FRUIT EXPLOSION MUFFINS (TIM HORTON'S COPYCAT)

These Fruit Explosion Muffins are loaded with strawberries and blueberries (or any berries you want!) and have a strawberry jam surprise inside! They are made with whole wheat flour and sour cream makes them extra moist.

1 cup light sour cream or 0% Greek yogurt
1/2 cup canola oil
1/2 cup unsweetened applesauce
2 eggs
1 teaspoon vanilla
1/2 cup granulated sugar (100 grams)
1/2 cup brown sugar (packed - 80 grams)
1 1/2 cups all purpose flour (187 grams)
1 cup whole wheat flour (135 grams)
1 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 cups mixed berries of choice (fresh or frozen*)
3/4 cup jam or jelly (nothing too runny!)

Steps:

  • Preheat oven to 350 degrees F and line 3 muffin pans with paper liners or use non-stick pans and grease lightly. You can also use silicone pans, though they will not brown as usual.
  • In a large bowl, combine sour cream, oil, applesauce, eggs and vanilla with a whisk. Stir in sugars until combined completely.
  • Add flours, baking powder, baking soda, and salt and stir just until combined. Fold in berries.
  • Spoon 1 tablespoon of batter into the bottom of each liner, spreading it cover the bottom completely. Top with 2 teaspoons of jam and cover with remaining batter (about one heaping tablespoon per muffin cup), covering the jam as best as you can.
  • Bake for 23-25 minutes (I bake mine exactly 25 minutes), until golden brown, toothpick comes out clean and batter around berries appears set. Cool to room temperature and serve.
  • May be stored at room temperature for 2-3 days or frozen for 3-4 months.

Free of refined sugar, these muffins are sweetened naturally with dates, and get a protein boost from both chia seeds and almond flour.

Yield Makes 12 muffins

Number Of Ingredients 12

1 cup whole-wheat flour
1/2 cup almond flour
1 teaspoon baking powder
2 tablespoons ground chia seeds
1 1/2 cups white beans or 1 (15-ounce) can no-salt-added or low-sodium white beans, drained
10 Medjool or 20 regular (Deglet Noor) dates, pitted
2 bananas
10 ounces frozen strawberries, thawed and divided
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup fresh blueberries
1 cup fresh raspberries

Steps:

  • Preheat the oven to 350°F.
  • In a cup, mix ground chia seeds with 1/2 cup water and let sit until it forms a gel, about 5 minutes. In a high-powered blender, combine white beans, pitted dates, banana, half of the thawed strawberries (leaving the other half to be put in the muffins whole), chia seed gel, and vanilla and almond extracts. Once blended, combine with the dry mixture and stir thoroughly until well combined.
  • Drain the remaining strawberries and stir in, along with the blueberries and raspberries, so they are evenly distributed throughout.
  • Line a 12-cup muffin pan with cupcake papers and, using a spoon, scoop in batter. Bake for 20 to 25 minutes and serve warm.
  • To make cookies, drop batter by spoonfuls onto a foil-lined cookie sheet and bake for 10 minutes or until lightly browned.

2 cups flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
Pinch salt
1 1/2 cups chopped berries (I used cut-up strawberries)
2 eggs
1 cup sour cream
1/2 cup oil
1/2 teaspoon vanilla
Optional: jam for filling (I used raspberry/pineapple)

Steps:

  • Preheat oven to 400°F Mix flour, sugar, baking powder, baking soda and salt. Add berries. In a separate bowl, mix eggs, sour cream, oil, vanilla, and optional jam or filling. Add to dry mixture and mix. Fill cups 1/2 full, drop in 1/2 tsp. jam, then more dough. Bake 15 to 20 minutes.
