When I am in a hurry and need a potato dish this one has never failed me. It is quick and easy and very pleasy. hehe I have taken this to work parties, church gatherings, family functions and the list goes on... My husband is the one that makes the killer mashed potatoes and gravy but if I'm making potatoes and need to get it done this is my choice of Simple & delicious yummy alternative option. Hope you enjoy.

2 teaspoon(s) butter
2 large eggs
2 cup(s) whole milk
1 1/2 cup(s) grated cheddar cheese
1 1/2 cup(s) grated white cheddar cheese
2 pound(s) bag of tater tos, thawed
- salt and white pepper (or black pepper)
TOPPING
1/2 cup(s) cheddar cheese
1/2 cup(s) white cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9x12 inch square baking dish with the butter. In a mixing bowl, whisk the eggs and milk together. Season the mixture with salt and pepper. Add 1 1/2 cup of the Cheddar cheese, 1 1/2 cup of the white cheddar cheese and the tater tots. Mix the mixture thoroughly. Pour the mixture into the prepared pan and sprinkle the top with the 1 cup remaining cheese.
  • Place in the oven and bake for 40 to 45 minutes or until the top is golden brown. (Sometimes I add a little Cayenne to it for another kick. hehe)
  • Delicious served up with some steaks & a nice salad.

2 Eggs
2 cup Whole Milk
Salt (to taste)
Freshly ground White Pepper (to taste)
2 cups grated Cheddar Cheese
2 cups grated White Cheddar Cheese
2 pounds Tater Tots (thawed)
1 box (1 pound Elbow Macaroni)

Steps:

  • Preheat the oven to 350°F.
  • Prepare pasta according to package directions. Drain. Set aside.
  • Grease a 9 x 9 x 2-inch square baking dish with the butter.
  • In a mixing bowl, whisk eggs and milk together.
  • Season mixture with salt and pepper.
  • Add 1 cup Cheddar cheese, 1 cup White Cheddar cheese and the tater tots. Mix thoroughly.
  • Pour cooked pasta into oven-safe baking dish.
  • Pour cheese mixture over pasta.
  • Sprinkle top with remaining cheese.
  • Place in oven and bake for 40 to 45 minutes or until the top is golden-brown.

Ok...so I love Emeril Lagasse. I don't always picture myself making the food he does, but I love to watch the man work. This looked excellent. Can't wait to make it for myself!

1/2 lb pork sausage, removed from casings
1 tablespoon unsalted butter, more as needed
1 cup chopped yellow onion
1/2 cup chopped green bell peppers or 1/2 cup red bell pepper
1 1/2 teaspoons spice essence, recipe follows
1/2 teaspoon hot sauce
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 teaspoons minced garlic
1 large idaho potato, peeled and cubed
1/4 cup chopped fresh parsley
1 cup chicken stock
4 large eggs
1 cup shredded sharp cheddar cheese
hot toast or tortilla, accompaniment

Steps:

  • Heat a large frying pan over medium-high heat.
  • Add the sausage and cook, stirring to crumble, until browned, about 3 minutes.
  • Add the butter, and when melted, add the onions, bell peppers, 1 teaspoon of the Essence, the hot sauce, salt, and pepper, and cook, stirring, until soft, about 4 minutes.
  • Add the garlic and cook for 30 seconds.
  • Add the potatoes (and additional butter if needed to prevent sticking), and cook, stirring, until lightly browned, about 4 minutes.
  • Add the parsley and chicken stock, stir well, and bring to a boil.
  • Reduce the heat to low and simmer until the potatoes are soft and stock is absorbed, about 10 minutes.
  • With a spoon, make 4 indentations in the mixture, and break an egg into each.
  • Cover and cook until the eggs are set, about 4 minutes.
  • Sprinkle the eggs with the remaining 1/2 teaspoon of Essence and the cheese.
  • Serve immediately with hot toast or tortillas.

6 tablespoons unsalted butter
1/2 lb elbow macaroni
6 tablespoons all-purpose flour
3 cups whole milk
1 teaspoon salt
1/4 teaspoon ground black pepper
1 pinch cayenne
2 1/2 cups grated cheddar cheese (about 6 ounces)
1/2 cup fine breadcrumbs
1 teaspoon Emeril's Original Essence

Steps:

  • Preheat the oven to 350 degrees F. Butter a 2-quart baking dish with 1 tablespoon of the butter and set aside.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente, about 10 minutes. Drain in a colander and rinse under cold running water. Drain well.
  • Melt the remaining 5 tablespoons butter in a heavy 3-quart saucepan over medium heat.
  • Add the flour, and stirring constantly with a wooden spoon, cook over medium heat for 3 to 4 minutes, being careful not to let the flour brown.
  • Using a whisk, add the milk in a steady stream and cook, whisking constantly, until thick and smooth, 4 minutes. Remove from the heat.
  • Add the salt, pepper, cayenne, and 2 cups of the cheese, and stir well. Add the noodles and stir well. Pour into the prepared dish.
  • In a mixing bowl, combine the remaining 1/2 cup of cheese with the bread crumbs and Essence. Sprinkle evenly over the macaroni and bake until golden brown and bubbly, about 25 minutes.
  • Remove from the oven and let rest for 5 minutes before serving.
