KATSU CURRY

4 tbsp rapeseed oil or vegetable oil
2 x 200g pouches cooked rice (we used brown basmati)
½ large cucumber, peeled into ribbons
handful mint leaves or coriander leaves, or both
lime wedges, to serve
1 tbsp rapeseed oil or vegetable oil
2 onions, chopped
2 large carrots, chopped, plus 1 peeled into ribbons
2 garlic cloves, crushed
thumb-sized piece ginger, peeled and grated or finely chopped
1 tbsp curry powder, mild or medium depending on your spice tolerance
½ tsp ground turmeric
400ml can coconut milk
2 tsp maple syrup (or use honey if not cooking for vegans)
1 tbsp cornflour
8 chicken mini fillets, or a 280-300g block firm tofu, or half and half
200g breadcrumbs (gluten-free if necessary)

Steps:

  • First, make the curry sauce. Heat 1 tbsp oil in a pan, cook the onions and chopped carrots until the onions are soft and starting to caramelise, about 8 mins. Add the garlic and ginger and sizzle for another 30 secs, then stir in the curry powder and turmeric. Once the spices are warmed through, add the coconut milk, maple syrup or honey and 100ml water. Season well, cover and simmer over a low heat for 20 mins.
  • Now make the katsu. In a wide bowl, mix the cornflour with 4 tbsp water and some seasoning. Dip the chicken or tofu into the flour mixture (if cooking for both vegans and meat eaters, make sure you dip the tofu first to avoid mixing it with meat). Place the breadcrumbs in another bowl and dip the chicken or tofu in it, turning until well coated.
  • When the onions and carrots in the curry sauce are soft, blitz using a hand or table-top blender. If the sauce is too thick, add a little more water, check the seasoning, adding more salt, maple syrup or some lime juice, if you like. Keep warm.
  • Heat the oil in a frying pan and cook the chicken or tofu for 4-5 mins on each side until golden and cooked through. Warm the rice and divide between bowls. Top with the curry sauce, katsu chicken or tofu, and serve with the cucumber, carrot ribbons, herbs and lime wedges.

Curry was introduced to Japan by the British more than a century ago, and has become a favorite dish to make at home. This recipe combines a rich curry sauce with a crispy, fried chicken cutlet. Perfect to serve with steamed Japanese rice and radish pickles. Serve with steamed Japanese rice, red and yellow daikon pickles, tonkatsu sauce, soft-boiled eggs, and Japanese 7-spice seasoning.

1 tablespoon oil
2 medium onions, chopped
3 medium potatoes, chopped
2 medium carrots, chopped
3 ½ cups water, or as needed
1 (3.5 ounce) container curry sauce mix (such as S&B® Golden Curry®)
1 tablespoon ketchup
1 tablespoon Worcestershire sauce
1 tablespoon apricot jam
1 tablespoon soy sauce
1 teaspoon curry powder
4 (5 ounce) skinless, boneless chicken breast halves
kosher salt and ground black pepper to taste
¼ cup all-purpose flour
1 large egg, beaten, or as needed
1 cup panko bread crumbs
½ cup peanut oil for frying, or as needed

Steps:

  • Heat oil in a pot over medium-high heat. Add onions to the hot oil and fry until soft and starting to caramelize, about 8 minutes. Add potatoes and carrots. Pour in water and bring to a boil. Reduce heat to low, cover, and cook until potatoes are soft, about 45 minutes.
  • Remove from the heat and add curry sauce mix; stir well until all pieces are dissolved. If you'd like to add seasonings, add ketchup, Worcestershire, jam, and soy sauce. Simmer for 10 to 15 minutes, or longer if you'd like it thicker.
  • While the curry is infusing, flatten the chicken breasts with a kitchen mallet to a thickness of 1/4 inch. Season with salt and pepper. Drench in flour, then egg, and then coat generously with panko bread crumbs.
  • Heat oil in a separate saucepan to 355 degrees F (180 degrees C). Carefully lower breaded cutlets into the hot oil and fry until golden brown, about 3 minutes per side.
  • While the chicken is cooking, stir 1 teaspoon curry powder into the sauce.
  • Slice cooked chicken into strips and spoon curry sauce over top.

