1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sour cream
2 cups chopped apples
1/2 cup chopped nuts
1 teaspoon cinnamon
1/2 cup brown sugar
2 teaspoons melted butter

Steps:

  • Preheat oven to 350.
  • Grease a 13 x 9 x 2 baking pan.
  • Cream butter and sugar.
  • Add eggs and vanilla, beat well.
  • Sift together flour, baking soda, baking powder, and salt.
  • Add dry ingredients to the first mixture alternately with 1 cup sour cream.
  • Stir in chopped apples.
  • Spread evenly in greased pan.
  • Mix together ingredients for nut topping.
  • Sprinkle over batter.
  • Bake for 35-40 minutes.

Celebrate seasonal ingredients and bake this easy apple sponge cake. This Polish recipe uses soured cream for a moist sponge and a tot of rum

4 apples
1 lemon, juiced
440g caster sugar
4 eggs
480g plain flour
7g baking powder
250g soured cream
50ml rum
20g butter, melted, plus extra for the tin
10g icing sugar

Steps:

  • Peel, deseed and cut the apples into eighths. Pour the lemon juice over the apples and sprinkle with a little caster sugar so that they do not darken.
  • Heat the oven to 190C/fan 170C/gas 5. Beat the eggs with the remaining caster sugar in a mixer until you have a thick, pale, mousse-like mixture. Sift over the flour and baking powder, and fold it in followed by the soured cream, rum and butter.
  • Butter the inside of a 23cm springform tin and arrange the apples on the base. Spoon the batter on top and level it with a spatula. Put the cake in the oven and bake for 50 minutes-1 hour without opening the door. Cool the cake and then turn it out onto a plate, and sprinkle it with icing sugar to finish.

This so good! If you aren't diabetic you can frost it with a Banana Cream Cheese Frosting or Carmel Cream Cheese Frosting. I just spread a little butter on it!

1/3 c splenda's splenda sugar blend
2 large eggs
1 tsp vanilla extract
2 c flour
1 tsp baking powder
1 tsp baking soda
1 c sour cream
3 bananas, mashed

Steps:

  • 1. Pre heat oven to 350
  • 2. Cream butter with Splenda, sugar blend
  • 3. Add eggs & vanilla, beat well
  • 4. Sift together flour, baking powder, baking soda, & sea salt
  • 5. Add to creamed mixture alternately with sour cream
  • 6. Fold in the mashed bananas
  • 7. Spray a 13X9 baking pan with Pam
  • 8. Pour the batter into the pan
  • 9. Bake at 350 40 to 45 minutes or until done
