Homemade Hot Cocoa image

Number Of Ingredients 7

1/2 cup sugar
1/4 cup baking cocoa
Dash salt
1/3 cup hot water
4 cups milk
3/4 teaspoon vanilla extract
Miniature marshmallows, sweetened whipped cream or cinnamon sticks, optional

Steps:

  • In a saucepan, combine sugar, cocoa and salt. Add water; bring to a boil. Cook and stir for 2 minutes. Stir in milk; heat to serving temperature (do not boil). Remove from the heat; stir in vanilla. Whisk until frothy. If desired, garnish with marshmallows, cream or cinnamon sticks.

⅓ cup unsweetened cocoa powder
¾ cup white sugar
1 pinch salt
⅓ cup boiling water
3 ½ cups milk
¾ teaspoon vanilla extract
½ cup half-and-half cream

Steps:

  • Combine the cocoa, sugar and pinch of salt in a saucepan. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Watch that it doesn't scorch. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil! Remove from heat and add vanilla. Divide between 4 mugs. Add the cream to the mugs of cocoa to cool it to drinking temperature.

As with hot chocolate, use any milky liquid you prefer, whether it's from a cow, nuts (almond milk), beans (soy milk), or grains (rice milk). For sweeteners, feel free to substitute maple syrup, honey, or agave nectar for sugar, but start with less, about 1 tablespoon, and taste the combination before adding more.

2 tablespoons unsweetened cocoa powder
1 to 2 tablespoons sugar (depending on how sweet you like it)
Pinch of salt
1 cup milk or any combination of milk, half-and-half, or cream
1/4 teaspoon vanilla extract

Steps:

  • Whisk together the cocoa, sugar, salt, and about 2 tablespoons milk in a small saucepan over medium-low heat until cocoa and sugar are dissolved. Whisk in the rest of the milk and heat it over medium heat, whisking occasionally, until it is hot. Stir in the vanilla and serve.
  • If you like it frothy, blend it in the blender.

KENTUCKY BOURBON FUDGE



Kentucky Bourbon Fudge image

This is a creamy old-fashioned fudge. Please don't skimp on the bourbon...use a fine one, such as Four Roses or Woodford Reserve. Maker's Mark is also acceptable. Always remember what every Kentuckian knows: Whiskey is no substitute for bourbon!

4 cups sugar
4 tablespoons cocoa
2 cups whole milk
1/4 cup of good Bourbon
16 ounces whole pecans

Steps:

  • In a heavy saucepan, mix sugar and cocoa until blended.
  • Add milk and stir until blended.
  • Add heat and slowly bring mixture to a boil. Allow mixture to boil up and dissolve sugar crystals on the sides of the pan.
  • Boil until candy reaches the soft ball stage (230-240 degrees), stirring constantly.
  • To test for "soft ball stage" drop a little of the candy mixture in clean, ice cold water. If you can roll it around with your finger and it holds together, it's ready.
  • Remove from heat, and stir in bourbon.
  • "Beat" mixture with a spoon, stirring briskly until the candy starts to crust around the sides of the saucepan and the mixture thickens considerably.
  • Pour into a buttered 9x13 glass dish. Allow to cool slightly and cut into squares.
  • Press a whole pecan into the top of each square.
  • Enjoy!

Recently purchased a bottle of creme de cacao and began looking for recipes that included this chocolate flavored liquor. Since I am not much of a cocktail drinker, but love hot drinks this one really appealed to me. Have not tried it yet but decided to share my find.

8 ounces hot cocoa
3 ounces kentucky Bourbon
1 ounce Creme de Cacao
1/4 cup whipped cream
1 teaspoon cocoa

Steps:

  • Mix the heated cocoa, bourbon and creme de cacao together and pour into glass mugs or any vessel you would use for an Irish whiskey.
  • Top each beverage with half the whipped cream.
  • Dust with a small amount of cocoa.
  • Serve.

2 cups Whole Milk
1/2 Vanilla Bean Pod, Split
1/8 teaspoon Cinnamon
1/8 teaspoon Nutmeg
1/8 teaspoon Cloves
1/8 teaspoon Chipotle Chile Powder (optional)
4 tablespoons Packed Brown Sugar
3 ounces Mexican Chocolate (or good quality unsweetened chocolate)
2 ounces Woodford Reserve Bourbon

Steps:

  • In a small saucepan, add milk, vanilla bean pod and all of the spices (everything but the chocolate, sugar and bourbon). Bring to a simmer over low heat to allow spices to infuse the milk. Once the milk is simmering, slowly add the chocolate and sugar. Continuously whisk until everything is combined and frothy. Line up two mugs and pour one ounce of bourbon into each. Add a cup of hot chocolate to each, top with homemade whipped cream and grate chocolate on top for garnish. Enjoy immediately!