AUBERGINE KATSU CURRY

Breadcrumb and shallow-fry aubergine slices for a Japanese style vegetarian dish - your new curry night favourite

4 tbsp plain flour
2 aubergines , sliced into 0.5cm discs
100g dried breadcrumbs (see tip, below left, for how to make your own to save money)
4 tbsp vegetable oil
250g basmati rice
1 large onion , finely chopped
4 garlic cloves , crushed
3 tbsp curry powder
2 tbsp clear honey
400ml can coconut milk
1 large cucumber

Steps:

  • In a large bowl, combine 3 tbsp flour and enough water to make a runny paste, then season and add the aubergines, tossing until they are all coated. Tip the breadcrumbs onto a plate and dip in each aubergine slice, turning to coat and pressing down to help the crumbs stick.
  • Heat oven to 180C/160C fan/gas 4. Heat a drizzle of oil in a frying pan. Cook the aubergine slices in batches for 5 mins each side or until tender, adding a little more oil between batches. Transfer the slices to a baking tray as you go. Once all the aubergine slices are browned, place the tray in the oven and cook for 10-15 mins while you make the sauce. Cook the rice following pack instructions.
  • Wipe out the pan and heat another drizzle of oil. Add the onion and cook for a few mins to soften. Stir in the garlic and curry powder for 1 min, then add the remaining 1 tbsp flour and the honey, and stir to a paste. Splash in the coconut milk, a little at a time, stirring to make a smooth sauce, then simmer over a low heat for 10 mins, adding a splash of water if it gets too thick. Peel the cucumber into long strips with a peeler. Drain the rice and serve with the crispy aubergine slices, curry sauce and cucumber ribbons.

2 skinless chicken breasts
vegetable oil or sunflower oil, for frying
500ml milk
1 garlic clove , crushed
1 tbsp shichimi togarashi (see tip)
50ml ketchup
1 tsp toasted sesame oil
1 tsp soy sauce
1 tbsp Worcestershire sauce
½ tbsp runny honey
juice ½ lime
1 tsp hot mustard
2 tsp medium curry powder
3 tbsp mayonnaise
1 egg
100g rice flour
60g panko breadcrumbs
2 burger buns (preferably brioche)
handful shredded iceberg lettuce
2 spring onions , finely sliced
2 radishes , finely sliced

Steps:

  • In a bowl, combine the ingredients for the brine with 1 tsp salt. Put the chicken in the brine, cover with cling film and marinate in the fridge for at least 3 hrs.
  • To make the mayo, combine all the ingredients and stir until smooth.
  • Half an hour before cooking, remove the chicken from the fridge. Crack the egg into a bowl and whisk with 2 tbsp of the brine. Mix the rice flour and panko, and spread out in a layer on a plate. Remove one chicken breast from the brine, shake off the excess, dip into the egg mix, then coat in the panko mix. Transfer to a plate and repeat with the other chicken breast.
  • Heat the oil in a deep-fat fryer or large, heavy-bottomed saucepan until it reaches 180C, or a piece of bread browns in 30 secs. Fry for 10-12 mins until cooked through. Drain on kitchen paper, then slice each breast into 4-5 pieces.
  • Split and toast the buns, then spread with the mayo. Add a layer of lettuce, spring onions and radishes, then top with the chicken and more mayo.

2 large chicken breasts
400ml milk
100g plain flour
2 eggs , beaten
150g panko breadcrumbs or coarse dried breadcrumbs
sprinkling shichimi togarashi or chilli power, plus extra to serve
splash of soy sauce
sunflower oil , for frying
50g butter
1 large carrot , chopped
1 onion , chopped
4 garlic cloves , chopped
large piece of ginger , chopped
2 tbsp mild curry powder
1 tbsp honey
1 tbsp ketchup
1 tbsp red or brown miso paste
1 tbsp soy sauce
1 chicken stock cube
shredded white cabbage , shredded nori, sesame seeds and cooked rice, to serve

Steps:

