2 cups all-purpose flour
1 1/2 teaspoons salt
1 tablespoon sugar
4 teaspoons baking powder
1/4 teaspoon baking soda
3 tablespoons vegetable shortening
4 teaspoons Butter Flavor Crisco
1 cup buttermilk
whole milk
margarine (butter okay)

Steps:

  • PREHEAT oven to 400°F; COMBINE 2 cups all-purpose flour, 1 1/2 teaspoons salt, 1 tablespoon sugar, 4 teaspoons baking powder and 1/4 teaspoon baking soda in a large mixing bowl; CUT in shortenings until mixture resembles coarse crumbs.
  • STIR in 1 cup buttermilk just until a soft dough forms (dough will be very loose and sticky at this point).
  • SPRINKLE flour over a large wooden board; TURN dough onto a floured board and knead gently 10 to 12 times or until no longer sticky, re-flouring board as necessary while kneading.
  • DIVIDE dough in half; GENTLY pat or roll each half into an 8-inch circle 1/2-inch thick.
  • CUT out biscuits - pressing straight down - with a 2-inch biscuit cutter.
  • REFORM scraps, working it as little as possible and continue cutting.
  • PLACE cut biscuits on an ungreased baking sheet with edges barely touching; BRUSH tops of the biscuits with whole milk.
  • BAKE for 15 minutes, or until golden brown.
  • IMMEDIATELY brush biscuits with margarine (or butter) after baking.
  • SERVE hot and enjoy.

1 tablespoon baking powder
2/3 cup milk
1/3 cup vegetable shortening

Steps:

  • Preheat oven to 425ºF.
  • Sift together flour, salt, sugar and baking powder into mixing bowl.
  • Make a well in the flour mix and add the milk.
  • Add shortening and begin kneading with hands (to cut in) the vegetable shortening and flour in the milk until thoroughly mixed.
  • Add milk, if needed to form, and mix.
  • Turn onto floured board, and knead gently 6 to 8 times.
  • Pat dough to 1/2-inch thickness.
  • Cut into biscuits.
  • Place on baking sheet and brown in oven 10-13 minutes.
  • Makes about 9 biscuits.

Memories brought back to more tastes of his homeland... I loved KFC biscuits when I lived in the USA, There is KFC here in UK but...

2 c all purpose flour
1/4 tsp backing soda
1 Tbsp baking powder
3/4 c buttermilk
1 tsp salt
6 Tbsp lard

Steps:

  • 1. Sift the dry ingredients in a large bowl.
  • 2. Cut in the lard with a pastry cutter or with two knives until a coarse texture is obtained.
  • 3. Add buttermilk and knead gently but thoroughly. The dough should be soft but not sticky: if it is, add a little more flour. Knead for 1 minute, wrap in foil or wax paper and refrigerate for at least 20 minutes.
  • 4. Preheat the oven to 450 degrees
  • 5. Roll out the dough 1/2 inch thick on a lightly floured surface and cut with a biscuit cutter. (If you don't have one, a cup with the desired diameter will work.)
  • 6. Transfer biscuits to a dark baking sheet and bake until golden brown, 10-12 minutes
  • 7. I must stress use *LARD*, as Crisco or butter doesn't give the same taste, and KFC uses Lard..

2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
6 tablespoons very cold lard, vegetable shortening, or unsalted butter (I used 3T shortening and 3T butter)
3/4 to 1 cup cold buttermilk
Melted butter for brushing tops of biscuits

Steps:

  • NOTE: For best results, it's important that the dough be as cold as possible when ready to work with, so I put the flour, butter, shortening, and buttermilk in the freezer while I got the other ingredients out, prepared a lightly floured work surface, and lined a baking sheet with parchment paper. Ok, Let's make Biscuits: Sift the first 4 ingredients together in a large mixing bowl. (I was lazy and just whisked it well). Cut in the fat of choice with a pastry cutter or with two knives until it resembles the size of small peas. Pouring in a thin stream, add the buttermilk slowly with one hand while stirring it in with the other hand, just until it comes together in a ball. (Start with 3/4 c buttermilk, then increase if needed. Mine was a bit dry, so I added the additional 1/4 c) Knead dough in the bowl with your hand or a spoon for 1 minute. Preheat oven to 450 F. Roll or pat out the dough into a 1/2-inch thick rectangle on the floured surface; then fold it over itself a couple of times like you're folding a letter, pressing dough together. Flatten it back out to 1/2-inch thickness then cut biscuits out with a 2 to 2 1/2-inch biscuit cutter, or a cup or glass. (For Valentine's, I used a heart-shaped cookie cutter). Place biscuits on the lined baking sheet and bake until golden brown, 10-12 minutes. (Mine took 11 mins.) Remove from oven and brush tops with melted butter and serve immediately. Makes 8-10 biscuits.

How to make KFC Biscuits

2 1/2 cups all-purpose flour, plus extra for dusting
1 1/4 cup buttermilk
1/2 cup shortening
2 tablespoons whole milk, optional
1 tablespoon sugar
1 tablespoon baking powder
2 teaspoons salt
1/2 teaspoon baking soda
butter, for serving

Steps:

  • Preheat oven to 400 F.
  • In a large bowl, combine flour, salt, sugar, baking powder and baking soda and toss together.
  • Using a pastry cutter or two forks, cut in shortening until mixture is coarse and resembles small pebbles.
  • Make a well in the center of your dough mixture and pour in 1 cup buttermilk. Stir until a shaggy dough forms. Note: if mixture is too dry, gradually add remaining buttermilk. If it's too wet, add 1-2 tablespoons flour.
  • Once dough comes together, turn it out onto a lightly floured surface and knead it 8-10 times, or until smooth, then cut in half and roll each half into a 1/2-inch thick circle.
  • Take your cookie/biscuit cutter and begin cutting out biscuits. Note: press cookie cutters straight down so biscuits are even and straight.
  • Continue re-rolling scraps and cutting until all your biscuits are formed, then transfer them to 1-2 baking sheet(s). Optional: brush biscuit tops with whole milk.
  • Bake for 13-15 minutes, or until biscuits are golden brown.
  • Remove from oven and serve hot with butter.
