OVEN FRIED CHICKEN

All the flavors of the deep fried chicken without all the extra fat and oily mess. These chicken thighs are coated with a seasoned Panko and baked until golden brown and perfectly crisp!

2 cups Panko bread crumbs
2 Tbsp olive oil
1 tsp paprika
1/2 tsp dried thyme
1/2 tsp garlic powder
1/4 tsp cayenne pepper
Salt and freshly ground black pepper
3 large egg whites
8 (5 - 6 oz each) bone-in, skinless chicken thighs, (visible excess fat trimmed)

Steps:

  • Preheat oven to 400 degrees F. Place a large wire rack over an 18 by 13-inch baking sheet, spray wire rack with non-stick cooking spray.
  • Pour Panko into a shallow mixing bowl. Drizzle with olive oil and toss and rub with fingertips to evenly moisten.
  • Add paprika, thyme, garlic powder, cayenne pepper and season with salt and pepper to taste then toss.
  • In a separate shallow mixing bowl, whisk together egg whites, salt and pepper until slightly frothy.
  • Working with one pieces of chicken at a time, dip both sides of chicken in egg white then transfer to Panko mixture and dredge both sides in mixture while pressing crumbs to adhere, sprinkle some crumbs over top as well and press.
  • Transfer to prepared wire rack spacing evenly apart.
  • Bake in preheated oven until golden brown and cooked through (center of thickest portion should register 165ºF on an instant read thermometer), about 50 minutes. Serve warm.

" KICKED UP" OVEN FRIED CHICKEN



I make mine on one cookie rack placed on a baking sheet but I'm sure that the chicken could still be great placed directly on a foil-lined baking sheet, although I don't think it would be as crispy. Plan ahead the chicken needs to soak in the buttermilk for a minimum of 4 hours or overnight. If you like a lot of heat then use 2 tablespoons of hot pepper sauce, or you can omit the hot pepper sauce completely, but I suggest adding it in, it really brings out the kick in this chicken---- you will *love* this recipe, I know my family does! :)

1 1/2 cups buttermilk
1/4 cup oil (can use olive oil)
2 tablespoons hot pepper sauce (I use President's Choice Louisiana hot sauce)
2 tablespoons Dijon mustard
1 tablespoon minced fresh garlic (or to taste)
2 1/2 teaspoons seasoning salt, divided
1/2 teaspoon black pepper
2 medium onions, sliced
11 -12 chicken pieces (skin on)
2 cups dry breadcrumbs (use only dry breadcrumbs!)
2/3 cup grated parmesan cheese
1/2 cup all-purpose flour
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon cayenne pepper
1 tablespoon garlic powder
4 -5 tablespoons melted butter

Steps:

  • In a large bowl (large enough to hold the chicken pieces) whisk the buttermilk, oil, hot pepper sauce, minced garlic, Dijon mustard, 1 teaspoon salt and about 1/2 teaspoon black pepper.
  • Add in sliced onion and chicken pieces; turn to coat/mix well.
  • Cover and refrigerate for a minimum of 4 hours or up 24 hours, turning occasionally (I marinaded the chicken in the morning and baked it for dinner).
  • Place a cookie rack on a foil-lined 15x10-inch baking sheet (I was able to get 11 pieces of chicken on one rack).
  • In a bowl mix together dry breadcrumbs, Parmesan cheese, flour, thyme spice, paprika, cayenne pepper, 1-1/2 teaspoon seasoned salt salt and garlic powder.
  • Remove the chicken pieces from marinade, allowing any excess marinade to drip off the chicken.
  • Dip the chicken pieces into the breadcrumb mixture and turn to coat completely.
  • Arrange chicken (skin-side up) on rack or racks on the baking sheets.
  • Let chicken stand for 30 minutes, NO more NO less!.
  • Set oven to 425°F (bottom oven rack).
  • Drizzle the melted butter over the chicken pieces.
  • Bake until crisp, golden and cook through About 45 minutes (might take a little longer).

You need only a handful of ingredients for Ina Garten's Oven-Fried Chicken recipe from Barefoot Contessa on Food Network; buttermilk keeps the meat extra moist.

2 chickens (3 pounds each), cut in 8 serving pieces
1 quart buttermilk
2 cups all-purpose flour
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
Vegetable oil or vegetable shortening

Steps:

  • Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
  • Preheat the oven to 350 degrees F.
  • Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.
  • Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot.

My Oven Fried Chicken is a KFC Copycat, is BAKED not fried, and has a fantastic flavor and crunch. What more could you ask for in "fried chicken" without all the grease! Recipe video included. ***Nutrition info should be lower than noted as this currently represents using all ingredients, BUT not all fat from chicken and butter is eaten as it renders and butter "frys" chicken and remains on bottom of baking pan.

4-5 lbs chicken ((See Note 1))
1 cup buttermilk
1 cup all purpose flour
1 cup Panko breadcrumbs
4 tbsp butter (melted)
2 tsp white pepper
1 tsp celery salt
1 tsp Italian seasoning
1 tsp salt
1 tsp garlic powder
1 tsp black pepper
1 tsp dried mustard
1 tsp paprika
1 tsp ground ginger
1/2 tsp baking powder
1/4 tsp turmeric
1/4 tsp cayenne

Steps:

  • Place the chicken parts with the skin on in a plastic bag and pour the buttermilk in to coat. Squeeze the air out of the bag and seal. Massage the chicken and buttermilk with your hands to coat evenly and allow to marinate in the refrigerator for 30 minutes minimum up to several hours.
  • Preheat your oven to 425°F. In a medium sized bowl using a whisk, mix together the flour, Panko, baking powder and 11 herbs and spices. Set aside.
  • Place a 13x9" baking dish in the oven to get hot for at least 15 minutes (See Note 2). While pan is heating up remove the chicken from the buttermilk, shaking off excess, and dredge in the seasoned flour mixture (See Note 3), coating on all sides with one hand.
  • Add the melted butter to the heated baking dish and arrange the chicken pieces on top with plenty of room on each side so they "fry" not "steam".
  • Bake for 12 minutes, uncovered. Turn the chicken pieces over and bake another 12 minutes or until internal temperature reads 165°F depending on the size of your chicken. (See Note 4) Remove from oven and allow to rest 5 minutes and then serve.

12 chicken thighs
3 eggs
1 cup all-purpose flour
1 cup Italian seasoned bread crumbs
salt and pepper to taste
1 teaspoon paprika
½ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
  • Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated. Pour the oil into a 9x13 inch baking dish.