  • Cut each chicken breast in half lengthways, creating four fillets. Put each fillet between two sheets of baking parchment and beat with a rolling pin to even out the thickness.
  • Pour the milk into a bowl and season with a large pinch of salt, then add the chicken fillets. Cover and leave in the fridge for at least 20 mins or for up to 24 hrs (the longer you leave the chicken in the milk, the more succulent it will be).
  • When you're ready to coat the chicken, tip the flour, eggs and breadcrumbs into three separate bowls, then season the flour with the togarashi and stir the soy sauce into the eggs. Scoop one chicken fillet out of the milk and coat in the flour mix, then dip into the egg mix and coat in the breadcrumbs. Set on a plate and repeat with the rest of the chicken fillets. Can be prepared up to a day ahead and frozen for up to a month.
  • To make the curry sauce, heat the butter in a saucepan and sizzle the carrot and onion for 5 mins, then add the garlic and ginger and cook for a few mins more. Scatter over the curry powder and cook for 1 min, then stir in the honey, ketchup, miso paste and soy sauce to create a sticky paste. Cook for 1 min more, then pour in 700ml boiling water and crumble in the stock cube. Cover and simmer for 20 mins until the carrot is soft. Tip the sauce into a blender and blitz until completely smooth (alternatively, use a hand blender). Season to taste. Can be made up to three days ahead and chilled or frozen for up to three months.
  • To cook the katsu, heat a good layer of oil in a large frying pan, then add as many of the chicken fillets as you can fit and fry for 3-4 mins on each side until deep golden and crisp. Transfer to a tray and keep warm in a low oven while you cook the remaining fillets.
  • Mix the cabbage and seaweed and sprinkle over some sesame seeds, if using. Top the katsu with the curry sauce and serve with the rice and salad, if you like.

VEGETABLES:
1 butternut squash, cut in thick slices
(you can also use aubergine and sweet potato if you prefer)
1/2 cup plain flour
Pinch of salt
2 cups crumb mix (bread crumbs + plain salt crackers ground finely to give a crunchy texture)
1 egg, beaten lightly
Turmeric, coriander powder and salt according to taste, to add to the flour
SAUCE:
Onion, garlic, ginger, tomato, turmeric powder, cumin powder, coriander powder - mixed with water.

Steps:

  • 1. Cook your rice, according to instructions on the packet. 2. Slice the butternut squash and boil slices soft (not too soft or they will fall apart. Drain and set aside to cool. 2. Grind the bread crumbs and crackers together. Beat an egg. Set to side. Keep the flour ready (mix in spices if desired). 3. Make the curry sauce, either by mixing your spices with some water and cooking for 15 mins (adding more water if required) until you reach a desired creamy texture. Alternatively, cheat and buy a packet of ready made curry sauce in the store. 4. Heat vegetable or light olive oil in a frying pan. 5. Dip the slices in the flour mix, then egg, then breadcrumb mix. 6. When you have 4 slices ready, start frying. Make sure the oil is hot to give a crispy texture but that it does not burn. 7. When ready, place on paper to drain excess oil. 8. When all slices are done, invert a cup of sticky rice on a place, serve with a few fried slices and pour curry sauce over. I usually add a green or red vegetable or sallad that I have home to give some colour too.

Steps:

  • Combine the radish, rice vinegar, and black pepper in a small bowl and let pickle while preparing the rest of the dish.
  • In a large pot, melt the butter, and then add the potatoes, carrots, onion, and garlic. Cook, stirring often, until slightly garlic is fragrant and vegetables are softened, about 5 minutes. Add the water and bring to a boil.
  • Add the curry brick and stir until dissolved. Add the apple and then reduce to a simmer and cover. Cook for 20-30 minutes, until potatoes are easily pierced with a fork.
  • Meanwhile, arrange the flour, eggs, and breadcrumbs in three separate dishes. Heat 1⁄2 inch of vegetable oil in a cast iron pan over medium high heat. Test heat with chop stick - when a chopstick inserted into oil bubbles, it is hot enough. Dredge the chicken cutlets in flour, then egg, then breadcrumb.
  • Fry for 2-3 minutes per side, until golden brown. Remove to a paper towel lined plate and season with salt. Keep warm.
  • To serve, plate curry over rice and top with a chicken katsu. Garnish with scallions and pickled radish.

