EASY GOULASH WITH CORN



Easy Goulash with Corn image

Simple to make, Easy Goulash with Corn is a crowd pleaser.

Number Of Ingredients 12

1 box of your favorite pasta
1 1/2 lbs ground beef
1 can kidney beans (drained and rinsed)
1 can sweet corn (drained)
2 cloves garlic (minced)
1 medium sweet onion (diced)
24 oz tomato puree
2 bay leaves
1 Tablespoon balsamic vinegar
1 teaspoon salt
1 teaspoon pepper
1 Tablespoon olive oil

Steps:

  • Put your pot of water for the pasta on to boil.
  • In a large skillet, heat the olive oil. Add the onion and saute for a few minutes until it begins to soften.
  • Add the ground beef to the skillet with the onions and break it up into little pieces with a wooden spoon.
  • Saute the onion and ground beef for ten minutes, until the onions are soft and translucent and the ground beef is browned.
  • Add the rest of the ingredients and mix to combine. Place a lid on the skillet and let it simmer while your pasta is cooking. You can let it simmer for as long as you want, as the flavors will continue to develop the longer it cooks. Stir occasionally to keep the bottom from burning.
  • When the water is boiling, salt it with 1 tablespoon of salt and then add your pasta. Cook according to package directions.
  • When the pasta is done, spoon some onto a plate or bowl and ladle a large scoop of goulash over the top. Enjoy!

My husband loves it and it is an easy and fast recipe to put together. I took my mothers recipe for chili beans and did my own thing with it.

1 lb hamburger or turkey
1 can(s) tomato sauce
1 can(s) tomatoes, stewed italian-style
1 can(s) mushroom pieces
1/8 tsp oregano, dried
1/8 tsp rosemary, dried
1/8 tsp basil, dried
1 Tbsp chili powder
1 clove garlic
1 pkg any kind of pasta
2 can(s) kidney beans, canned

Steps:

  • 1. Brown the hamburger until no longer pink. Add all remaining ingredients and simmer over low heat. Cook until most of the juices have evaporated. Cook pasta as directed. Combine both and serve with salad and french bread.

2 teaspoons vegetable oil
2 large onions, thinly sliced
1 large green bell pepper, thinly sliced
2 cups vegetable broth
1 (6 ounce) can tomato paste
1 (16 ounce) can kidney beans, rinsed and drained
1 (16 ounce) can white beans, rinsed and drained (cannellini or Great Northern beans)
1 (16 ounce) can lima beans, rinsed and drained
2 medium potatoes, unpeeled, cut into 1/2 inch cubes
2 tablespoons paprika
1 teaspoon dried basil
1/2 teaspoon caraway seed
1/4 teaspoon pepper
1 cup plain yogurt

Steps:

  • Heat oil in a large saucepan over medium heat. Add onions and bell pepper.
  • Cook, stirring frequently, 5 minutes.
  • Add small amounts of water as necessary, about a tablespoon at a time, to prevent sticking. Add remaining ingredients, except yogurt. Mix well.
  • Bring mixture to a boil, the reduce heat to medium-low, cover, and simmer 45 minutes or until potatoes are tender. Stir several times while cooking.
  • Serve over noodles or rice and top each serving with 2 tablespoonfuls of yogurt.

1-1/2 pounds ground beef
1 medium onion, diced
1 can (16 ounces) kidney beans, rinsed and drained
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 can (8 ounces) tomato sauce
1 teaspoon beef bouillon granules
1-1/2 cups water
Dash pepper
8 ounces spiral pasta, cooked and drained
Grated Parmesan cheese, optional

Steps:

  • In a skillet, cook beef and onion over medium heat until no longer pink; drain and set aside. , In a large saucepan, combine the beans, soup, tomato sauce, beans, bouillon, water and pepper. Add cooked noodles and beef; heat through. If desired, garnish with Parmesan cheese.
