to the middle position and set the oven to broil on high.
  • In an ovenproof 12-inch nonstick skillet set over medium heat, add the bacon and cook until just crisp, 4 to 5 minutes. Set aside. Add the sausage to the skillet and cook, breaking it up, until well browned, about 6 minutes. Add the sausage to the bacon, leaving behind the pork fat in the skillet.
  • In a bowl, whisk the eggs and half-and-half together. Add the egg mixture to the skillet with the pork fat and cook over medium heat, stirring with a rubber spatula, scraping and tilting the skillet to slide the egg mixture around the skillet, until the bottom is set and the top is still wet and glistening, 2 to 3 minutes. Add the cooked meats and cheeses and season with salt and pepper. Use a spatula and press the ingredients into the eggs.
  • Place the skillet in the oven and cook until lightly golden on top and puffed up, 2 to 4 minutes. Let the frittata rest for about 5 minutes before slicing. Slide the frittata on a cutting board and cut into wedges roughly the size of each croissant.
  • Schmear the cut side of each croissant half with Giardiniera Chive Cream Cheese. Lay a couple of tomato slices right on there. Place a big wedge of frittata on each croissant. Close up and eat!
  • Using a fork or small mesh sieve, drain the giardiniera from the jar and let most of its oil drip back into the jar. Place the drained giardiniera into a bowl with the softened cream cheese, chives and honey. Season with salt and pepper. Whisk vigorously until light and smooth. Season to taste.

Number Of Ingredients 17

12 inch cast iron skillet
8 extra large eggs
2 oz grated parmesan (reggiano)
2-3 TBL sweet, unsalted butter OR equal amount olive oil
Dash (only a couple teaspoons) half & half or cream
4 oz grated mozzarella cheese (whole milk)
handful baby Bella mushrooms sliced razor thin (a/k/a crimini)
1/2 bell pepper diced (red or orange)
precooked crumbled bacon, diced ham, or sausage (I often use leftovers) to taste (if you don't want the meat, just omit it)
2-3 TBL chopped fresh flat leaf Italian parsley (can do half cilantro if you want)
2 shredded fresh basil leaves.
1/4 - 1/3 cup diced pre-cooked potato (left over)
1 diced scallion
1 diced Italian PLUM tomato (fresh)
salt, pepper to taste
dash sweet paprika
[you can substitute a few leaves chopped fresh spinach, or thin stalked diced baby asparagus for tomato]

Steps:

  • preheat oven to 350 degrees. give the inside of the cast iron pan a quick spray of non stick cooking spray (yes, even if it is seasoned) on stove TOP, put butter or oil in pan and heat up. add your veggies to hot pan & sauté them slightly (maybe a minute and a half). Remove pan from heat & set aside. in a mixing bowl whisk together, eggs, half & half, salt, pepper and grated parmesan cheese. Pour egg mixture over sautéed veggies. Scatter fresh herbs over eggs & veggies in the pan. Scatter diced meat over everything (if you are using meat) Finally, scatter mozzarella as your last "layer" Put everything in the pre-heated oven 350 degree and bake until bubbly and golden on top...with my oven that is generally 20- 26 minutes. when you eyeball it & it is not only bubbling and golden, but eggs look slightly removed from edge of pan, you should be good to go. This is a heavy frittata, so it won't flip out like an omlette. Instead, wedge it like a pie or quiche & serve