2 pounds pork feet
2 pounds pork neck bones
2 pounds pork leg bones
2 chicken back bones
6 cloves garlic
One 3-inch piece ginger
1 leek (white and green parts), halved lengthwise, sliced crosswise and rinsed
1 onion, cut into thirds
1/4 cup bonito flakes
1/4 cup dried anchovy
1/4 sheet kombu
1 cup dried shiitake mushrooms, ground in a blender
2 tablespoons salt
1 tablespoon sugar
1 teaspoon fish powder
2 cubes curry bouillon
1 gallon vegetable oil, for frying
1 pound pork loin, sliced into 4 portions
Salt
1 egg
1 cup all-purpose flour
2 cups panko bread crumbs
1 ear of corn, kernels removed from cob
1 carrot, julienned
Vegetable oil, as needed
1/2 head of cabbage, chopped lengthwise
Four 6-ounce packages fresh ramen noodles
1 green onion, chopped

Steps:

  • For the pork broth: Place the pork feet and bones and chicken bones into a large stock pot and cover with cold water. Put on the lid and bring the pot to a boil. After 10 minutes, turn off the burner and strain the bones. Wash the bones under cold water to remove all the scum. Add the cleaned bones back into a clean stock pot, add water and bring to a boil.
  • Char the garlic, ginger, leek and onion in a skillet until they are almost burnt. Set aside. Place the bonito flakes, dried anchovy and kombu in a spice pack and securely tie the end. Put the ground mushroom into a separate spice pack and securely tie the end.
  • Place the charred vegetables, and both spice packs into the pot with the bones. Bring the pot to a boil and boil for 6 hours. Remove the dried anchovy spice pack from the pot. Boil for another 12 hours, then add the salt, sugar and fish powder. Let the broth simmer on low heat for another 6 hours.
  • To create the curry broth, take 64 ounces (2 quarts) of pork broth and add the curry bouillon. Bring to a boil and whisk the broth.
  • For the pork katsu: Heat the oil in a heavy-bottomed pot to 350 degrees F.
  • Tenderize the pork loin using the flat end of a meat mallet and season with salt. Beat the egg and 1 tablespoon water to create an egg wash. Take the pork loin and dredge it in the flour, then the egg wash, then the bread crumbs. Fry the pork loin until golden brown, for 4 to 5 minutes. Remove and let rest for 1 to 2 minutes before cutting.
  • For the ramen bowl: Saute the corn and carrots in a pan with a little oil and set aside. Then saute the cabbage with a little oil.
  • Bring a pot of water to a boil. Drop the fresh ramen into the boiling water. Cook for 90 seconds, or to your desired firmness, then drain.
  • Pour the hot curry broth into 4 bowls and add the cooked ramen. Top with the cabbage and place the fried pork katsu on top. Add the corn and carrot and finish with the chopped green onions.

PORK KATSU CURRY

1 cup white rice
1 tablespoon vegetable oil, plus more for frying
1 onion, cut into 3/4-inch pieces

Steps:

  • Cook the rice as the label directs. Remove from the heat and set aside 5 minutes, then fluff with a fork.
  • Heat the vegetable oil in a large heavy pot over medium-high heat. Add the onion and cook until translucent, about 3 minutes. Add 2 cups water, the carrots, turnips, broth, 3/4 teaspoon salt and

Reduce the heat to medium, cover and cook, stirring halfway through, until the sauce is thickened, about 10 minutes.   • Put the flour, beaten eggs and panko in 3 shallow dishes. Season the pork with salt and pepper. Coat a pork chop in the flour, shaking off the excess. Dip in the egg, letting the excess drip off, then coat with the panko. Repeat with the remaining pork.
  • Fill another large pot with 2 inches of vegetable oil and heat over medium-high heat until a deep-fry thermometer registers 350 ̊ F. Deep-fry 2 pork chops until golden, about 6 minutes. Transfer to a paper towel-lined plate and sprinkle lightly with salt. Repeat with the remaining 2 chops. Let rest 1 to 2 minutes.

1 pound ground pork
Salt and freshly ground black pepper
3 tablespoons flour
3 tablespoons curry powder, preferably S&B (see note)
1 onion, peeled and quartered
3 garlic cloves, peeled
1 green apple, peeled, cored and quartered
1 mango, peeled, cored and quartered
1 2-inch piece ginger, peeled and cut into coins
1 large carrot, peeled and cut into coins
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 cup low-sodium chicken broth, plus more as needed
Peanut or canola oil
3 eggs, beaten
1 cup panko bread crumbs
6 thin, center-cut boneless pork chops, lightly pounded
Salt and freshly ground black pepper
Cooked short-grain Japanese rice
Raw cabbage, thinly sliced
Tonkatsu sauce (optional, see note).

