1 ounce kale, (chopped)
1 cup full fat coconut milk
2 tablespoons hemp seeds
¼ cup egg white protein powder
½ teaspoon peppermint extract
⅛ teaspoon vanilla stevia
1-2 cups ice cubes
1 tablespoon chocolate chips

Steps:

  • Place kale and coconut milk in a vitamix
  • Blend on high speed for 60 seconds, until smooth
  • Blend in hemp, egg white protein, peppermint, and stevia for 30 seconds
  • Blend in ice
  • When shake is thick and smooth, blend in chocolate chips
  • Serve

This mint chip ice cream look-alike, in the form of a keto smoothie, is perfect for a quick breakfast on the go.

1 cup unsweetened almond milk
1 cup ice
1/2 cup packed baby spinach leaves
1/4 cup unsweetened coconut milk
1 ounce unsweetened vanilla protein powder (about 1/4 cup)
2 to 3 tablespoons erythritol sweetener, optional (see Cook's Note)
2 tablespoons packed fresh mint leaves
1/2 avocado
1 teaspoon cacao nibs, plus more for serving

Steps:

  • Add the almond milk, ice, spinach, coconut milk, protein powder, erythritol sweetener if using, mint and avocado to a blender and blend until smooth. Taste and add erythritol if desired. Add the cacao nibs and pulse to combine.
  • Pour into glasses, top with a sprinkle of cacao nibs and serve immediately.
