I found the recipe years ago in a magazine (somewhere around 1978), and I've been making them all these years!.....This has got to be the easiest and most asked for dessert ever!.....I've made them for every occasion, and my friends and family always ask for them again and again!..........I...

2 pkg redi pie crusts...you can use graham but i prefer vanilla
1 can(s) sweetened condensed milk
1 can(s) crushed pineapple in juice (drained)
1 juice of 1 lemon
1 large tub of cool whip
1 small can of mandarin orange slices (drained)
1 small handfull of seedless green or red grapes
2 Tbsp stawberry or razberry jam...or orange marmalade

Steps:

  • 1. In one large bowl, mix together drained pineapple, and sweetened condensed milk....mix well
  • 2. add the juice of one lemon (as much as you can squeeze out of it!) and about 9 or 10 oz. of the large tub of cool whip, and mix well again...it should thicken while you're mixing (save rest for top of pies)...divide and pour into both pie shells.
  • 3. divide rest of cool whip to spread on top....use the grapes and mandarin oranges (drained) to make a nice decoration around the pie in wheel fashion ...alternating orange slices and whole grapes.....Put a glob of strawberry (or whatever jam or jelly that you like) in the center of each pie ....cover with the top that comes with the pies and refrigerate for at least an hour or so to make sure it sets!......that's it!.....It's so easy and so yummy!...looks nice, too! don't you feel guilty?. ........I have sometimes sprinkled ground nuts, sprinkles, etc, over the pies as well....and sometimes have died the cool whip green for St. Patricks day, and decorated with green sprinkles....you can use your imagination for decorating!....have fun, and enjoy the compliments on your pies!.....(smile!)

These pineapple bites are a crispy, sweet treat. Any good preserve can be substituted for the pineapple jam. I used fig.

1 cup melted butter (or as needed), divided
1 (16 ounce) can crushed pineapple, drained
1 (12 ounce) jar pineapple fruit topping (such as Smucker's Pineapple Flavored Topping®)
½ (16 ounce) package phyllo dough, or more as needed
1 cup walnut pieces

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease 2 24-cup-mini muffin pans with 1/2 cup melted butter.
  • Mix crushed pineapple and pineapple topping together in a bowl. Set aside.
  • Cut phyllo dough into 3-inch squares. Paint each square with remaining 1/2 cup butter using a pastry brush. Stack 4 phyllo dough squares together and gently press into the muffin tins. Drop 1 teaspoon of pineapple mixture into each dough cup. Place 3 to 4 walnut pieces in each. Fold dough together at top.
  • Bake in the preheated oven until golden brown, about 20 minutes. Let cool 5 minutes; gently loosen each pineapple bite with a small knife. Let cool 10 minutes more before serving.