Steps:

  • Make the sauce: Melt the butter in a large saucepan over medium-high heat. Add the ground pork and season generously with salt and pepper. Cook, stirring occasionally, until the meat has browned and the moisture has evaporated. Mix in the flour and curry powder, turn the heat to low and cook for 5 minutes, stirring occasionally, to make a porky roux.
  • Meanwhile, in a food processor, pulse together the onion, garlic, apple, mango, ginger, carrot, tomato paste and Worcestershire sauce until a grainy purée forms. Transfer the purée to the pork and mix until combined. The sauce should be very thick.
  • Stir in the chicken broth and cook, partly covered, over low heat for about an hour, stirring occasionally. If needed, add a bit more stock to loosen the sauce.
  • Prepare the pork: Heat 1 inch of oil in a frying pan and set a candy thermometer in the oil. Place the eggs in a wide shallow bowl and the panko in another. When the oil temperature reaches 320 degrees, season the pork chops all over with salt and pepper. Cover them, one by one, in the egg and then in the panko, and fry in batches in the hot oil until browned, for about 4 minutes per side. Transfer to a paper-towel-lined plate and let drain for 5 minutes. Slice the pork chops against the grain. Serve the curry sauce over cooked Japanese rice. Top with the sliced pork and serve with a small handful of sliced cabbage. If you choose, drizzle the cutlet with a little tonkatsu sauce.

CHEAT'S KATSU CURRY

Transform ready-made breaded chicken steaks into a speedy Japanese-style supper with a spicy, nutty curry sauce

4 breaded chicken steaks
1 tbsp vegetable oil
1 onion , chopped
2 carrots , chopped into chunks
500ml chicken gravy
2 tsp mild curry powder
1 tbsp smooth peanut butter
2 tbsp soy sauce
pickled red cabbage
cooked rice
100g bag crunchy salad

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cook the chicken following pack instructions.
  • Meanwhile, to make the katsu sauce, heat the oil in a medium saucepan and fry the onion and carrots for around 8-10 mins or until soft, but not golden. Transfer the onion and carrot to a blender. Add the gravy, curry powder, peanut butter and soy sauce, then whizz until very smooth. Pour the sauce mixture back into the pan and heat until simmering hot, stirring frequently.
  • Slice the chicken into strips, divide between 4 plates, then pour the katsu sauce over. Add a spoonful of pickled red cabbage to each portion and serve with cooked rice and salad leaves.

1 tablespoon butter
1 garlic clove, chopped
1 small onion, chopped
1 green apple, peeled, cored and diced
2 cups water
1 banana, sliced
1 tablespoon honey
1 teaspoon turmeric
1/4 teaspoon curry powder
1 tablespoon tomato ketchup
1 cup chicken broth
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cornstarch
4 chicken breasts, skinless and boneless
2 tablespoons flour
2 eggs, beaten
5 tablespoons breadcrumbs, dried
2 cups vegetable oil, for deep frying
1 tablespoon butter
1 small onion
2 carrots, diced, boiled
2 potatoes, diced, boiled

Steps:

  • Melt the butter in a saucepan and add the garlic, onions and apples.
  • Cover and cook for 5 minutes. Pour over 1 cup of the water and bring to a simmer.
  • Stir in the banana, honey, turmeric, curry powder and ketchup.
  • Add the chicken broth and bring the sauce to boil. Season with salt and pepper.
  • Mix the cornstarch with the remaining cup water, and add to the curry sauce.
  • Simmer for 20 minutes, stirring occasionally.
  • Tip the sauce into a large sieve or colander placed over a bowl, reserving any katsu curry sauce that drips into the bowl.
  • While the sauce is cooking, prepare the chicken breasts.
  • With a sharp knife, make two diagonal slashes across each breast and coat the chicken in flour on both sides.
  • Dip each chicken portion in beaten egg, and then roll them in the breadcrumbs.
  • Heat the oil in a wok and deep fry the chicken, two pieces at a time, for 3-4 minutes, until golden and crisp.
  • Remove from the pan, drain on absorbent paper and keep warm while you finish making the curry.
  • For the vegetable curry, melt the butter in a separate saucepan, and add the onions, carrots and potatoes.
  • Stir and fry for 5-8 minutes, over a moderate heat, until just beginning to turn golden.
  • Pour in the prepared katsu curry sauce, bring to a boil and simmer for 4-5 minutes.
  • Slice the chicken breasts into strips and serve with a heap of steamed rice.
  • Accompany with the piping hot vegetable curry sauce.

