KENYAN TOMATO SALAD - QUICK & SIMPLE SIDE
A very simple side salad which would go nicely alongside a curry and rice. There isn't much to this, the beauty is in its simplicity. According to the Int'l Vegetarian Union, this is a Swahili recipe, common in Kenya & Tanzania. (www.ivu.org)

Steps:
- Arrange sliced tomatoes and onions on a salad plate.
- Mix together garlic, lime juice, salt, and pepper.
- Pour dressing over tomatoes and onion.
QUICK TOMATO SALAD
Steps:
- In a large bowl, add the vinegar, oil, thyme, a pinch of salt and a grind or 2 of black pepper. Whisk until the salt is dissolved. Taste and adjust salt, if needed. Add the tomatoes and toss until coated. Let sit at room temperature for 5 minutes before serving.
QUINOA-TOMATO SALAD
Steps:
- Prepare 1 cup quinoa as the label directs. Stir to cool slightly. Toss with 1 cup halved grape tomatoes, one 15-ounce can hearts of palm (drained, rinsed and sliced), 2 chopped scallions, 2 tablespoons olive oil and a pinch of sugar; season with salt. Sprinkle with chopped parsley.

Steps:
- Cut tomatoes into slices about 1/2 cm thick.
- Spread slices out in a neat circle around the edge of a bowl, with a few in the middle. You can make up your own design, whatever you like.
- Sprinkle some olive oil onto the tomatoes; making sure that it covers all of them.
- Sprinkle with some balsamic vinegar.
- Next, season with salt and pepper to taste.
- Slice up some chives into small pieces, and shake them over the top.
- Add them to taste, though if you have enjoy pepper, then plenty will not ruin it.
