KIM'S ZIPPY SAUCE

This is the famous zip sauce that goes with steak served locally in Detroit. It really brings out the best in beef, and adds a spicy punch to the flavor.

Number Of Ingredients 12

¼ cup butter
1 teaspoon dried rosemary, crushed
¼ teaspoon dried thyme, crushed
¼ teaspoon garlic powder
1 teaspoon dried parsley
1 teaspoon salt
1 tablespoon Dijon mustard
½ teaspoon coarsely ground black pepper
1 ½ tablespoons Worcestershire sauce
¼ teaspoon ground cumin
⅛ teaspoon cayenne pepper
⅓ cup beef drippings

Steps:

  • Melt butter in a small saucepan over medium heat. Stir in the rosemary, thyme, garlic powder, parsley flakes and salt. Mix in the mustard, black pepper, Worcestershire sauce, cumin, and cayenne pepper. Warm gently for about a minute. Mix equal parts of the sauce with beef steak drippings to complete the sauce just before serving.

This is a spicy sweet tomato chow chow that we make in the summertime with our home grown tomatoes. This goes well as a side to peas and other vegetables and also poured over a block of cream cheese as a spread with crackers.

Number Of Ingredients 7

12 cups tomatoes
2 large onions
3 green bell peppers (seeds removed)
5 hot peppers (the seeds and white membranes add heat, your choice to use or remove)
2 cups white vinegar
2 tablespoons salt
1 1/2 cups sugar

Steps:

  • Process all vegetables in a food processor to desired consistency. We like ours to be a bit chunky like salsa.
  • Bring vinegar, salt and sugar to a boil on the stove to dissolve ingredients.
  • Combine everything in a large stock pot.
  • Bring to a boil and then simmer uncovered for 2 hours.
  • Can in pint jars or enjoy immediately.