Steps:

  • Preheat oven to Gas Mark 5 or equivalent. Place katsu chicken pieces on a baking tray and put in the oven for 15 - 20 minutes or until golden brown.
  • Cook the rice in a saucepan and bring to the boil. Simmer for 15 minutes until rice is soft. Alternatively, alter simmering time according to taste.
  • Place curry sauce in a microwaveable bowl. (At this stage, you may choose to sieve out the vegetables if you have finicky eaters.) Heat on full power for 60 seconds.
  • Place cooked katsu pieces into the sauce. Stir lightly for a light coating, or more vigorously for a generous coating.
  • Drain rice once cooked and rinse with boiling hot water. Shake off excess moisture. Serve rice and katsu chicken immediately with salad or vegetables of your choice.

25g flaked almonds
1 tsp cold-pressed rapeseed oil
2 boneless, skinless chicken breasts (about 300g/11oz total)
lime wedges, for squeezing over
2 tsp cold-pressed rapeseed oil
1 medium onion, roughly chopped
2 garlic cloves, finely chopped
thumb-sized piece ginger, peeled and finely chopped
2 tsp medium curry powder
1 star anise
¼ tsp ground turmeric
1 tbsp plain wholemeal flour
100g long-grain brown rice
2 spring onions, finely sliced (include the green part)
1 medium carrot, peeled into long strips with a vegetable peeler
⅓ cucumber, peeled into long strips with a vegetable peeler
1 small red chilli, finely chopped (deseeded if you don't like it too hot)
juice ½ lime
small handful mint leaves
small handful coriander leaves

Steps:

  • Heat oven to 220C/200C fan/gas 7. Cook the brown rice in plenty of boiling water for 35 mins or until very tender.
  • Crush the almonds using a pestle and mortar, or blitz in a food processor until finely chopped, then sprinkle over a plate. Grease a small baking tray with a little of the oil. Brush the chicken on both sides with the remaining oil and season well. Coat the chicken with the nuts and place on the tray. Press any remaining nuts from the plate onto each breast. Bake for 20 mins or until browned and cooked through. Rest for 4-5 mins on the tray, then slice thickly.
  • Meanwhile, make the sauce. Heat the oil in a medium non-stick saucepan and add the onion, garlic and ginger. Loosely cover the pan and fry gently for 8 mins or until softened and lightly browned, stirring occasionally. Remove the lid for the final 2 mins, and don't let the garlic burn.
  • Stir in the curry powder, star anise, turmeric and a good grinding of black pepper. Cook for a few secs more, stirring. Sprinkle over the flour and stir well. Gradually add 400ml water to the pan, stirring constantly.
  • Bring the sauce to a simmer and cook for 10 mins, stirring occasionally. If it begins to splutter, cover loosely with a lid. Remove the pan from the heat and blitz the sauce with a stick blender until very smooth. Adjust the seasoning to taste. Keep warm.
  • Once the rice is tender, add the spring onions and cook for 1 min more. Drain well, then leave to stand for a few mins while you make the salad. Toss the carrot and cucumber with the chilli, lime juice and herbs.
  • Divide the sliced chicken between two plates, pour over the sauce and serve with the rice, salad and lime wedges for squeezing over.

VEGAN KATSU CURRY

2 tbsp rapeseed oil or vegetable oil
200g cooked rice (we used basmati)
¼ large cucumber , peeled into ribbons
1 carrot , peeled into ribbons
handful of mint leaves or coriander leaves, or both
lime wedges , to serve
1 tbsp rapeseed oil or vegetable oil
1 onion , chopped
1 large carrot , chopped
1 large garlic clove , crushed
2cm piece ginger , peeled and grated or finely chopped
½ tbsp curry powder , mild or medium
¼ tsp ground turmeric
200ml coconut milk
2 tsp maple syrup (or honey if not cooking for vegans)
1 tbsp cornflour
280-300g block firm tofu
200g dried breadcrumbs , we used panko (gluten-free if necessary)

Steps:

