KICKED UP LAYERED SALAD
Fresh and creamy all at the same time, this tasty salad could easily become a satisfying meal with the addition of some grilled chicken.

Steps:
- Place the romaine in a large salad bowl. Arrange the egg slices on top. Top with tomatoes. mix the corn, beans and onions and spoon on top of the tomatoes. Toss the avocados with lime juice and spoon over the corn layer.
- For dressing, in a bowl, mix the mayo, salsa, lime juice, cumin and chili powder. Stir in cilantro. Spoon over avocados spreading to sides of bowl. You can garnish with olives and cheese if you want.

This recipe is a quick and easy alternative to the traditional 7 layer salad. Great for summer get togethers.

- In a large bowl, gently mix the peas, sour cream, Cheddar cheese, green onions, celery, tomatoes, and bacon pieces. Season with salt, pepper, and dry ranch salad dressing mix. Chill at least 1 hour before serving.

KICKED-UP CUBAN SALAD
Steps:
- For the salad: Add the avocado, lettuce, red onion, jalapeno and pineapple to a large bowl.
- For the dressing: Whisk together the olive oil, lemon juice, honey, cumin, cayenne and salt in a small bowl. Pour some of the dressing over the salad and toss, adding more if desired. Reserve any extra dressing for later use.
KICKED UP AND LIGHTENED WALDORF SALAD FOR TWO!
A light and tasty version of my favorite salad that can easily be doubled. **Made for RSC and edited to say just toss the pecans in egg whites!**

Steps:
- Preheat oven to 375° and lightly grease a cookie sheet.
- Whip egg white until stiff then fold in pecans and brown sugar stirring to coat. Then place pecans on a sheet leaving any extra egg white behind.
- Bake for about 20 minutes until lightly toasted, stirring pecans a few times.
- Remove from baking sheet and let cool.
- Combine all of salad ingredients on one bowl.
- Combine dressing ingredients in another bowl.
- Mix together dressing and chicken mixture adding more yogurt if needed if it seems too dry, then spoon into lettuce cups and top with toasted pecans.
