I grew up asking for sauerkraut instead of candy as a child, and my grandfather always made it for me. This is my version of what he would make.

- Put the cold butter in a cold pan with the diced onion, and slowly bring to a simmer on medium heat.
- This brings out the sweetness of the onions.
- Simmer for about 10 minutes.
- Add minced garlic and simmer 2 more minutes.
- Add next 3 ingredients.
- Combine with the sauerkraut (undrained and not rinsed), kielbasa and potatoes.
- Bring to a simmer on the stove top.
- Cover loosely with foil and place in a preheated 225°F oven for 3 hours.
THE ORIGINAL KIELBASA AND SAUERKRAUT
This is a family recipe passed down from my grandfather and my father who still make every New Year's Day. It's the best. Trust me, you'll love this recipe. It's original and kinda simple. It's 'old school.' Serve with Jewish rye bread, butter, and horseradish. A good side is mashed potatoes with cheese, milk, and butter to create a rich, creamy, tasty mashed potatoes to go with the dish.

- Cook fatback in a large pot over low heat until the drippings render out, about 45 minutes, stirring often. Stir sauerkraut and cabbage into the pork drippings, bring to a simmer, and cook until cabbage is very tender, about 3 hours. Stir occasionally. Mix kielbasa into the cabbage and kraut; cook 45 minutes to 1 hour to blend flavors.

- Preheat grill. Preheat oven to 400 degrees F.
- Cut kielbasa into 3-inch lengths and butterfly lengthwise. Place on hot grill and cook for 4 to 5 minutes on each side turning frequently, charring all sides. Remove from grill. Transfer kielbasa to a baking sheet and place in oven to cook for another 5 to 6 minutes.
- In a large skillet over medium-high heat, add butter and sugar. Allow sugar to cook to a golden brown color. Add onions and cook until caramelized. Stir in the sauerkraut and cook for 5 to 6 minutes until onions and sauerkraut are wilted and colored.
- Remove kielbasa from oven and cut into 1-inch pieces. Add to pan of sauerkraut and onions. Toss together and cook for 1 minute. Transfer to a platter, garnish with parsley and serve with Honey Mustard Dipping Sauce.
- In a small bowl, mix all ingredients until well combined.

- Spray 5-quart slow cooker with cooking spray.
- In slow cooker, place potatoes, 1/2 teaspoon of the thyme, 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Toss to coat.
- Season ribs with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. In 12-inch skillet, heat oil over medium-high heat; cook ribs in oil, turning occasionally, until browned. Transfer to large bowl.
- Add onion to skillet with drippings, stirring 5 to 6 minutes, until lightly browned. Transfer to slow cooker. Add broth to skillet; heat to boiling, scraping up any brown bits on bottom of skillet. Add to slow cooker.

- Spread sauerkraut over meat. Sprinkle remaining 1 teaspoon thyme over sauerkraut.
- Cover; cook on Low heat setting 6 to 8 hours or until ribs and potatoes are tender.

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add bacon; cook until crispy, 8 to 10 minutes. Pull bacon out with tongs and set in a bowl. Add kielbasa to the pot; lightly brown on all sides, 5 to 7 minutes. Remove with tongs and place in the bowl with the bacon.
- Saute onions in the pot until soft, 2 to 3 minutes. Crumble the bacon and add to the pot. Stir in brown sugar. Add potatoes, sauerkraut, chicken broth, apple, beer, and salt. Mix gently.

- Preheat the oven to 450 degrees F and line a rimmed baking sheet with parchment paper. Turn up four edges of a large piece of foil to make a rectangular tray (about 12 by 5 inches) for the sauerkraut; set aside
- On one side of the baking sheet, toss the potatoes with 1 tablespoon of the olive oil, and sprinkle with some salt and pepper; spread the potatoes into an even layer. Place the kielbasa on the other side of the baking sheet, leaving an empty place in the center for the foil tray. Brush the kielbasa with the remaining olive oil. KIELBASA AND FRIED BUTTERED SAUERKRAUT

- 1. Use a large skillet. Put the butter in and melt it around the pan. When it starts to sizzle put in the whole can of sauerkraut.
- 2. While the sauerkraut is cooking, cut up the kielbasa into 1 inch slices. Put aside.
- 3. Stir the sauerkraut. Once it starts turning brown add the kielbasa.
- 4. Continue to stir, add the spices, and stir some more. The sauerkraut should be golden brown with some darkened areas. Let it cook and stir often (sauerkraut burns easily, so you have to watch it. You only want a little bit darkened)
- 5. Once everything is mixed and the sauerkraut is golden brown turn off the heat and let it sit until the burner is cool. (This will darken the sauerkraut further.) Serve and enjoy.
UKRAINIAN KOVBASA (KIELBASA) POTATOES AND SAUERKRAUT
This classic Eastern European skillet supper has been updated with red potatoes, but ordinary potatoes may be used instead.
