This creamy, cheesy Tuna Noodle Casserole is a healthy weeknight dinner made without the use of canned soups! It's quick, easy and full of savory goodness.

4 cups dry wide egg noodles
4 tablespoons butter
2 celery stalks, (chopped)
1 small red bell pepper, (diced)
1 small yellow onion, (diced)
1 clove garlic, (minced)
2/3 cup all-purpose flour
1 teaspoon ground mustard, (or 1 tablespoon dijon mustard)
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 1/4 cups milk
12 ounces can white tuna in water, (drained and flaked into chunks)
4 ounces shredded cheddar cheese
1 cup finely crushed ritz crackers, (or panko crumbs)
4 tablespoons butter, (melted)

Steps:

  • Preheat oven to 375˚F.
  • Grease a 9x13 baking dish with cooking spray and set aside.
  • Cook the noodles according to the directions on the package.
  • Drain noodles and return drained noodles back to the pot; set aside.
  • Melt the butter in a large saucepan or large deep skillet set over medium heat.
  • To the melted butter, add celery, peppers and onions; cook for 8 to 10 minutes or until vegetables are tender.
  • Stir in the garlic and cook for 20 seconds.
  • Stir in flour, mustard, salt and pepper.
  • Add milk; cook and stir until bubbly and thickened. Sauce will be thick.
  • Pour the sauce over the noodles.
  • Add flaked tuna and cheese to the noodles.
  • Gently fold and mix until everything is thoroughly combined.
  • Transfer tuna mixture to the baking dish; set aside.
  • In a mixing bowl, combine crushed ritz crackers and butter; sprinkle over the casserole.
  • Bake uncovered for 25 to 30 minutes, or until heated through.
  • Remove from oven and let stand for 5 to 8 minutes before serving.

300 g spaghetti noodles, broken into pieces then cooked
1 (284 ml) can condensed cream of mushroom soup
284 ml milk (use soup can to measure)
1 (170 g) can tuna in water, drained
1/4 cup onion, finely chopped
2 garlic cloves, crushed
250 ml cheddar cheese, finely cubed. (1 cup)
1/4 cup parmesan cheese (grated)
salt and pepper

Steps:

  • Preheat oven to 350 degrees F (180 deg.C).
  • In a large bowl, combine mushroom soup, milk, tuna,onions, garlic and cheddar cheddar cheese.
  • Toss with cooked pasta.
  • Transfer to greased 9-inch (23) square casserole pan.
  • Sprinkle with parmesan cheese.
  • Bake uncovered for 30-45 minutes.

While visiting with my grandparents over the weekend, my son requested this, and apparently everyone else enjoyed it as much as he did. It's a basic, simple, recipe, but is delicious and a crowd pleaser.

8 ounces egg noodles
10 ounces cream of mushroom soup
2 (5 ounce) cans tuna, drained
15 ounces peas
1/4 cup shredded cheese
1/4 cup breadcrumbs

Steps:

  • Preheat oven to 350F.
  • Cook the noodles until they are done, drain.
  • Mix the noodles, cream of mushroom soup, 2 cans of drained tuna, 1 can of drained peas, and shredded cheese together.
  • Transfer to a casserole dish.
  • Top with breadcrumbs.