  • First, make the curry sauce. Heat the oil in a pan and cook the onion and carrot until soft and starting to caramelise, about 8 mins. Add the garlic and ginger and sizzle for another minute or so, then stir in the curry powder and turmeric. Once the spices are warmed through, add the coconut milk, maple syrup and 100ml water. Season well, cover and simmer over a low heat for 20 mins, topping up with more water if it gets too thick.
  • Meanwhile, slice the tofu in half through the centre. Carefully cut each piece into four triangles. In a wide bowl, mix the cornflour with 3 tbsp water and some seasoning until combined. Put the breadcrumbs in a second bowl. Dip a tofu piece into the flour mixture, then the breadcrumbs, turning until well coated. If the crumbs are not sticking well make the cornflour mixture a little bit thicker and try again. Press firmly.
  • When the carrot in the curry sauce is soft, blitz using a stick or tabletop blender. If the sauce is too thick, add a little more water. Taste and add more salt, maple syrup or some lime juice, if you like. Keep warm.
  • Heat the oil in a frying pan and cook the tofu for 4-5 mins on each side until golden and hot through. To serve, put the rice in bowls and top with the curry sauce, crispy tofu, the cucumber and carrot ribbons, herbs and lime wedges.

400ml coconut milk
2 limes, juiced, plus lime wedges to serve
2 garlic cloves, finely chopped
2 medium cauliflower
200g plain flour
200g panko breadcrumbs
coconut oil for drizzling
400g cooked brown basmati rice, to serve
coriander leaves, to serve (optional)
2 carrots, peeled into ribbons using a vegetable peeler
400g can chickpeas, rinsed and drained
½ tsp cumin seeds
100ml cider vinegar
2 tbsp caster sugar
1 tbsp coconut oil
2 onions, roughly chopped
2 carrots, roughly chopped
1 celery stick, optional
3 garlic cloves, finely chopped
25g ginger, peeled and finely chopped
2 tbsp mild or medium curry powder
1 tsp ground turmeric
400ml coconut milk
1 lime, juiced

Steps:

  • Start by making the pickled salad. Tip all the ingredients into a pan with 1 tsp sea salt and bring to the boil over a medium heat. Remove from the heat, tip into a bowl and cover until needed.
  • Combine the coconut milk, lime juice, garlic and 2 tsp salt in a wide, deep dish to make a marinade. Cut two 2.5cm steaks from the middle of each cauliflower, slicing through the central stalk so they hold together. Place the steaks and any large florets into the marinade, rubbing it in so they're well-coated. Cover and leave at room temperature until needed. The steaks can be put in the marinade up to 2 hrs ahead.
  • Heat the oven to 220C/200C fan/gas 7. Sprinkle the flour onto a plate and the breadcrumbs onto another. Shake off any excess marinade from the cauliflower steaks, place in the flour and turn to coat evenly. Return the steaks to the marinade, then turn to coat in the breadcrumbs. Arrange on a baking tray lined with baking parchment and drizzle with a little coconut oil. Bake for 35-40 mins until browned, turning over halfway through the cooking time.
  • Meanwhile, make the sauce. Heat the oil in a large saucepan over a medium heat and fry the onions, carrots and celery (if using) for 8-10 mins until softened. Boil the kettle, then add the garlic, ginger, curry powder and turmeric to the fried veg and stir for 2-3 mins. Pour in the coconut milk, lime juice and 100ml hot water from the kettle. Season, reduce the heat to low and simmer for 20 mins.
  • Blitz the sauce until smooth using a hand blender, or a jug blender. If it's too thick, add a little more water. Season and keep warm. Drain the salad, discarding the pickling liquid.
  • Divide the rice between plates, then top with the curry sauce and katsu cauliflower. Serve with the pickled salad, plenty of lime wedges for squeezing over, plus a sprinkling of coriander and a grinding of black pepper, if you like.

4 boneless skinless chicken thighs pounded to uniform thickness
4 cubes s&b golden curry sauce
3 cup(s) water
1/2 cup(s) flour
3 large eggs whisked
1 1/2 cup(s) panko bread crumbs
oil for frying

Steps:

  • Once pounded season the chicken with salt and pepper. Set aside
  • In a saucpan place the curry cubes and heat on high. Slowly whisk in the water until a thick sauce forms. Reduce heat and cook 2 minutes. Remove from heat.
  • Put the flour, egg and panko in 3 separate shallow dishes.
  • Dredge the chicken in the flour first then dip in egg then dredge in Panko. I a large skillet add about 1/2 inch of oil. Add the chicken pieces and cook 3 to 4 minutes on each side. Depending on the thickness of the chicken.
  • Transfer the chicken to a plate and drizzle the curry sauce on top.
